25th Birthday Nightcap
A: Pours a golden copper orange with a 3-4 bright, fluffy white head that left great lacing
S: Grassiness, earthiness, funk, lemon zest, and a fair amount of spiciness.
T: Lemon and spice dominate. Spiciness is quite apparent. Very drying and clean. Quite bitter as well. Super drinkable.
M: A little bit higher than medium mouthfeel. Carbonation is spot on.
O: Great beer. Nothing earth-shattering here, but a super well crafted, and an unbelievably drinkable saison.
Great way to end my 25th birthday celebration. Cheers.

Bottle opened on 4.27.13
A - Pours a hazy light orange with a crazy soapy huge off-white head with great retention.
S - Tons of funk, lemon citrus. Nice and different.
T - Lemon, but subtle, funk- not tart, more Bretty. Peppery.
D - Tons of carbonaiton with a light body. Dry finish.
O - A wonderful saison, funk, citrus and super dry.

750ml corked and caged bottle shared amongst friends (both new and old) at Braustelle in Koln, Germany on 4/10/2013. Served in a tulip. Pours a golden-orange hue with a rocky, three inch, bright white head. Nose is herbal and expresses clove, yeast, a grassy quality and perhaps a touch of mint. Taste consistent with nose, but really somewhat clean and a little watery. Some earthy hops bittering is present at the finish. There's also a slightly medicinal character to the flavor profile as well as some citric acid. Mouthfeel is light in body with a lively carbonation - really quite bright with a slight acidity that tickles the tongue and stimulates the salivary glands along the sides of the cheeks. Overall, a decent farmhouse, but a bit too clean for my sensibilities. There are certainly better examples of the style out there.

pour is pale hazy yellow with a tight billowy white head. Nose has a great yeast presence, strong and funky, dry hop presence, light lemon. Taste follows suit, huge farmhouse note, not too funky but the yeast is bright and delicious. Lemon is light, solid hop presence and a touch grassy. Crisp clean dry finish with perfect carb. So drinkable and balanced.

the people that shared this fine bottle with me were going ape over it, probably due in part to its maker, but this really didn't impress me as much as I thought it would. it pours a real pale lemonade color, with a ton of floating yeast bits clouding things up and a robust white head of several inches. the aromatic profile is lemon heavy, funky yeast, and a funny fusel alcohol that shouldn't really be present here. its not sour, but a little tart, and the wood notes permeate, but something just seems off, like the middle is missing despite a fine start and conclusion. the flavor agrees, there is definitely something lacking. perhaps its any kind of malt body at all, I just get yeast and acid here, without any grain. maybe that's the intent, and im almost never one to gas on for more of it, but in this case it just seems entirely absent. still, I love the yeast profile, its wild and way out there, and I love the dry finish. light as anything, but there is still an alcohol flavor to it that's a little unwarranted. the carbonation, as expected, is epic. overall this is kind of a curious beer, it didn't quite hit the mark for me, but I really enjoyed the interesting yeast. hopefully it will reappear in a more exciting beer sometime, but for now id say this is skipable, save for the real hill farmstead nuts.

One bottle per person on the release... it must be good and funky. In celebration of going to Belgium in a few weeks, I'm cracking this bad boy and hope for the best.
A very careful pour still yields a big fizzy foamy bubbly 2+ finger head that fades at a med pace but somewhat slowly at the same time, lots of pillowy lacing on the sides, very hazy sediment laden golden white peach colored beer with lots of bubbles streaming up from the bottom to reinforce the head, hence the fades at a med pace but also slowly, and it leaves nice pillowy mountains and valleys as it does pop.
Nose has a nice farmhouse aroma, not super funky, but nice open field grassy aroma, lemony, citrus rind, little toasted grainy malt and wheat as well, typical light saison spices and a faint juicy citrus fruit, with a little funk. A touch of a grassy citrusy lemony hop is there as well.
Taste starts with some light saison funk, little earthy farmhouse but not a lot, with light grainy malts, some wheat, little toasty faint pilsner malt. Plenty of citrus, lemony flavors, lemon grass, orange rind, pith flavors bringing plenty of bitterness. Hops come in with that, a little lemony and grassy hops that turn slightly spicy and a little citrusy as well. Bitterness cuts through the lighter malt base and blends with the light funk and lemony saison flavors nicely. There is a light but somewhat sharp acidity as well. Finish is long, with the grassy slightly spicy and citrusy hops lingering well with some bitterness, a little more farmhouse funk and saison grassy flavors and spices lingering.
Mouth is med bodied, lots of effervescent carbonation.
Overall pretty nice, the funk isn't huge but there, nice saison spices and citrus flavors that blend with the nice grassy citrusy spicy hops as well for a decent bitterness, and lots of effervescent carb to bring it all out. Malts maybe could have been a bit bigger, and maybe the farmhouse funk since I love that character, but still nice. I'm surprised this isn't higher rated, but maybe people expected more hops, or more malts as well.
