Poured from a brown 11.2 oz bottle into a Boulevard Tank 7 tulipish glass. No bottle date to be found.

Pours a hazy golden straw body with a tremendous white head. The foam is comprised of tiny bubbles that just refuse to die. As the foam slowly dissipates, it leaves behind the most beautiful rocky shape and sticky lacing on the sides of the glass. It's an agonizing wait to drink this beer, but it's beautiful to look at.

The aroma is just as stunning. It's just kaleidoscope of grassy, lemon, tart, musty and yet somehow fresh aromas that dance in and out. It's difficult to pin one aroma down before the next one is fluttering past.

Finally getting to drink this, it's just as fantastic across the palate as it is the nose. There's a much more discernible hop contribution on the palate than in the nose. A lot of the same flavors from the nose show up in the mouth along with a little black pepper taste. This is fantastic.

Mouthfeel is predictably light and 'scrubby' from all the carbonation. Refreshing and light.

Drinkability wise, I could drink a ton of this. However, there's so much happening that I really think that my palate would fatigue after two. That probably wouldn't stop me from having more.

Overall, this beer blew away my expectations and really makes me want to get a few more saisons under my belt. However, out of the 10 or so that I've tried, this one is by far my favorite. Fantastic.

On-tap at Armsby Abbey.

A- Served from the tap into a signature DuPont slim glass that appears to hold about 12oz. Massive fluffy white head forms and has great retention. Each sip reveals distinct rings of lace.

S- This aroma basically defines classic Saison yeast to me. A great balance of fruity, floral and peppercorn spice notes. Certainly a bit of light malts and bread behind the yeast.

T- Follows the nose but some more complexity adds on here. Yeast lends a plethora of flavors like floral, spicy, raisin, pepper, coriander, herbal, banana and clove. It all blends very well. Like bread, cracker malt and hops balance it out. Hops are spicy, herbal and earthy.

MF- Dried out light body with smooth silky carbonation. Nice clean bitterness in the palate.

A true classic that took me long enough to review. Compare all Saison to this. I would have to say the tap was missing slight skunk the bottles can have.

The colour is golden – orange, the liquid is a little hazy (the beer is bottle conditioned, but it was quite easy to decant it properly). The gigantic foam sinks slowly down to a three finger white compact head with a beautiful crater. The lacing is massive!

The smell is deep and generous: Lots of fruity, somewhat sour malt is mixed with a hint of alcohol, lots of fresh yeast, wheat dough, cookies, fresh herbs and flowers.

The taste is perfectly balanced, making it a very drinkable brew, even at 6.5%: Wheat dough, lots of fresh fruits, mild notes of yeast and boiled ham, and a hint of butterscotch. The aftertaste develops into a surprisingly bitter flavour with notes of spicy hops, some alcohol, bitter citric fruits and spices like cloves and cardamom.

The carbonation makes the flavours even better; it is quite strong but not sharp at all. They create a little foam in the mouth. The liquid is creamy.

A delicious brew!

As perhaps one of the most widely known depictions of the Saison style, copped this 11.2 oz brew singly from Gary's in Madison... what an amazing sample! This is a world-class, top-notch brew, true to the style, and above and beyond the average by far... superb hazy, cloudy appearance with impressive foamy head that had some staying power... smell was full of fresh citrus and a powerful sweet aroma... taste was complete with grapefruits, lemon, and a wonderful, lucid, crisp, clear taste that delivered and left little to be desired... one of the better brews I've sampled... full of chracter, quality, and style... definitely a must-try... this beer commands respect and is definitely one of the best representations of the style... Definitely recommended...

this was a newly-arrived 750ml bottle, from julios' recent shipment. taken straight from the case, to avoid skunking. tasted in early/mid may 2009.

just HAD to re-visit the review, because this bottle was GREAT!

appearance score needs readjusting (i was too harsh before anyway). clear when decanted properly. lacing is better.

no skunk in the aroma. floral, herbal, fruity and grassy, with gentle farmhouse character, spice and phenols. complex and lovely.

the standard bearer for saisons. (i love fantome, but it's far more inconsistent from bottle to bottle. and even at its best, fantome is somewhat of an acquired taste.)

that said, you HAVE to get this straight from the case, and keep it away from the light. that green bottle is the bane of dupont's existence, even if they still can't bring themselves to admit it.

