I'm actually making some this weekend using Sharp Cheddar, Queso Fresco and a Smoked Gouda along with some Surly Furious. I can't wait.
That looks incredible. I've never heard of such a thing as Beer Cheese soup but I have a feeling it could be my favorite thing ever.
Harrison's Brew Pub in Orland has an amazing Bacon Cheddar Ale soup that's a must when you go. Their recipe has small chunks of potato in it. Surely the above recipe can be modified.
