Notes:
This oak-aged gentle giant has been gaining popularity over the past few years and is now available year-round.

For Burton Baton, we brew two "threads," or batches, of beer: an English-style old ale and an imperial IPA.

After fementating the beers separately in our stainless tanks, they're transferred and blended together in one of our large oak tanks. Burton Baton sits on the wood for about a month.

When enjoying the Burton Baton, you'll find an awesome blend of the citrus notes from Northwestern hops melding with woody, vanilla notes from the oak. The wood also tends to mellow the 10% ABV of Burton, so tread cautiously!

On tap at DFH poured into snifter glass. Poured a deep amber color with a 2 fingered white head that slowly disappeared into itself. The nose was brown sugar, malted barley, alcohol, oak, floral hops, pine, and hay. The taste is immediately malted barley, pineapple, sugar, and oak that transition into vanilla, and piney hops. This is a deliciously blended beer. I love the malt liquor or strong ale taste that also has the qualities of the 90 IPA.

01/17/11- Had this one earlier tonight at Tip Top in Columbus.
A: Red copper, and a nice cream lacing and collar and sparse film.
S: Very earthy and woodsy hops, orange citrus, boozy slight bourbon, green hops, and caramel. Nice.
T: Nice smooth creamy earthy woodsy hops, whiskey booze with a caramel nutty backbone.
M: Thicker, nice frothy carbonation turns crisp with the alcohol.
D: OK. One is good.

Pours a very nice orange/copper with a big frothy white head. Good lacing and retention. Hoppy aroma. Citrus mostly, woodsy notes as well. Great flavor combination. Starts with some refreshing citrus hops, grapefruit and orange, before moving onto some more pine notes as you get into the beer. The oak is definitely present at the finish along with a little vanilla which creates a sweet malt to balance out the beer perfectly. The alcohol is almost completely masked, only showing up if the beer gets overly warm. Excellent.

Pours a dark cherrywood into an oversized wineglass. Tastes a good pine and grapefruit mix of hops. Has a hint of carmel but is not a malty mess like i experience with typical double ipas. Finish is smooth and has a slight aftertaste i cannot identify. Very drinkable considering the high abv. It sneaks up on you but by the time i finish the glass i can feel it on my face. I very glad i tried this even at the price of $7 for a 10 oz glass. Best double ipa I have had.

Had this on tap at Rockwell Grill in Chicago

Nice color, nice head, very inviting. Smell was bitter, citrusy hops and some toast.

Taste was excellent. Very hoppy of course, but also woody in a way that balanced everything out. The oak is a very welcome addition.

It was hard for me to believe this was 10% until I'd consumed two of them and started feeling the buzz. A damn fine beer.

A - A darker shade of amber with some orange highlights...nice clarity...a one finger white head that stayed for a while...decent lacing

S - Bitter citrus hops cut through the aroma and mix with earthy English hops...there is a touch of sweetness coming out as well

T - The flavors start off with a big hop presence...they bittersweet with grapefruit leading the way...the middle of the beer lends itself to a more balanced profile...the hops become more earthy and less bitter...caramel malts and oak also show up to balance things out...the bitterness comes back to finish the beer

M - Medium bodied...nothing special from the nitro...oily and bitter...alcohol comes through

D - I'm glad I got the chance to try this beer and espcially on tap...although the nitro did nothing special...a very hoppy, English-style, oak aged, doulbe IPA...leave it to Dogfish Head

11 oz serving in a tulip glass

A - red amber/copper; clear. Tan head

Pronounced hop flavor builds then slowly fades, leaving a fine, long-lasting afterfinish. Although citrus hops dominate, there are notes of vanilla. High ABV is mostly hidden (by aging in oak, according to the brewer). This excellent beer has a potent bitterness with some balancing sweetness.

M - crisp; medium body; subtle effects of high ABV

I'm only going to review beers I absolutely LOVE.

This is my absolute favorite. There are others listed in my profile I thoroughly enjoy, but this is it.

90 min is awesome.
add some English Ale and age in bourbon barrels = bliss.
I await each spring for this release. I travel to DE to enjoy it at the source.

I personally love bourbon and will try any beer aged in its barrels.

On-tap at Flying Saucer during Raleigh Beer Week. Served in a tulip glass a slightly hazy orange with a thin somewhat lasting head. Aroma is a nice blend of pine hops with a decent bit of oak. The taste is a nice balance of caramel malts with brown sugar blending nicely with pine hops and a nice oak and vanilla kick, providing an enjoyable complexity. The beer is a bit on the heavy side, but is still a very easy drinking brew, well hidden alcohol. This is a very enjoyable draft beer, one I would certainly have again.