750ml bottle, cork dated 2008, poured into tulip.

hazy golden straw color, decent head which slowly fades to a thin layer with puffy center. leaves a couple thin but solid rings of lace.

starts out with musty, earthy aroma and grassy hop. there might be a micro-trace of "skunk", but luckily the spice (clove? pepper?) and fruity character, plus yeast and bready malts overcome this handily.

flavor is very complex, with some pear fruitiness and hint of phenols. hay and barn funk mingle with the herbal hop bitterness, spicy yeastiness (again, pepper?) and sweet toasted malts.

very smooth and relatively substantial in feel, with an even smoother finish. moderate carbonation gives lift and yet more body, but with crispness that is refreshing.

i hope someday they can let go of tradition and move to brown glass. except for the rare occasions of being totally and genuinely skunked, it is usually always good but nonetheless still seems to have consistency issues. "every bottle is different", garrett oliver says, having had hundreds of samples to refer to. for some this might be charming, but for me it is worrisome. i'd hate to have people experience an "off" or skunked bottle and be turned off the style (or off of good/artisanal beer altogether)

awesome classic Saison...of course.

a: slightly hazy yellow

s: yeast, hay, hop flower

t: delicious! this beer is so complex, I get different tastes each sip. runs the range of beer...malty, hoppy, hay, bubblegum, slightly tart.

m: bone dry finish...but somehow sweet upfront.

d: awesome.

what a great beer! seems to be some inconsistency between bottles. I think it can be attributed to poor handling in shipping. always a great beer, but some bottles seem to be better than others.

a: This was a hazy, bright golden color. It was bottle conditioned to the point of being difficult to pour. I don't like glasses full of foam.

s: Perfect, this is the saison smell I had in my head that I couldn't find anywhere. What took me so long to try this?! Spicy elements, barnyardy funky elements, some fruity phenols, surprisingly assertive hoppiness, and the overall fresh zestiness make me reluctant to drink this because you can't smell an empty glass.

d: Mouth puckeringly dry overall, I love it! Perfect balance of funk, spice, and citrus. The finish is a long, lingering bitter spice note.

m: Light, spritzy, and very refreshing.

d: I found the perfect saison at long last.

Poured from a 750ml corked and caged bottle into a Dogfish Head Signature glass. Split with my buddy Scotty.

A: Hazy straw colored brew. Poured very gently still leads to a humongous fluffy white 3-4 finger head that does not move. Lacing is inconsistent, yet present.

S: FUNKY! As I poured this beer my wife said "hey what smells like a skunk?" I said it was the beer and she didn't believe me. Lots of barnyard, shoelace, lemon and zest mixed in to one wonderfully smelly beer.

T: Oh man. Sweet, toned, not at all like the nose in that the funk disappears almost completely and leaves a most excellent flavor profile.

M: Dry, crisp, wonderful mouthfeel. Tons of carbonation makes all of the flavor dance across your tongue in a wonderfully coordinated ballet. This is one of the most flavorful beers I've ever had.

O: Fantastic. Wonderful. Totally out of left field but I really love this beer and I will be getting as much as I can to sit on and have on hand.

750 ml bottle.

Huge white head, lightly opaque orange body. Rapid fine bubbles, My God! are these bubbles going to take over the world??!?!?!?! Slightly opaque blonde body.

Massive hop aroma.

Wonderful rolling hop bitterness on an earthy medium-sized frame. The lacing never ends. Black pepper and so much herbal spice from the hops. They should change the name from Saison, to "these hops will beat you silly". No, not that aggressive, but definately that impressive. I believe there is pineapple and super ripe peach. These fresh fruit flavors would lead those unsuspecting drinkers to think this dry beer is sweet.

Light bodied beer, which the acidity makes all the more refreshing. Amazing that the lightness of the body holds up great hops flavors while still retaining balance.

I could sell my soul for this brew. Okay, maybe not my soul, but definitely your soul.

Yellow liquid, greyed by suspended particles. A thick white dish of foam on top.
Aromas of honey, butter, toast and cool minerals. Pepper, sunned grasses, split grains and curdled cream can also be gleaned from the aromas.
On the palate it posesses husky grip, supported by sharply defined fizz. Earthy perfumes continue to intermix with bold, ropy tannins. Floral Chenin Blanc fruits are joined by green tea flavors.
Long, lingering bitterness and abundant nectar.

This is one of the best tasting beers Ive ever tried.

It pours a luminescent glowing orange with a merangue like monster of a head that lasts forever. This rocky beast of a head leaves rocky ridges of lace behind. Trapped in the convection of carbonation bubbles are meteors of flocculated yeast. It really looks cool.

