This has to be one of the best domestic (American) attempts at a straight-up Bavarian-style hefeweizen. What I focus on the most with it is its wonderful, dynamic, relatively complex aroma - banana bread dough, curiously extra-toasty/nutty granola-like malt, and light-moderate, yet vibrant, softly-spicy floral notes - just wonderful!

The taste mirrors the aromas well, with that malt character really giving the beer some depth (so it's not just fruity banana and clove esters) in flavor, but not quite as much in body as it needs - not that it's thin or too dry - it could just soar if it had a little more roundness and maybe a touch of honey (malt) flavor (could be due to the malt they use? is it domestic?)....

Pleasantly surprised at how drinkable and enjoyable and true to style it is. Maybe it just needs additional head-retention and body-enhancing proteins (flaked wheat?)...Either way, well done, sirs!

Outstanding. Just outstanding.
Pours a dark yellow, almost gold and the clove-wheat smell is immediate. The taste is perfect hefe. Two Brothers is doing good things in the area and this one tops them all. Had it in bottles previously, but on tap it becomes something much, much better.

I've been really digging hefes lately. Here's a review of my 1st taste of two brothers version
A-fairly hazy with a finger of white head that quickly subsides into a ring on the pint glass. Color is golden with orange tint.
S-typical-cloves and banana, plenty of wheat
T-a lot like the aroma. Finish is a bit long with just a hint of bitterness
M-nice body with moderate levels of carboation
O- a solid hefe. Nice taste with an above average body. Biggest complaint is little longer finish than I would like

On-tap served in pint glass (no lemon!!)

A: Slightly hazy bright yellow. Two finger fizzy white head dissipates to a thin white head, leaving pretty good lacing. Not a great head for a Hefe.

S: Strong banana and spices.

T: Follows the nose a little bit. Starts off with a strong banana flavor, then moves to a more bubblegum-type flavor. There's a bit of yeast and wheat twang after that and finishes nice and spicy. This brew is really packed full of the good Hefe-flavors!

M: Bit on the lighter side, but still creamy. I prefer my Hefes more frothing and creamy, but this one ain't too bad.

O: Solid offering. The flavor and nose are excellent. The head and the mouth are lacking a tad, though. It's not as good as some its German brethren, but definitely well above average thanks to the great taste.

Enjoyed in a shaker pint at Bryant Lake Bowl in Minneapolis.

Pale, cloudy sunflower yellow, topped with one finger of creamy off-white foam that quickly becomes a silky yet fairly thick cap. Some smooth mountains of lace.

Yowza. Tons of banana and clove in the nose, backed by a sourish tang. Almost salty, like soy. Coriander as well.

The flavor begins with bananas, pears and apples with caramel. Upon the swallow, a smooth flavor of creamy French vanilla ice cream waltzes in. It's weird, but not bad.

Soft yet thin light body. Carbonation is light yet pokey, and the fizz is moderate. Sparkly, clean finish.

Strange. I like the vanilla ice cream flavors that roll in, but wish this hef had more traditional flavors too.

Last beer while attending the Hop Juice Fest yesterday was the Ebel Weiss beer from the host brewery. The appearance was yellow in color and cloudy. There was a nice thin white head after the pour. The smell was real nice with banana and spice (sorry for the rhyme)!!! The taste was also very good....well balanced between banana and clove/spice. This beer was certainly easier on teh pallete then some of the other beers tried at the fest....certainly because the abv on this was less than 8%. Definitely worth a try.

On tap at Fountainhead

Poured cloudy orange/yellow, small head. Smelled of typical hefe: banana, yeast, fruity.

Taste was excellent. Banana and fruity going in with wheaty/yeasty aftertaste. No bitterness whatsoever. Creamy mouthfeel with slight carbonation.

Overall great great hefe, one of my favorites. I grab this whenever I can. This has a permanent place in my fridge.

EDIT: I bumped the taste points up to 5 after several re-drinks. This is the beer I compare all wheat/whit styles to. I just love this beer!

