A: yellow/orange, very murky. The head held very little.
S: Spicy nose, slightly acidic, fruity (citruses, oranges).
P: Slightly sour, yeasty, with lemon aromas. Also spicy and fruity (orangees, yellow fruits).
M: Light carbonation, light on the palate, very refreshing.
O: Nice beer, easy drinking and aromatic.

Glass: New Belgium globe glass

An apparently mildly sour-forward Fantome saison, with nods, for me, towards dried grasses, sweet herbs and lemon rind. Perhaps one of my favorite Fantome offerings at this point, one I'm wish I had another bottle of to have again later.

Pours a 1cm head of white bubbles, fizzing quite substantially, with a fairly rapid subsidence, leaving modest lacing along the sides of the glass. Body is a hazy golden yellow-brown color, with light bringing out yellow highlights alongside the sides of the beer.

Aroma is very champagne-like at first: sweet, dry, and white grape-like. With some time and warmth, a bit of dry herbs and wild grasses becomes noticeable, along with a slight lemon tartness.

Taste is somewhat similar to smell in that it invokes dry, tart white wine for me, at times reminding me of a mild sour mixed with a light saison. Much less sweet than other Fantome beers I have had. Other flavors include some light grain and dried grasses in the forefront, slight lemon flavors, and a bit of saison yeast. Perhaps my batch had some noticeable pedioccocus relative to others, and the age may have reduced the herbal components others noted, but this was still a delicious mix of flavors and a surprise as I had little knowledge about the origins or flavors in this beer.

The beer's body is medium-light to light with a fairly medium-high to high level of carbonation. The result is a crisp and quickly drinkable beer with a satisfyingly dry finish.

I'm going to assume that Saint Roch is a reference to the Saint Roch that survived a plague infection and back when he was alive not dying of an infection was misinterpreted as a miracle. Shared by Michael at a recent Fantome ridiculous tasting of epic whaleness.

Beer is brown-ish, nice little white head, small bubbles, decent retention, some lacing.

Aroma is raisins and stone fruits, with a nice malt backbone, yeast is subdued in this one.

Beer is sweet, bready, nice malt character, great finish, not too dry. Beer has some late funk in there, and some plum like flavors, interesting and I would have it again.

Pours a moderate brown color with a good off-white head and a touch of lacing on the way down. The nose brings some faint spice and a bit of fruit. Some amber malt as well. A light bit of funk as it warms. Medium body with moderate carbonation and a dry finish. Quite tasty.

From 11/05/11 notes. Bottle shared by yourefragile at the mega-Fantome tasting. Poured from a 750ml bottle into my Cigar City snifter.

a - Pours a dark amber color with one inch of white head and moderate carbonation evident.

s - Smells of sweet fruits, sugar, yeast, earthy notes, some light Fantome funk. Very sweet and fruity, which I like.

t - Tastes of sweet fruits, yeast, sugar, earthy notes, floral notes. No real funk and a little too sweet for me, so a step down from the nose.

m - Medium body and low carbonation. A touch undercarbonated but easy to drink; a little more and it could be perfect.

o - Overall a good beer, but was a tiny bit too sweet in the taste for me. Would give another shot, but better Fantome's out there.

Sampled alongside twenty other Fantôme beers.

The beer is light orange colored and fairly hazy, with a finger or so of white head. The aroma is pleasant, offering citrus fruit, funk, hay, lemon zest, floral scents. Lots of citrus fruit in the flavor. I am convinced that there is some radical batch and bottle variation among Fantôme beers, as I am not picking up on a lot of the fruit flavors described in some of the other reviews. Light funk throughout. Incredibly smooth and easy drinking. Light to medium in body with appropriate carbonation. One of the best saisons of the more than two dozen sampled last night.

Bottle. Pours a semi clear reddish brown color with a lively white head. Some lacing. Fairly clean aroma for a Fantome but has notes of caramel and some spice. Some fruit like notes as well. The taste is rather different too with notes of some light fruit (grape), apple, and caramel. Medium mouthfeel with carbonation. Some bitterness in the end. It’s fine, but nothing too crazy.

Poured from a bottle into a snifter.

A- Dark yellow brown color, ½ finger off white head, bubbles come up from the bottom, well carbonated, decent lacing and retention.
S- The aroma has sugar and spice upfront, Belgium yeast, herbal aroma, sweet malts, toffee white wine/grapes.
T- Really nice tasting brew, pretty sweet right away, white grape taste is present, sugar, hints of caramel, fruity tastes come out in the end, slight apple, grape.
M- Light/medium mouth feel, crisp/dry finish, well carbonated.
O- Enjoyable offering from Fantome, solid beer as most of the Fantomes have been, this one didn’t stand out compared to some of the others but still tasty.

App- A lighter looking yellow with a good head for a decent size pour. Head was about 3/4” and then slowly fades and allows for some good cling.

Smell- This was a nice saison. A lot going on in the nose. Starts out with a touch of bitter hops and then moves over to a dry hay/grass note. Finishes with a touch of zesty lemons.

Taste- The taste really follows the nose. This was much more dry than a lot of the other Fantomes I have had. It was lemony, bright and a touch of acidity on the drink. The hay notes come into play first.

Mouth- A light bodied saison with a nice high carb feel. A bit of the lemon and hay remain on this one.

Drink- I have to say that what they do at Fantome is quite amazing with just a saison to impart a lot of different nuances and flavors and even small layers on a unique style.

