Thanks to Thorpe for sharing.
The beer is hazy and yellow with a small white head. The nose brings tropical fruit and citrus with a touch of spice and pepper. The flavor brings mango, melon and pepper. Some tartness with herbal and grassy tones. Rally nice. Easy drinking. Juicy and delicious. Definitely one of the better beers I've had from Dany.

Cloudy orange hued cloudy brew poured into a 3F tumbler. Smells much like the regular Saison - always such a treat, with a mixed fruit medley and perhaps a bit more lemon tartness in the aroma than ordinary. The flavor, again, is much like the juicy deliciousness of the regular Fantome Saison, though I am pleased that it does have a bit more tartness. Nice mouthfeel, with soft full carbonation that lends itself exceedingly well to the beer. Overall, I am glad to have had another wonderful brew in the Fantome lineup.

Big thanks to a generous trader for this one. Served in a Fantôme tulip. Pours a slightly cloudy light golden with a big, fizzy white head. Nose is fairly pepper heavy with a bit of Brett & very mild lactic. Some tropical & citrus to flavor. Highly carbonated. Better after swirling out some of the carbonation. More lemon, light lactic, and faint funk after that. Overall, nose is too peppery and flavor is similar to a good batch of the regular Saison.

Pours a hazed, milky dark golden color with a large frothy white head that fades to a thick white collar. Smells like Fantome but a little more peppery than usual; also yeast, straw, grass, lemon and orange. Medium full body, strong carbonation, full bodied with a clean dry finish. Initially sweet and slightly sickening citrusy and tomatoe acidity. Green apple, lemon, pear and other assorted fruits throughout before a tangy, bready finish. Tastes like a good batch of regular Saison but less tropical, more boring and a touch more acidity. I don't get it.

The uncrimping of the cap and the popping of the cork builds the anticipation that's higher than should be expected, even from the masterful brewers of Fantome. Their normal rustic farmhouse ales takes a backseat, as they step into the sour ale world.
And like most well-built sours, the beer pours with exuberant and turbulent activity. The lively ale erupts with a billowing cotton head that's slow to recede and offers up spotty lace. The underlying goldenrod ale carries its inherent yeasty haze that allows a soft glow to penetrate. Though pretty standard for a sour, its champagne effervescence impresses.
Sharp aromas of sour candies, tart fruit, and must fills the nose with all of the goodness that's wanted from a sour, but none of the off tones. Dried limes, sour apples and grapes, white wine vinegar, weathered wood, musty dusty cellars and attic spaces give a rich and complex earthen scent that's all fairly mild without going too far into the fungus-mold realms. Saddle leather, straw, hay, and lemongrass herbal notes only add to the fruit, spice, and earth scent.
The flavors deliver the faintest grain sweetness that dissolves quite early and unleashes the sheer tartness to the taste buds. With all the "bugs" at work in the beer, the commanding lactobacillus notes gives the beer a crisp dry tartness that's super clean and highly refreshing- it's this scalpel-like precision that cuts through the soft wheat bread flavor in much the same way that Berlinerweiss do. Old lemons, old limes, lemongrass, white pepper, and sea brine all offer an earthen element of depth that's countered by bright and acidic tartness- right down to the lasting aftertaste of the final sip.
Medium-light in body, the carbonation both keeps the beer zesty and expansive to the mouth, but creamy and powdery just the same. It's as if there's two types of textures going on at the same time. But the conclusion is the same and it is quick! With little in the way of alcohol presenting, the vinous acidity and white oak tannin forces a mouth puckering dry tartness that's slightly imposing on the palate, yet makes me yearn for another sip.
I'm absolutely impressed by how clean the beer is. I don't think I have encountered a beer of this size and magnitude that eludes the medicinal phenol complexes that often accompany higher alcohol sour ales. This guy is crystal clean, ultra complex, and is an absolute honor to drink!
