    Never used it before. Got 8oz and want to do a DIPA with it. How pungent is this stuff? Is it like Nelson in that it's overpowering or if I added something else to balance out the fruitiness, will I be able to taste it? Was thinking some Chinook or Simcoe may complement it well.

    I've used them in a few pales and IIPAs so far. I don't like them when used early in the boil. I get a very off putting grassy bitterness from them. I recommend using them at FO/Whirlpool/Dryhop. They do pair nicely with Simcoe. They are very pungent, but not as over powering as Nelson.

    I have used whole leaf Galaxy, Chinook and nugget together to brew an ipa, I dry hopped with all 3 too. Awesome aroma but alil too bitter.. Be careful if you use Chinook can be very bitter if you over do it. I would dry hop with the galaxy to maximize it.

    It works well with other hops, and is a favorite of mine. Resinous passionfruit & peach with a bit of lychee. Have used it in the following combinations with success Galaxy/Pacifica/Sorachi (IPA, very little sorachi), Galaxy/Nelson/Amarillo/Citra (Wheatwine), Simcoe/Galaxy/Rakau/Citra (IPA), Galaxy/Sorachi/Pacific Jade (IPA, weird but good).

    I brewed a single hop galaxy IPA that I loved. Had that nice south pacific tropical fruit thing going on, but with a touch of dankiness to go along with it. I'd prob. skip it as a bittering addition next time, as I felt it was a little "soft". Perhaps a touch of chinook along with it would make for a better bittering charge, but I'd prob. go to my standby - Warrior for my early kettle edition.

    You have me thinking... I have some Galaxy and some Mosaic on hand right now, and might try that combo this weekend.

    I made a single-hop Galaxy DIPA. It was pretty tasty but it was lacking some essential hop character. I really like an aggressive hop bitterness - so perhaps it was that - it's pretty hard to pin down. But it didn't seem to have enough hop "body." I did use a lot - 12oz in 5 gallons, IIRC.

    i tried making a 'white ipa' of sorts and used centennial for bittering, then cascade/galaxy/citra at flameout and then dry hopped with amarillo, i really liked the hop profile.

    Galaxy is pungent but on it's own it gives a "sugary red fruit" flavor that lacks much of the piney, grassy, and herbal qualities most hops have. When going for it's "sugary red fruit" quality, I find that keeping the ibu's lower actually helps. If you want more of the normal piney, grassy, and/or herbal qualities in your final product as well you will definitely need to mix it with other hops or go extreme with the ibu's like Hill Farmstead Galaxy. I've found that it plays nicely with simcoe, nelson, centennial, citra, and amarillo but I'm sure it would work with others as well. If mixing it with other hops, I'd mostly recommend using the galaxy for late boil additions and/or dry hopping.

    No comparison to Nelson. I don't understand why they are compared to citra. The are not nearly as potent. I find them a little citrusy and a little grassy. I think they would pair well with simcoe or chinook but be careful not to bury them.

    I did a rye IPA with Warrior for bittering and galaxy @ 15, 10, 0, and DH, and an amarillo addition a 5. It was pretty awesome.

    I was very happy with an IPA that I brewed using Galaxy, Simcoe and Amarillo in a 1:1:1.5 ratio.

    This is a dangerous thread. I have all the hops mentioned on hand, and want to brew all these hop combos now!