Part 6 of the Fantome tasting.

Pours 1/2 finger of off white head. Good retention with some thick rings. Color is a burnt bright orange.

Aroma: A herbal/floral nose. Maybe a touch more hops show here compared to most Fantomes. I pick up a grape/white wine flavor. Maybe a hint of pears. Spices and some bready malts.

Taste: Grapeskins and wine flavors. More spice flavors show here. Yeasty and bready. Apple skins and pears. Coriander. Very herbal flavored.

Mouthfeel: Dry compared to other Fantomes. Medium bodied with a good amount of carbonation. Ends a bit dry.

Overall, this was a pretty solid saison. Not very unique compared to the other Fantomes, but more 'to style'. Good stuff.

750ml bottle poured into a snifter. I honestly do not understand how a beer can pop so violently when the cork is removed yet not a single bubble of carbonation is released from the solution. Yet the beer enters my glass and erupts with 3 fingers worth of tan head composed of rather large bubbles. As the brew rests in my glass, it appears a hazy color of orange. As the cap slowly recedes down to less than a finger, it leaves finger-like strings of lacework all over the glass.

The smell of this brew is lightly cheesy with some funky tones. Quite dry smelling with minor notes of barnyard quality and hay. Through the back of the brew emerges a fruited quality smelling very much like lemons which again goes back to some cheese and spiced indications that are a little herbal. There is a faint vanilla sweetness mixed with a mineral aspect to this brew's nose once it comes up to temperature.

The taste of this brew has a pleasant lemony quality that turns bitter and pulp-like. The bitterness of this brew is very reminiscent of eating unsweetened grapefruit. There is a dry bready grain flavoring across the middle that provides a base for some herbal flavoring to come in towards the finish. Throughout this brew are some deep earthy flavors that when mixed with the rindy and herbal flavorings, it comes together to be a very unique take on a saison.

This is a medium to light bodied brew with a modest level of carbonation. The alcohol is yet again masterfully hidden as I have come to expect from this brewery. A very solid and unique arrangement of flavors here. This is one of the most dry takes on the style I have had to date without much spiced quality. Very earthy and enjoyable.

Pours a golden straw color with a big fluffy white head. Hazy body, lots of gunk at the bottom of the bottle.

Aroma is unlike most other saisons. Vanilla-y, earthy, funky aroma with a strong fruity (honeydew melon? cherries?) background. Not sure exactly what is going on in the aroma but its definitely more sweet/fruity smelling than most saisons. The flavor comes through with more sweet, citrusy, funky notes. Tart, but not offensively sour. Finishes rather sweet, but still very characteristic of the style.

Wish I could get another bottle of this. Amazing brew.

A: Dark hazy orange with a big off-white frothy head that recedes in a cavernous fashion.

S: Horsey barnyard presence with straw, vanilla, and earth. Lots of fruit: melon, pear, apple, and lemon. There's a light sugary element with spicy and floral notes.

T: The beer has an interesting fruit profile, sort of an odd mixture: raspberry, strawberry, melon, lemon, apple, and pear. Malt is bready and lightly sweet, with a decided spiciness that's peppery and earthy. Lightly funky and musty. The tartness is restrained but unmistakable. Very interesting.

M: High carbonation and lower medium in body.

Overall: An interesting and enjoyable beer. Quite an experience.

A: The beer pours a very hazy golden amber color with a big white head.

S: Definitely some funk in there. Lots of yeast and a slight mustiness. Straw, grass, lemon zest, a mild spiciness, and a lot of sweet fruits. There's also a lightly sugary note to it, almost like Smarties.

T: Sweet malts with a decent amount of bread, but still a pronounced sugar flavor. Straw, pepper, grass, lemon zest, and various non-descript "earthy" flavors give a nice complexity. Plenty of yeast and just a subtle tartness.

M: Medium in both body and carbonation.

O: Since you never really know what you're getting with Fantome, I had my reservations. But, I thought this was pretty solid.

BB March 2012. Thanks to Rookie for opening this bottle he brought back from Amsterdam. 750mL green glass capped and corked bottle.

Quick review: Pours an orange amber and super clear with huge creamy bone-white head. Nose is very malty with some faint "fruit loops" (orange, lemon, lime, cereal grain) notes. The palate is all about pale caramel malt and pale candi sugar, very Belgian Pale Ale-esque, with an odd note of preserved lemon peel creeping out of the grain flavors. Carbonation is soft and creamy.

More focused than any other Fantome beer I've had, but unfortunately not the most interesting.

Poured into a Hill Farmstead tasting glass. Beautiful burnt red body that is clear with a splash of orange. A thin white head forms on top and manages to maintain well. Elegant lacing. The second pour is a bit more cloudy.

Floral citrus mixed with red and white grapes on oak. Hay and earthy grain with just a touch of funk. Reminds me of a warm summer afternoon outside. Some fruit acidity . One of the better Fantome aromas. Well done.

Oak, hay and green apple, followed by a blend of red and white grape with the skins. Earthy with some herbal spice and dusty grains. Tasty.

Mouthfeel has a slickness to it with light, but spritzy carbonation. Just a touch of alcohol comes through, mostly in the back of the throat. Slightly dry.

Drinkability is good. I've had a handful of the Fantome offerings and this is probably my second favorite behind their original saison. The nose great and the taste follows suit. Another excellent beer from Fantome. I wish you could find this one stateside. Worth seeking out.