Drank from a pint glass, poured for me from the tap at Prarie Moon.

A: Dark brown, some seriously good lacing with a thick head. Looks appetizing.

S: Sweet, in a sugary way. There is some serious maltiness and hoppiness going on here. Chock full of flavour.

T: Quite hoppy but oh so sweet. Like the nectar of the gods. Seriously, this is like nothing I've ever had before. This is the first 5 I've ever given out for taste. I truly think that looking at its style (and even maybe on its own) the taste of this beer could not be improved in any way

M: Oh so smooth, damn good, but oh sooo boozy. Very warm, but still light at the same time. It's like a sexy russian spy seducing you, and then killing you afterward.

D: Like Muhammad Ali, this one will knock you the eff out. Do not, and I repeat, do not have anything before this, because you will get drunk. It is so good, but so alcoholic.

This is one of my top beers, hands down.

Served on tap in a snifter/goblet at Cobbletstone's in York.

A - A bronze colored w/ copper highlights and great clarity, the cap is ecru w/ light beige and thick lace that clings like glue. The bead is tiny

S - The smell is piney with caramel and toasted aroma w/ tinges of woody hops and wood from the barrel w/ a mild stone fruit and raisin-like aroma which is sweet and fruity w/ mild cherry acccents and subtle biscuit and doughy yeast elements

M - A fruity and strong feel w/ moderate bitterness and balance of texture w/ mild alcohol and slightly high residual sweetness. The carbonation is moderate and the finish is fairly dry considering the full malty middle

T - The taste is fresh, so great to enjoy on tap which brings another dimension to the oak and hoppy character which compliment each other. The flavor has an orangey hop quality similar to 90min's w/ subtle english ester in the yeast giving mild spice notes and tinges of creamy baked dessert.
There is a light black cherry and dark plum quality in the flavor w/ mildly oaky tannic accent leading back to the slight piney hop flavor. There is slight orange liquer quality with the high alcohol and citrus from the american hops and cordial quality with sweet texture but slight pepper taste w/ mild heat in the back of the throat. The taste has mild current and blood orange notes w/ gentle cinnamon and lightly toasted shortbread

D - I was pleased to try this on tap on my birthday - I really highly recommend it if you are a fan of American Strong Ales which it has more in common with than Imperial IPA. The flavor is like the beer equivalent of Grand Marnier - excellent drinkable flavor and a true nightcap, but so good anytime you can enjoy- World Class!

On tap at the Winking Lizard. Gotta love these special Friday keg tappings - always something nice popping up!

This one was a dark amber color with a nice white head. Looks very appealing.

The smell was great, nice caramel base with some aroma hops. Touches of pine and citrus, but huge malt coming through as well. This reminds me more of an old ale than a DIPA.

Taste kinda follows the old ale route as well. Actually, this has quite a number of easily identifiable and well integrated flavors from hops, but there's a ton of malt and wood making this not too bitter. Wood and sweet malt give a barleywine like base, some vanilla and coconut even dance with citrus and pine.

Nice body on this one from the tap, creamy and smooth with medium to heavy weight and a kiss of carbonation. Really luscious mouthfeel here.

Overall, it's a big brew, so not the most drinkable even on a curve. But I love the flavors here and would certainly love to run across this on draft again soon!

On tap at the Black Sparrow.

This is based on the Ballantine Burton, right? So I should be expecting a really strong east coast IPA with a comparatively small dose of hops.

Pours bronze in the bar's low light. Nice head. A very thick-looking beer, actually, which is odd because it's translucent and usually I associate thickness with haze.

Smells of DFH yeast, dark fruit, and some of the smoothest, thickest cereal malt I've ever come across. It's like smellning a bowl of grapenuts and plums while sitting in a hayfield.

Tastes like big, smooth cereal--the nicest, firmest dose of pale malt I've ever come across in a double IPA. Not syrupy in the slightest, nor off in any way. It's just extra biscuity, accentuated well by chewy yeast and balanced just slightly at the end by some spicy English hops.

A - deep amber with a tight lacing

S - Slightly sweet with a trace of earthy hop

T - Very complex. Could taste sherry and raisen (?) with a slight bitter finish. It reminded me more of a barley wine than an Imperial IPA

M - heavy with very light carbonation

D - liked it but it wasn't what I thought it would be based on the style. definitely would have it again

On tap at the 2010 Hayward Bistro DIPA Festival.

