750ml bottle into a snifter
A: Pours a hazy golden color with two fingers of fluffy white head. Great retention and good lacing.
S: Typical funky Dupont yeast aromas here. Lots of lemon zest, clove, and cardamom. Mild fruity sweetness behind that to balance.
T: Similar to the aroma, but funkier. I get a musty flavor with peppercorn, lemon zest, and cardamom. Extremely well balanced.
M: Medium to light mouthfeel with high carbonation, appropriate for the style.
O: A great Saison - a balanced, tasty, and intense flavor and aroma. I can see why people want to use this yeast for their Saisons. I much prefer the dryness I get here to the sweeter American versions.

Pours a dull light wood color, right around pine. It's almost the exact color of my bookcase. Cloudy, opaque. Big white head. Lots of lacing. Clumpy lines of bubbles stick to the walls of the glass. Very good retention. At least a centimeter of foam remains after quite awhile.
The aroma has an excellent fresh grain character. Fairly sweet. It's a pleasant bready sweetness. There's a touch of band-aid and a dry yeasty note. Fresh bread. Some light fruitiness, apricots and lemons. Just a tiny sour twinge. A little simple compared to some saisons, but easy to like.
The taste is drier and ups that yeasty tartness some. It starts with some of that fresh barley sweetness and apricot frutiness, but it quickly dries out and adds in lemon tartness and a nice dose of spice. Peppercorns. Again, a bit of that medicinal flavor that I don't love. The finish is quite dry and a bit dusty. Lots of yeasty flavor with lemon peel and pepper.
Mouthfeel is effervescent. The finish leaves a very dry feel, almost woody.
A very nice saison, though I don't like it as much as the flagship Dupont. It just seems a bit simpler. No big complaints, and it might just be a case of being so used to Saison Dupont that's it's hard to avoid comparison bias completely.

Poured from a corked 375 ml green bottle into a Pilsner (it's all I had at the time while camping in the wilds of FL).
Appearance: Poured a cloudy golden color. Big 2-finger, slightly off-white head that stays and actually keeps growing as it's fed by a very active fine effervescence.
Aroma: Not much. But a slight bit of Belgian spice was detected. Maybe a hint of skunkiness.
Taste: Robust, sturdy maltiness with some Belgian sourness and spice. Some breadiness and caramel. The hops are forward in the form of a flowery presence and linger somewhat. (No skunkiness was detected in the taste.)
Mouthfeel: A medium-fine carbonation. Medium body.
Overall: A nice, very classy beer. I'm a sucker for anything that's "farmhouse"! I prefer a little more funk and spice and less hop forwardness in a Belgian. This seems to be toward the "champagne" end of the Saison spectrum just as is their Saison Dupont. Foret is, however, a bit more robust than the Dupont, and for that reason, I'd get Foret again.

C&C bottle opened with a nice pop. The pour is lively with more than half a glass of head which disappears quickly and leaves heavy lacing. The nose is funky! Plenty of sulfuric/skunky notes along with heavy cereal grains and a light lemony hops. The taste fruity up front with lemon, sugar, and grain. This is followed by a mellow tartness that provides a bit of a bite. Behind the bite is more evidence of the sulfur notes which leaves an off putting flavor on the palate. Mouthfeel is high with carbonation and moderate in the body department. Overall, this Saison has funk, but the funk is not in the form that I can enjoy. This is one that I will avoid in the future.

cork says 2012 with a 9 below it, not sure what the 9 means. The month maybe? Either way relatively fresh. Hazy faded gold with a billowing craggy and sticky white head. Sweet melon fruits covered in honey dew, yeast, faint banana and bubble gum notes on the nose.
Soft medium body with brisk but fading carbonation. Sweet fruitness followed by soft honey and herbal flavors and a nice malty sweetness. There is a significant hop herbal hop snap that comes along on the back end of the tongue with a bit of alcohol and yeast bite that cuts the sweetness so briskly for a smooth and refreshing finish. A simple beer but with extraordinary flavors that go well together and flavors that come from both sweet malts, yeast, and hops. A lot of stuff working very well together. Super dry finish, very nice.