The aroma is an intense mix of tart orange, bitter hops, candy floss, wet earth and musty fruit compote. The incredible complexity of the aroma is doubled in the taste. It reveals different flavors with every sip. Its exceedingly dry and bitter yet delicately fruity and spicy. Its rare to come across a beer of this complexity. So crisp and refreshing. A mild acidity shows up in the finish, mingling seamlessly with the hops. Horse blanket, earth, pepper and diacytl dance subtly in the background throughout.

The mouthfeel is creamy with velvety carbonation bubbles. This is the ultimate summer beer. Better than any hefe or wit IMO. It goes great with Jerk Chicken wings too!

I bought two bottles of this in Mons, Belgium.

It pours a light straw color, cloudy, with a snow white head of thick foam. It smells of yeast and fresh baked bread, I can't wait to taste it. Wow, it tastes as fresh as any beer I've had. It is not very carbonated, with a bottle conditioned beer, this is what I hoped for. I would say this is in the top five beers I have ever tasted. So drinkable, this is what our ancestors called beer!

A friend and I split a 750 ml bottle of this at the hopleaf bar last night after a concert at the metro.

One must pour this beer unhurriedly, otherwise it will get a huge head that lingers forever. It poured a fantastic deep yellow/amber with plenty of constant fizz. I smelled some citrus and took a sip. Very bubbly in the mouth but pleasant. Tasted zesty with a little pepper and apple. I was expecting a lot more wild yeast flavors (like I have tasted in the Ommegang Omeggeddon) but they were very mild. This beer is really well-balanced and leaves your palette fairly quickly making you want more. Excellent.

Pours cloudy bright gold with a huge everlasting fluffy white head. Spicy yeasty earthy aroma. Lemons and apples. Spicy as well. Taste is somewhat sweet with some spiciness, fruit, and earthy flavors coming through. Finishes dry with some herbal hoppiness. Well balanced and quite complex. Above all really delicious. Medium bodied and lightly carbonated. Amazingly drinkable. I love this one. An awesome beer.

G - This session we drank out of tulips for the fellas and flutes for the ladies.

A - Pours a golden yellow straw hue, between translucent with particulates to cloudy or opaque depending on how much is left in the bottle or how agitated the brew is, it has a nice foamy head, and good lacing, especially in the flute.

S - Aromas of hay, cut grass, bready grain or semolina pasta, mango.

T - This beer evolves through a wonderful array of flavors; from initial grain, hay, and bitter hop, to breadiness and dry hops, to ripe fruits, sweet estery banana and nutty flavors; this beer is a (subtle) flavor bomb. And at the end of the bottle, the yeast at the bottom is the most delicious.

M - The feel is refreshing and crisp with a dry finish.

D - Perfect for almost any occasion, widely palatable, great for pairing.

Poured from a 750 into a tulip glass. Body of the beer is a slightly hazy orange color with a few solids suspended in the beer, some carbonation is visible. After the pour the fluffy head reached to an impressive 1.75 inches. The smell is slightly difficult to describe, I will attribute that to the funk, I do detect notes of lemon and grass. This also smells kind of boozy, but it is something i do not detedt in yhe taste. This is just wonderful to drink on a warm day in the sub, the flavors match the warm weather so well. The beer touches my tongue with a bit of light malty sweetness. As the beer crests my tongue the carbonation lifts it up, letting it crash once more against my palate with a strong taste of lemon that lingers for a bit as well as a bit of spice. The mouthfeel is just as it should be a nice medium body with aggressive carbonation. Overall this is absolutely spectacular, as I have been trying saisons this has been The benchmark against which everything else is compared, and it has fared quite well.

A: Pours a pale straw/gold, with a lively, generous pearl-white head. Haze is apparent and uniform, though solid suspended particles are not visible. Numerous bubble trails rise through the drink.

S: Citric, funky, yeasty, slightly acrid, woody, peaty...

T: Tart apples and dry light wood on the front end, with yeasty dry light bread eventually replacing those flavors. Peat and other similar earthy, musty notes crisply finish each taste.

M: Very intense, robust carbonation really dominates the mouthfeel here. As this rush of bubbles dissipates, however, it's a (very pleasant) surprise to note that it lies over a velvety smooth, yet light body that really wouldn't need such an intense carbonation, though it masks the 6.5% ABV brilliantly. Finish is ever-so-slightly dry, though not astringent. Very drinkable/sessionable,

A: Aftertaste is very clean, though its cleanliness is more a product of the flavors on the palate, not an absence thereof. Those flavors include a slightly fruity tartness, crisp, woody earthiness, and a slight belgian funk. The finish is dry, but not terribly astringent, and the dryness increases over time.

