Appearance: Deep brown when pouring and black in the glass with a thin tan foam across the top.
Aroma: Coffee is the first thing that hits the nose followed by sweet chocolate tones and some raisin. The bourbon is there but it's subtle. A very pleasant and inviting aroma overall.
Taste: Real nice matured flavor on this one. The bourbon oak aging seems to have completely cleared up any of the harsh malt bitterness that usually accompanies an Imperial Stout. Starts with a soft mix of dark malts as chocolate, caramel, and vanilla flavors creep on to your palate. The vanilla and sweet malt of the bourbon hits an apex at about the halfway mark and is almost goes unnoticed due to its smooth character. The second half is slightly harsher as the bitter coffee takes its turn on your palate. Finish is a little bumpy but smooths out in the end leaving you with a lot of coffee and a bit of an oaky flavor. No hop flavor anywhere per say, but an earthy echo in the aftertaste that must be their presence. The 8.5% ABV is really no where to be found except for the distant heat in the back of the throat which only adds to the enjoyment of this well crafted beer.
Mouthfeel: About medium in body but feels lighter. In this case the body of the beer is a double edged sword. On the one hand a light body makes it drinkable and keeps the ABV down but on the other hand a fuller body could make this one exceptional. The oak aging has led to superb drinkability and minimal carbonation for a smooth drinking experience.
Final Thoughts: I'm not a huge fan of using coffee in beers as it tends to thin out the end result, but the use of bourbon barrel oak aging more than made of up the slight lack of body. This was my first Central Waters offering and they've done a fine job because I plan on exploring more of their full lineup. If BCBS is the king of bourbon barrel aged beers then I'd have to say Peruvian Morning is the younger and less refined prince. Would I drink it again? Yes, got a stash in the cellar.

A-Pours a dark brown/black color with a thin, carbonated and fuzzy head. Not as good looking as most stouts.
S-Chocolate, coffee, sour fruits. Not too pleasing
T-Sour as hell at the front, at the middle, and the finish. Maybe this is a bad bottle, because I am finding no depth or nuances despite its 93 rating.
MF-Watery and overcarbonated.
O-Tastes like a stout mixed with a flanders with the mouthfeel of a diet soda. This was very disappointing, but perhaps I got a bad bottle.
