Dark gold in colour with strong carbonation and a bit of haze. Aromas of sour apple, lemon rind, cut grass, funk , mild spice, light malt, and a bit of wet wood. Amazing compexity in the mouth with notes of wild flowers, pear, earth, honeycomb, slightly sweet (Maris Otter like) base malt, and more sour apple. The mouthfeel is quite dry, but not so much that the beer feels thin. Very refreshing for an 8% beer. I really can't get enough of these Fantôme beers.

750 mL bottle, thanks Thorpe!
Pours a thick hazy pale bana golden color with a thin white head, fades to a thin collar and dots of lace. Aroma of hay, funk, lemon-vanilla creamsicle, lemon juice, grass, orange peel, and meringue. Fairly sweet flavor up front, like a slightly sour lemon meringue, vanilla sweetness, grass, lemon zest, and an earthy funky finish. Medium thick, low carbonation and a lingering puckering sourness on the finish. Unlike any other Fantome (or saison) I've had.

Not sure the year of this bottle. Cork says 086/477044. Pours a very hazy, golden straw-like color with some nice carbonation. About an inch of fluffy white head that disappears quickly. Scent is initially very mineral-forward...I'm not sure how I feel about this. Tons of spices and herbal aromas with a bouquet of fresh flowers and earthy notes. Hints of barnyard as well. Taste is vitamin-like at first...with subtle mineral flavors, that immediately turn to tart lemon flavors. Tons of spice and herbal flavors with some funky Belgian yeast. Pleasantly tart with each and every sip, this beer becomes more enjoyable. The mineral flavors start to blend together with the tart barnyard and the floral spiciness. Mouthfeel is dry and crisp. Drinkability is high. Overall, this is one Fantome that I have never seen in stores, so I was very eager to trade for it. I'm very glad I got to try it, but it is not my favorite Fantome. I enjoy Printemps and Original Fantome better. Still a great beer though, as Fantome can do no wrong.

Big thanks go out to Rbald42 for the hook up with this beer. Apparently this bottle vintage is circa '04.
Appearance: Pours out a gorgeous, crystal clear straw color with quite a bit of carbonation. About 3/4" of egg shell white head forms which has very nice retention and decent lacing.
Smell: Hints of white grape and pear hit me the most initially. Some mineral comes out, as well as a bit of funk and a touch of both lemon and herbal notes.
Taste: Pretty similar to the smelll. Pretty strong pale fruits come out in this, followed by mineral, some grassiness and a bit of lemon acidity.
Mouthfeel/Overall: Light body and fairly high carbonation makes this about perfect for mouthfeel. Overall, I liked this quite a bit. Great vintage saison that held up very well. Would definitely have again.

Perhaps one of my new favorite fantoms
Appearance: Murky and hazy golden-yellow with a nice white head
Smell: Light, earthy funk with lemon grass and citrus notes, very light and pleasant
Taste: Similar to the nose, night mild funk, slight sour citrus, touches of lemongrass and hay. Slightly earthy. Really well done
Mouthfeel: Slightly thin, but it works with the flavor profile
Overall: Very tasty, one of my new favorite fantomes.

From 11/05/11 notes. Bottle shared by Huhzubendah at the mega-Fantome tasting. Poured from a 750ml bottle into my Cigar City snifter.
a - Pours a murky yellow-orange color with one inch of white head and low carbonation evident.
s - Smells of oranges, Belgian yeast, spices, citrus hops, lemon, grassy and earthy notes, light oak, and light funk. Nose is awesome, loving the oranges.
t - Tastes of oranges, lemons, Belgian yeast, spices, citrus, wood, funk, and earhy notes. Some hay as well. Ton of oranges and citrus again.
m - Medium body and moderate carbonation. More carbonation than most of the Fantomes we tasted today, and just the right amount. Very easy to drink.
o - Overall this was an awesome beer; probably the best Fantome we had at the tasting out of about 20 (though it rivals the normal Fantome Saison). Tons of oranges, lemons, and citrus, and very easy to drink. Something I would love to get more of.

gotta get me more fantome! i really have just cracked the surface with these but they are just soo good!
pour could not have been better with an amazing golden amber color with a good haze to it and great carbonation visible throughout. huge white head on top that led to a ton of lacing up and down the sides of the glasses.
aroma is light at first but builds as the night goes on. light citrus touches, fresh herbals, light flowery mix an a nice grain bill seem to support a rather complex flavor. and that is exactly what i get with a quick dose of lemon right off the bat. it transforms into a nice pear and apple flavors, loads of grass and quick hits of lavender and a touc of peppery like spice seal it. this is exactly what i was looking for. clean, crisp, sparkling and refreshing. near perfect.