I had this one on tap in Chicago at the Bad Apple as well as one or two out of the bottle at a friend's place. The tap pour was $5 for about 16oz into a weizen glass. Reviewed from notes.

Appearance (3.5): Hazy dark gold (that seems too dark for the style but is what I have written down...). A fluffy finger of head reduced to a thin film.

Aroma (4.5): Sweet clove, slight banana, and some cereal from the grains.

Taste (4.5): Orange and banana with a clove finish. The classic hefeweizen profile of fruity phenols.

Mouthfeel (3.5): Slick, medium-high carbonation and medium-low body. Very drinkable.

Overall (4.5): I liked this one a lot. One of my favorite new weizens in fact. It's too bad I have only seen this in Chicago.

Pours a hazy yellow color with a white head and a bit of lacing down the glass. The nose brings some banana and bubblegum along with a bit of clove. The taste is more of the common German weizen yeast characteristics as well as some light grain and bread. Light body with good carbonation and somewhat creamy. This is a pretty good American take on the style.

I had this as part of a sampler at the brew pub...A light honey gold not much retention or lacing...The aroma is mostly clove with a hint of banana, the clove is really nice....The taste starts off as sweet banana but then you are attacked by a harsh wood taste. A hefe should stay away from beer. Its an interesting concept but either the reality of the taste or execution is not there. Not easy to drink.

Maybe and this is a lean maybe, its worth trying to have a woody hefe.

Pours hazy gold in color with a small 1/4 inch foamy white head that left great lacing and rings as it went down.

Smells of lemon, yeast, spices, light grains and a hint of clove.

Tastes of lemon, yeast, coriander, wheat, grain, light citrus hops, pepper, banana, hay or grass, spices and a little roasted malt, which might be the grains or yeast.

Pretty tasty, light and crisp mouthfeel that was silky smooth with very high carbonation that was almost watery.

This brew goes down easy, and the only knock was the slightly skunky finish which left a little lemon pucker. Pretty good and enjoyable beer overall, which was very refreshing.

Poured from the tap into a 16oz Ebel's Weiss glass. On special at the local steakhouse.

Appearance was a light orange color and a straw head that remained for the required amount of time for a hefe.
Smells were of the banana-tangerine-yeast aromas.
Tastes were bold and crisp, with a sharp sourness I appreciate and the fruit balances itself out as the yeast takes over. The strong wheat flavor is present too.
Drinkable and smooth, tasty to the end.

I appreciate The Two Brothers for this one because it is compared to the Germans, and it should be, because as an unfiltered Weissbier it is difficult to find a comparable American Made Hefe that matches up.

On tap @ the Two Brothers Tap House on 8/9/09. Served in a Weizen glass.

Pours a hazy tangerine, with a thin 1/4 finger of frothy brite-white head. Retains around the edges, leaving a smattering of foamy lace back. The aroma is orange citrus and lighter banana. Sweet wheat, with some pleasant floral tones, and some light spicy clove as well. This is nice in the nose.

The taste is similar, with some lesser orange and lemon, and a bit more subtle banana. Some smooth wheat sweetness backs up the fruit, mixing with some gentle hops and spice, which adds a gentle punch to this. Finishes very dry. The mouthfeel is lighter bodied, with a sprightly carbonation that jumps around in the mouth, giving this a fairly crips and easy feel, and keeping the drinkibility nice.

Decent little Hefe here, with pleasant flavors and an all around enjoyable quaffability to it. Quality summer offering from Two Brothers.

I had this one on tap at the Two Brothers Tap Room on 7/16/2009.

This weizen poured a cloudy pale gold color with a slight orange tint to it. The snow white head started at 3/4" and settled to a skim. Very little lace to speak of.

S= This was very fruity, very banana-dominant in the nose. Some general malty sweetness and muted clove in there too.

T= I found this ale to have a nice balance of fruity, estery banana, spicy yeast, clove, and tangy wheat malt. Well rounded throughout with just a hint of tartness in the finish.

