Sediment hangs suspended in a rust/amber/gold color. Hardly any thickness to the head, which thins to a crown quickly. Looks like a spirit--more like liqueur or whiskey than beer.
Has the requisite spice, fruit and alcohol of a tripel, but lacks discernible yeast presence. Since that's a big part of a tripel, or just about any Belgian beer, for that matter, this lacks. It's pretty boozy too, so the overall impression isn't amazing.
Speaking of boozy, the alcohol in Kerberos spikes out of the flavor profile too much, although this really depends on the serving temperature (I bought a four-pack and have noticed different alcohol presence each time). The best thing about this beer is a cookie-dough kind of breadiness, which can only be obtained by getting that little bit of sludge at the bottom into the glass. I found this out by chance, unintentionally leaving some in the bottle and then giving a quick swirl and pour after I was three-fourths of the way through the whole thing. Overall you'll get peach and pear sweetness some green apple, a few pie-like spices (nutmeg, cinnamon), even a little black pepper...but due to the alcohol dominance and lack of yeast character, it needs some work.
Mouthfeel is just fine, extremely buttery, plenty of body, even a bit creamy with enough carbonation to keep it from feeling like goo.
I've always felt Flying Dog did better with big beers than their more sessionable stuff, but maybe not in this case. I'd recommend it if you're a tripel fan and like to try each and every example of the style, good or bad. This is somewhere between good and bad, hanging in that nebulous area where you've got some nice traits but some problems as well.

Tasting at the brewery from their first Throw Back Thursday pilot batch, where they bring back retired beers for tasting/growlers, and a pour from a 64 oz. growler into a HS Teku
A: Golden straw color with a minimal head.
S: Classic Belgian yeast and bread notes.
T: Interesting honey notes and bit of spice to it. Damn decent tripel, that is a solid take on the style.
M: Nice bit of carbonation that is a bit foamy.
O: I don't know how the old mass production batch was like, but this was good as a pilot batch.
