New Colorado Breweries

    I thought it was Sally's Apizza. And on the subject of Connecticut (but not New Haven) pizza, who can forget Mystic Pizza, Julia Roberts' breakout flick, in which she played the (slutty) third-female lead. (billed behind Annabeth Gish and Lili Taylor)

    It is a recognized and highly imitated style, folks in Denver just aren't hip to it I guess. Big deal in, say, Washington DC, or Atlanta GA, say, among foodies, when somebody purports to open a "New Haven-style" or "Connecticut-style" pizza joint.

    PS, there was already a "Connecticut-style" pizza place in Denver, or I think Glendale actually, Papou's on Leetsdale near Holly....not sure they actually had it exactly in the style of Frank Pepe's Pizzeria Napoletana though.

    I was a Sally's fan myself; I'd generally go there over Pepe's. Modern was great; at least, when I lived there you could just walk into Modern's and get a seat without going through a lot of bs waiting. It's been a long time since I ate at any of those places, but Lucky Pie works for me now.

    I dunno what the hell happened to Louis Lunch, though. I had a couple burgers there a year or so ago, and they were awful.

    Diebolt Brewing just posted on their Facebook that their equipment just cleared customs in California. Sounds like equipment from China.

    Saw this in the South Denver Beer Fest article today from Shikes:

    The only one other than FFBC that I've heard of was 53 Peaks (currently on Kickstarter here)

    Looks like the South Denver Beer Fest is (of course) on a weekend I'm stuck out of town. I like the idea of the hopefuls making their debut at a fest. New breweries tend to do the Wynkoop events and a few have gotten me to drop in just because I remembered liking them.

    Atom Brewing is being started by a good friend of mine. He plans on doing all of his fermentation (primary and beyond) in oak barrels of different types, which is the first I've ever heard of a brewery moving to all primary oak fermentation. I've had a Merlot Barrel Quad he's made that's fantastic, a Sour Barrel-Aged Porter that was made using house-cultured Consecration dregs they plan to make their house sour strain from and got high praise from Gwen Conley of Lost Abbey, and some Saisons and Citra-hopped Pales that were all incredible. If you go...you should probably go and see him and tell him I sent you. He's a long-time homebrewer and will talk your ear off.

    Check out Ale Apothecary. I think they do all fermentation on wood, but I am not positive. Paul is doing some really cool shit out in Bend.

    Yes, this is true. Besides Paul, and maybe Anchorage in foeders, they're the only ones I know doing 100% in oak, primary at least.

    hmmm, I know when Crooked Stave started Chad had an alternating premises deal w/ funkwerks and i thought all of his beers there were fermented in his foeder in their brewery, and i was over there at his current facility, the barrel works or whatever it's called, when they were taking delivery on (IIRC) 4 huge oak foeders late last year (maybe 3, it's been awhile), so I'm wondering if, as things progress he might be 100% primary on wood, in the new facility-to-be? I guess that's not the case now as he's doing his brewing and primary at Prost, right? Haven't talked to him since late November and might have this all wrong....

    I don't want to speak for Chad, but when I was helping him out at Funkwerks, there were several beers fermented in SS fermenters.

    thanks for clarifying, did not know. At my bar we carried Pure Guava which I'm pretty sure spent its entire fermentation in the foudre...