MF= Light side of medium bodied with a very crisp carbonation feel. Each sip made me want another!

D= This was a tasty and very sessionable beer. I could easily drink a bunch of this in a sitting.

My other brew of choice at a Kane County Cougars minor league baseball game on a hot, humid night. Great family fun, and the Two Brothers tap is right behind my seats.

Pour is remarkably clear for a hefe, appearance is more in line with a Krystal Weiss. No head to speak of, due probably to the plastic cup it was served in.

Aromas of cloves and banana esters, which are also evident in the taste.

Mouthfeel is good, not too thin or heavy. Would make a good session beer on a hot night.

Everything was spot on, except for the absence of yeast haze, making for a classic german weiss beer.

Was surprised to see this at a restaurant just down the street, so I decided to support the local brewery.

Color is a bright golden with a noticeable cloudiness. Served with a good two fingers of foamy white head, which stuck around for longer than expected. Aroma is noticeable of tropical fruits and, to a lesser extent, yeast. Flavor was wild: nice maltiness then banana, clove, and coriander. Finished with a slight sweetness.

Overall a very good beer. I am admittedly not a fan of wheats, but this was one hell of a beer with some crazy flavor action going on. Can't say this beer is going to change my opinions of wheat beers, but I certainly am glad to have had the opportunity to try it. Drinkability is good, though I, personally, just couldn't see drinking too many of these in a single sitting.

I'm ussually NOT a big drinker of weiss beers, but tonight it was so hot and humid that I found it only fitting. Appearance was typical for a weiss beer, cloudy yellow with a inch of fluffy head. This was served in a 20oz Two Brothers glass, with a slice of lemon. Smell was yeasty, and citrusy. Taste reminded me of a lighter Weihenstephaner, again yeasty, smooth and refreshing. Solid brew that I wouldn't mind ordering again.

Available on our in-home four-tap draft system 24/7. Poured frequently.

Ebel's Weiss is constantly available at the local liquor store, and my wife and I have chosen it to be on our first tap year-round. We like it, our neighbors like it, and it's a genuine crowd pleaser.

This beer is a great example of the hefeweizen style -- cloudy, light, drinkable, and with a great aroma.

On draft, Ebel's Weiss is a fantastic beer in summertime or any time.

Appearance: A light yellow straw-like color with a fair head on top.

Smell: A little bit of citrus and yeast.

Taste: Light and a little bit of citrus but sometimes has a little bit of a metallic finish. Not as sweet as some other Hefe Weizens It doesn't have as much flavor as I would have liked.

Mouthfeel: Medium to light consistency. Nice amount of carbonation.

Drinkability: A fair hefe weizen on the lighter side. It is tastes good but is not a hefe weizen of choice but rather one that I would have if there weren't better options available.

Lightly chilled 12 oz. bottle into a weizen pint glass. Best by date on bottle 4.12.13... whoops! Well, it's been in the fridge since January.

Look- Light amber, mild haze. Three fingers of loose, crackly white head that falls very quickly, minimal lacing. Poor retention and stick for a hefeweizen.

Smell- Sweet, white grape juice, melon, light spice, more banana than usual for the style, quite fruity. Floral, fruity, juicy with a sharper twang. Almost lemonade-like.

Taste- Sweet, very assertive ripe banana and light brown sugar. Bready finish, almost oatmeal like. Banana bread and 'nilla wafer comes to mind. Overall impression of sweetness, but by the finish it's cleaned itself up with a clean white tea bitterness, soft citrus pith, more white grape juice. Not quite like any other hefe I've had before, I'm liking this a lot.

Mouthfeel- Medium-full body, moderate carbonation comes out up front. Slick, almost heavy feel. Finishes soft, powdery, mild coating. Heftier than anticipated, but seems to suit it.