I think I put too much pressure on this beer to be awesome. Served in a Russian River wine glass.
Beer is yellow and hazy with a soft white head of small bubbles that leaves a little lacing on the glass, nice steady carbonation.
Aroma is mildly funky, nice, and a little like grass.
Beer is mildly flavored, its a little thin on the palate too. There is a mild floral property to this beer but I think I really like the regular saison much much more than this one.

Updated review (04.06.2013): Amazing notes of lemon with a bit of pine tree. Backing light acidity and a bit of pineapple. Tropical fruits. Very dry and light.
Original Review (04.22.2011): Bottle shared by drabmuh. Thanks. Served in a tulip.
Pour yields a slightly-murky golden-ish beer with a good white head and some slight lacing. The nose brings forward a good mild funk along with some hay and earth. Some peaches and other stone fruits lingering in the background. Some floral notes as well. The taste lays it all out--funk, earth, hay, fruits, and some dry floral notes. Really nicely balanced with a crisp, dry finish. Drinks pretty well. A very nice beer.
Best quote during the consumption of this beer: "You don't have a power animal? I'm laughing at you."

Bottle shared by drabmuh. Thanks Matt!
The beer appears hazy and orange / yellow in color. The head is white and fizzy, stands in around half an inch thick, and leaves a good amount of lacing upon the glass. The aroma is the best aspect of Fantôme Saison D'Erezée - Été. The beer emits a cornucopia of fruit scents, including oranges, pineapples, and pears. In addition to the fruit, the beer has a pleasant yeasty smell and flavor. This is a unique beer, and one I really enjoyed. The feel is medium bodied, with alcohol presence a non-issue. The beer carries with it a certain amount of fruity sweetness that makes this bottle best shared and enjoyed in small quantities.

750mL bottle purchased at Beer Mania in Brussels, 10 euros. The bottle is corked and capped, same as all Fantome bottles I've had, with no indication of vintage on the cork nor on the label. The label looks different than the BA listing, more of an orange background.
The beer pours out very hazy and light orange shaded gold, like a watered down orange juice. Few bubbles on top. It smells like it might have a little age on it, a slight medicinal quality behind the bright citrus which surely must be the intent of this summer seasonal. Along with the orange and lemon aromas I think I can detect some kind of spice, maybe more of a rind or something but it's really light.
The citrus flavors are at the forefront, matched by some apple and cough syrup (possibly not intended). The flavors are actually stronger than I expected, and the thicker-than-your-usual-saison body conveys those flavors efficiently. Some carbonation was present despite the lack of foam, giving it a good lively mouthfeel. Very interesting, I'd love to try another bottle if I could be certain it was fresh.

750ml green bottle w/ cork and cap. no date found; notching scheme on label, but not utilized. dunno if i got this in a trade or not, but either way, tried to get this straight from the case, to avoid skunking.
from notes, tasted june 2009. poured into tulip glass.
hazy, almost cloudy, despite settling in the fridge for two days and decanting a full 1.5 cm. deep orangey straw color. 1-finger head fades to wisps and ring. some splotchy rings of lace.
aroma: funky tropical fruit, like guava, plus grapefruit rind (but not like fresh american hops). almost... leathery? musty wet hay. weak bready malt underneath to the end. orange peel and spice w/ phenols in back too.
taste: similar flavors, w/ acidity upfront and that tropical fruitiness again. mild euro hopping for mild to moderate bitterness. bready malt, though a bit watery. spice and phenols. still weirdly and overly fruity too, imho.
light to medium body, with acidic and astringent note in middle onwards, slightly smoothing out for the finish. mild to moderate carbonation, giving some body.
really not liking the overly tropical fruity quality in all the recent fantomes i've tried. not that it's all that bad as beer, but just not what i'm looking for in a saison.

Four or so year old bottle tasted on Memorial Day 2010
A: Rusty, murky amber body. Not too much in the way of particulate. One fingered off-white head. Good retention keeps the head around for a bit before forming a fine skim and a good ring. Spotty lacing.
S: Funky dark fruits and bright, sour citric notes. Lemons and grapefruit are the most notable citric notes. Musky with a nice farmhouse character. Pungent.
T: Lemons, grapefruit, some figs, lightly sour cherries, some misc. berries, earth tones, leather, barnyard funk, and lactic acid. There is a hell of a lot going on here, which is not all that unexpected from Dany. My only wish was the flavors were a tad bolder, but this might be the result of the age on this bottle mellowing things out.
M: Smooth bodied. Medium weight. Nice gentle carbonation, not flat, but certainly mellow. Nice tartness and funk. Good lingering finish.
D: Top notch, the flavors are a little on the stronger side of things, so Été is not as refreshing as the regular Fantôme but this is one delicious beer. Now to track more bottles down....
