I came here to say Surly 4. I had three, gave two away, well sold, at cost. So I'll say Elisha's Olde Ale from Brau Brothers.
I had my last bottle of Two a few months ago. It was terrific. Some of my family members bought bottles at the brewery (because I did the painting on the label), and now one of my sisters offers to give me hers if I just return the empty to her. I assured her that it is still excellent, but probably not to her taste.
Summit Pumpkin Porter. Although I'm sure the pumpkin has fallen off crazy bad, that beer was so effin good.
I hate to be the one to say it, but for the love of all that's holy, a bottle of '07 Darkness. Or a swimming pool full. Either way.
Summit India Rye. It may very well be my favorite malted beverage of all time. I have some hope of at least seeing it again in a greatest hits Unchained 12pk.
FOUR FOUR FOUR FOUR! As others had mentioned, that was such a solid brew and i wish they would rotate it with their other limited releases.
I agree with everyone who has said Four, that was a fantastic beer. I heard it didn't hold up well so that is my only consolation for not holding onto one until now. Please bring it back Surly!
Never bottled, to my knowledge, but Flat Earth Extra Medium was the beer that turned me onto sours 4 or 5 years ago. Saw it on tap once, and never again. EDIT: this was pre-2010 growler version, by the way.
I don't believe this was ever bottled, but I would love to have another beer I had at the State Fair in '09--Schell's Anniversary Series #7- Roggenbier.

This will tell how old I am, but I yearn for just one more night at Sherlock's Home ... 2 Bishop's Bitters a few Piper's Prides and a Winter Warmer from the pin on the bar to finish. Damnit, it's 8 in the am and I'm thirsty.
The regular One was the first growler I ever bought from Surly, or from any brewery for that matter. That wouldnt be the worst to still have sitting around either. Related note, there was someone on my twitter feed that still had a unopened growler of '06 Darkness. Assuming the seal it still good, that would be fun to try.
I lived in EP when I turned 21 and got a few good years out of that place...but one more night would be fantastic.