Apricot pour with a huge off-white head and major lacing. Subtle sweet grapefruit aroma with some nice hops in the mix and booze. A good hoppy taste with some sour grapefruit coming through and nice elements of wood and booze. Nice big bite on the swallow and some lingering bittering hops on the tongue after the sip. Multiples would definitely be a problem with the high alcohol content but a pretty easy sipping beer.

I was very excited to try this as I have yet to see it around my area. Was surprised to see it at the fest and gladly went straight to their tap handle. Glad I did. Worthy of an attempt.

Had this on tap along with the Avery IPA during my most recent trip to Brews Cafe in Granville.

Appearance- Comes off the tap a nice dark golden bronze with just a minimal sheeting of white head across the top of the beer. Translucent body with just a touch of beading.

Smell- Very intrigued here. Definitely a punch of piney, slightly fruity hops up front. However, there is also a pretty strong whiff of alcohol, with some woody notes that come through in it as well. Sweet smelling, slightly bready malts evident as well.

Taste- Again very interesting DIPA for me. Big notes of grapefruit and piney hops start off the palate but are immediately followed by that unusual oakiness and then lots of sweet caramel malt and a touch of bread. Finishes on a pretty strong note of biting alcohol with a mild touch of astringency.

Mouthfeel/Drinkability- Mouthfeel is decent throughout until the finish, of which I found the strong alcohol to make it feel a little thin on the end. Drinkability is also hurt by the strong finish and sweetness, which really builds as the beer warms.

Overall, I have mixed feelings about this one. I thought this was a really interesting and creative DIPA that had its moments particularly in the nose and certain characteristics of the taste. However, given the finish and the sweetness, the jury is still out for me. Will have to give this one another shot.

Source/Serving: Draft.

Smell: Very creamy cooked peaches, a little musty/oaky, toffee, and a little sour and yeasty.

Taste: Smooth and balanced. Very nice fruit (pear and apple) flavors with syrupy brown sugar and grapeskin bitterness that starts slow and crescendos up towards the finish. The finish is fairly short, resinous, fairly bitter with some woody undertones. Mouthfeel is moderately viscous.

When I first heard about this beer, it sounded like it was made specially for me: IPAs and strong ales are two of my favorite styles, and I firmly believe that oak makes any beer better. When I first got hold of a bottle about a year ago, I was somewhat disappointed. Don't get me wrong; it was a very good beer, but I was expecting an epiphany.

It wasn't until I tried this beer on tap that I had that epiphany. Often, beers of this type are better from the bottle than from a tap; the opposite is true of Burton Baton. It pours a beautiful deep amber with plenty of head. The nose entices with aromas of pine, citrus, and oak. Taste is similar, with plenty of aggressive hops rounded out by the oak. This is a wonderfully complex beer, with lots of flavors mingling harmoniously. I could drink this all night (or at least until the 10% ABV puts me on my ass). Definitely a top 10 beer for me and easily my favorite Dogfish offering.

On-tap. Stubbie's Gainesville, FL. Served in Chimay glass.
Pours a slightly hazy dark copper, one finger of fluffy head and moderate lacing throughout.
Rich smell of piney/citrus hops, sweet malt, caramel, and oak.
Tastes of bitter citrus, sweet caramel malt, and oak. The oak flavor is prevalent and mixes well with a noticeable alcohol burn.
I love the mouthfeel of this beer. It coats the mouth with a heavy hop bitterness, the hops begin to yield to the sweet malt and oak flavors, and finishes dry with a warm alcohol burn.
Drinkability is great. If you like the style of beer you will be happy until the end. Drink it slowly, complexity changes as the beer warms. Overly drinkable for such a potent beer.
A great beer by a great brewer, highly recommended.

Served in a snifter, with a touch of white head remaining atop a nice deep golden colored hazy ale.

Aroma of sweet malts, some faded hop fruitiness and a touch of oak. Interesting. The flavor is dominated by 90 minute, sweet with a citrusy background. Vanilla notes from the oak are subtle, and a bit of a musty old ale also backs up the flavor.

Nice body, ala 90 minute, sweet and viscous. This is an easy drinker. Glad to try it on draft at the Gaitherburg DFH Alehouse.

