This brew was served from draft at Tap and Mallet in Rochester, NY. It arrived in a 20 oz. Hacker-Pschorr Hefe glass glowing an even nut brown. It held a two finger medium brown head showing good retention and leaving splotchy lacing all down the glass. There was a light chill haze, but no sediment was noted. Carbonation appeared average. The nose filled with notes of sour lemon flesh and lactics, thick caramel malts, and light roast. There was a nutty, musky vibe with warmth. Soy sauce and toasted nori, along with raw dried apricots appeared on the back. Our first impression was that this was nice, and very characteristic of CB’s brewing. The flavoring opened with red apple freshness sitting amongst toasted pale, crystal, and caramel malts. Apricot sweetness, musk, sweat, and penicillin bite came at the peak. The malts appeared more like rye bread here, with the same toast, and even dryness. The finish was juicy, with more fruitiness of apricot, blueberry, blackberry, and melon. There were light metallics and yeast, and we ended on the very back with grassy bitterness and wet wheat. The aftertaste breathed of sour grain, cashew oils, caramel, light metallics, and toasted, musty woodiness. The body was medium to full, and the carbonation was medium. There was nice slurp, froth, and cream to each gulp, and a frothy coating was left around the mouth, which was otherwise wet and satiated. The abv was appropriate, and the beer drank very easily.
Overall, what we enjoyed most about this brew was the even flavoring. While it wasn't crazy robust, everything was nicely balanced and noticeable. The nose was interesting, with a seafood and grassy freshness. This was a refreshing offering from CB, and very fitting for this breezy, end-of-summer day.