Overall- I'm not a huge fan of the Hefe style and not particularly enamored with Two Brothers, so my expectations going in were moderate at best, particularly with the beer being past it's best-by date and all. At this point I'm just disappointed that I only have the one - if this was available around here it'd make my go-to list no problem.

Pours a HUGE, dense, lather of white head with great persistence. A nice aroma of banana with a touch of clove in the back. Lovely turbid, straw color. Starts off slightly sweet, slightly citric, a flash of metallic hop, then a really nice, rich malt comes through. The finish is a blend of the malt and mild hoppiness.

When I first tried this, I didn't recall there being such a noticeable metallic twang. I can't verify if this bottle was stored in the ideal conditions, so yeah.... I still find this to be a favorite example of an American Hefe.
Dancing Man is better, but this is still good.

Haven't had much Two Brothers since they pulled from MA. What I have had I certainly enjoy and I miss this brewery.

A- Poured into a tulip from the bottle. The glass fills with a hazy, golden-orange brew. A cap builds up on the beer to about one finger high with a foamy texture. Retention not too good in my case. Tiny ring around the top leaves spotty lace.

S- I could smell this one as soon as I opened the bottle. A big blast of banana, lemon tarts, clove and some bubble gum fills the nose. Spicy but also comes off as floral and fruity to me.

T- As the nose might suggest, this one is packed with flavor. Some malty sweetness lends a good backdrop for the big yeast flavors. Banana, clove and orange peel hints make up the main profile of this beer. Some grassy, spicy bitters.

MF- High carbonation foams up in a light body that feels pretty silky overall. Goes down very smoothly and feels like a cloud on the palate.

Flavorful but not out of hand with bubble gum or spicy flavors like some tend to be. The sweetness is present but kept in check which is satisfying. Good example of the style compared to some other American brewers.

A - very clear, not cloudy at all

S - very fruity, bananas

T - very fruity. banana taste? It comes from the yeast they use. This is much more fruity than other beers of this style.

M - slight carbonation, not too much

O - pretty solid if you enjoy this style. if you don't care for fruity flavor then stay away

First had this many years ago, while on a long term hefe kick, since which i've moved on to many other styles. Ebel's was never a favorite, but 2 Bros wasn't freshness dated back then, and this is a fresher sample, still a couple months in code.

Murky golden orange with the yeast poured in, A finger or so of dense creamy white foam that leaves behind some lace and maintains a skim on the surface.

First whiffs of banana bread were pleasant, giving way to bubblegum and clove hints that aren't as pleasant to me personally, but it's true to style.

Flavors of wheat and clove, a slight sweetness, becoming astringent in the middle and dry in the finish. Astringency competes with the smoothness of the wheat, throwing things off a little. Slight banana aftertaste, but not really bursting with it. Still not my favorite hefe, not in the ballpark of Dancing Man or Weihenstephaner.

Appearance: Pours a golden, straw, orange color…hazily transparent, I can see a few bubbles bubbling up…some head formed when upon pouring, but nothing really reamians…could use a little life…(3.25/5)

Smell: Sweet, floral/herbal, vanilla, banana and clove…wheat, a touch of citrus (lemon and orange), yeast, grass…very malt based…smells like a classic Belgian style whit ale…lively and nice…(4/5)

Taste: Hefeweizen yeast, green banana, light/pale malts, wheat, a bit of bubblegum and clove…there’s an overall sweetness about it that’s nice…it’s not overly complex, but a refreshing brew that brings tons of flavor to the palate…light and mildly zesty, I’ve never had anything with banana in it that I’ve liked as much as this…(3.5/5)

Mouthfeel: Light body with medium carbonation…it definitely fluffs up a bunch bringing banana, yeast and light lemon bitterness to the palate…refreshing, light…(3.75/5)

Overall: This is a good brew…summertime, backyard barbeque, watching the Cubs day game on the porch TV (think college), hanging out with friends and hotdogs – this beer was made for those occasions…it’s light, refreshing, flavorful and super drinkable…definitely worth trying if you like this style or are looking to expand your horizons…(3.5/5)
