The Flying Dog Centiennial Hop Imperial IPA was on tap at our local watering hole. It is a big beer. The appearance was quite nice...only draw back was the thin head and missing lacing of the glass. The color was a clear rich amber. The smell was very "fresh" like being near a pine forest. The taste however carried more apricot/grapfruit taste. There was definite malt balance which kept the bitterness down...however, teh bitterness clung to teh pallet. The mouthfeel was tough because the Alcohol was absolutely present....not enough malt or hop to cover @10%!!!

Bottle into glass
A - Clear golden color with a medium sized off-white creamy head with good retention, slowly recedes to a thin film on top. Leaves heavy lacing
S - Orange, Grapefruit, booze, light malt
T - Grapefruit and lemon, then orange, bread, alcohol bite, sweetness, and a little caramel malt, got very boozy as it warmed
M - Heavy and creamy mouthfeel, moderate/low carbonation
O - An interesting and enjoyable brew, a little on the sweet side. Began to taste a lot like booze as it warmed up

Tangerine brew with an eggy dry head. Sparse bubbles cascading to the surface.
Classic Centennial hop profile of grapefruit, orange, and pine. Alcohol is evident. 10% sounds about right where this nose is at. Malts show off a light caramel note. So far, proving to be a risky choice for a single-hop imperial.
Bristling hop bitterness with lots of grapefruit and pine. Some orange. Spine-tingling booze isa very warming. Malts are semi-sweet, yet paler than toasty. Lots of hops, hops, hops. One-note, because it's single hop. I liked El Dorado a lot more.
Mouthfeel is spicy hot with booze. Body is medium; carbonation, too. Not bad, sans the big strength.
Eh. So-so on this one. I'll take it over most beers, but there are just too many other good DIPAs out there.

12 oz. bottle poured into DFH signature glass. Best by April 4, 2013. I think they date 140 days out, so bottled early-mid December 2012. Review 1 of this series (in bottles).
A - Pours a shiny copper color with a stable half finger of off-white head. After a few minutes, the head settles to a thin film, leaving behind a sticky lacing. This trend continues as I drink.
S - A nice blend of bold citrus and fragrant floral hops on the nose. Light caramel biscuit aromas remind me that there is malt to this beer. The floral and citrus hops are clearly the star of the show here though.
T - The same hop characteristics from the nose. A floral bouquet of flavors on the forfront, followed by a sweet toffee malt flavor. Bitterness on the back end with a hop linger that becomes more pronounced as I drink more.
M - Soft on the palate with a full body and carbonation fitting for the style.
O - Stoked to see this series is being bottled. This version showcases the floral and mellow citrus aspects of the centennial hop. There is a pretty pronounced bitterness on the finish that wasn't evident in the nose. I didn't get much alcohol at all and it is reasonably easy drinking for a double digit ABV beer.