Consumed at the DFH Alehoush in gaithersburg MD. Reviewed on my Droid

Appearance is ruby red with a half finger of foam. Aroma is laced with grapefruit hops and a substantial malty sweetness.

The flavor is interesting... wouldn't really call this a dipa but it does have a ton of malt sweetness punctuated by a huge hop flavor and aftertaste. I kinda wish the oaked barleywine would assert itself a little more but overall this is a complex, interesting beer.

This beer does a superb job of hiding its 10% ABV... dangerously drinkable. Makes the visit to the alehouse totally worth it!

On-tap at the Flying Saucer.

Brought in a tiny snifter, this beer was suprisingly similar to the DFH 90 minute I had on tap prior. I will be returning soon and write a better review.

Great looking reddish-brown hues with dark cherry highlights. Just as excellent looking, lasting head that left lots of thick blankets of lace down the entire tiny glass. The lacing was perfect drapery like curtains of lace coating the glass with every sip.The oak aged was evident, and really added to it the flavor of the already great 90 min.

Nose was lots of caramel malt, and good hoppiness that was strikingly similar to the 90. Smelled great, and was overall really a delicious beer. I would go into more detail but these were really quick notes.

The mouthfeel was just super smooth, and silky. This beer was almost too enjoyable. I would say it was slightly lighter, and smoother than the 90. I would of gotten more of it, but there was so many other beers there I wanted to try too.

The first time I had DFH on tap and it is just as delicious as I imagined it would be. DFH never disappoints me.

Had on tap at Hop Devil Grill in NYC a few weeks back. Pours hazy amber/orange/red with a creamy/foamy beige head; smells of floral hops, sweet malt, citrus, fruits, caramel and alcohol. Smells very hoppy up front, very impressive, potent and enjoyable. Very good lacing.

Tastes as good as it smells with floral and piney hops, sweet malt that brings out the alcohol burn, then caramel, orange peel, cinnamon, rum, vanilla, bread, light spices and light smoked wood chips. The hops start the brew off, but the malt and oak barrel flavor trail take over for a nice dry finish. The flavor is a really nice mix and blends two styles quite well. Smooth and creamy mouthfeel, with little to no carbonation. An overall feel like an IPA and barleywine mixed together, but it's very balanced with subtle waves of multiple tastes, and it goes down easy, especially considering the 10% ABV.

A great beer that is a very delicious hybrid. Another great beer from Dogfish Head, which I was looking forward to trying; I love the 90 Minute IPA and this met my expectations as a great beer. Another great beer experience crafted by Dogfish Head...go try this beer and enjoy it as well!

Draft, City Beer Store. Besides 120 min, which arguably doesn't count, this is probably the sweetest DIPA that I've tried so far. It was a nice reminder to make an appointment with the dentist but a rather underwhelming beer. The beer looks fine, golden amber with a small white head. The aroma is honey, hops and sweet malt, a warning of things to come. There's a hint of oak, which I wish was about ten times stronger. The hops are sort of a tropical fruit lifesaver note. The flavor is way too sweet with no noticeable dryness from the wood or balancing bitter hop bite. The hops come through as a candied version of themselves, which sorta works in the 120 min but falls flat here. I can deal with one or the other, but the sweetness combined with lackluster hop flavor are what killed the beer for me. Squall remains my favorite DFH IPA by a wide margin.

As anyone who knows me knows, I have a somewhat unhealthy obsession with DFH's 90 Minute IPA. I was very pleased to finally find this on tap and dove right in.

A: The beer is a dark amber color. Extremely murky, the way I like my strong IPAs. It's got a big, pillowy off-white head that leaves big lacing. Pretty close to perfect.

S: I can definitely smell the 90 Minute IPA hiding down there. It's got that big citrus hop profile; grapefruity, almost pineappley. The hops share the stage with a lot of caramel and a light but wonderful oak smell.

T: Absolutely wonderful. It's clearly a DIPA at heart, but there's so much more. The hops are powerful, with their grapefruit and tropical citrus punch. There's a fair amount of pine. The pine melds deliciously with the barreled oak, creating a terrific earthy bitterness. There's a strong caramel counterbalance which results in an extremely well-balanced beer.

M: Dry and a little thick. Carbonation is medium. The booze is well-hidden. A little alcohol kick might make this one even better, actually.

D/Overall: Killer. Absolutely a world class beer as far as I'm concerned. Truly outstanding by nearly every metric. Amazing to look at, to smell, and to taste. I'll be seeking it out fanatically from now on.