Overall: Anyone who knows the saison style knows this beer. In my opinion it is the saison against which all others are measured, and while that does not necessarily mean it is better than the rest, in the vast majority of cases, this is true. Complex, but not busy; balanced but not boring...it's a nearly perfect example of a well-crafted beer, and a world-class example of a quintessential saison. This is the beer to introduce to a friend who doesn't like saisons because they're too sweet/fruity/etc.

It doesn't happen often...but...

Beer review #200: Let's just say this calls for a celebration and I thought why not try a saison? And what's a better saison than Dupont? None according to what others have said. I can't believe it's been 200 beers already, remember the early reviews? No, well here's some excerpts randomly thrown together: "designed to streamline... radical tortoise... hierarchy under subjective rule... these images are manifest to mankind... please step away from the doors... like ice in a glacier...". *note some/all excerpts may have nothing whatsoever to do with beer.

Poured from a 750ml bottle into a St Feuillien chalice.

A: Cloudy pale gold body with an ample (and excitable) 2cm white head that stands resolute in the glass.

S: Sweet scented cider apples, barnyard straw, musky yeast and an earthy hop note round out the aroma. It's a very rustic fragrance and one that invites you like an eastern European person would into their home for a nice hearty bowl of Goulash.

T: Wow is all I can say. Such a well balanced flavour profile - begins with those sweet cider apples, mid-palate adds a touch of sour yeast and some distilled grain alcohol, then finishes with citric hop bitterness and a Champagne dryness together in harmony. Reminiscent of Duvel in all the right ways.

M: Body is medium, carbonation is creamy with a bit of Champagne fizz.

D: Highly drinkable and highly balanced, I cannot think of a single negative about this brew. I'm impressed by the simplicity (there aren't many flavours at play here) and the fact that it doesn't bore me at the same time. A real contender to Duvel, and cheaper as well.

Food match: The vinous character of this beer would most suit anything that goes well with white wine; light pasta, fish, and Asian cuisine. In fact this brew has flavours that would compliment anything bar game meats and char-grilled steaks.

Careful with this one as the cork started coming out on its own after removing its cage!

This beer pours a golden hazy yellow with a huge off white head. As pouring I can already smell the sour lemon and mustiness found in a typical saison. It is a very fruity musty scent that tells you you're in for a treat.

You have to wait a bit for the head to settle, but it remains huge as I take my first sip. First sip blows me away as it has greater depth than I've ever experienced in another saison. There are many layers of flavors that dramatically change with such quickness it is difficult to discern each and pick apart everything judiciously. It begins like a typical saison with a lemon zest taste and then moves to a peppery hop bitterness. The finish is dry, but the aftertaste develops a life of its own with full flavored bitterness unlike any other. Ample carbonation in this one does not detract from its flavor, but seems to warm the palate. Highly complex and drinkable brew. Everything you want in a saison taken to a new level.

Available here via the SAQ, the provicial liquor commission. Poured in a "maredsous" chalise at 5-8 celcius.

A hazy orangish yellow ale huge white head, lacing and quite effervensent. Aroma of spice, yeast, and notes of citrus (lemon). Flavor of fresh dough, spice and esters from yeast. Dry finish and light body makes this a refreshing and incredibly quafable ale. Its a wonderful summer ale. At 6.5% abv, being bone dry and relatively light bodied, it hits my sweet spot!

Pours deep golden opaque/cloudy orange with a fluffy/billowing white head. Aroma is yeasty and citrus sweet with a surprising kick of hops! Flavor is sweet citrus, yeast and herbs. Finishes with a nice kick of yeast in the sinus and a dry hoppy throat. Medium body with great lacing. Definitely my favorite Saison! Great for the warm spring and summer months. This is what a Saison should taste like. The benchmark, in my opinion, of any American or Belgian/French attempts at this style. Very well executed.

From the bottle into a weizen glass (the 2nd into a pint glass). Very hazy, cloudy and golden wheatish in color. Thick, rocky head 2 fingers thick and she stayed around quite a long time. Beautiful lacing all the way down the glass. Aroma of grass, grains and very fruity with a slight whif of hops. Better tasting than I imagined from the aroma. The Dupont has a slightly grainy, fruity taste to it with the slightest amount of light bitterness to it. As I drank it the fruitiness became more noticeable without killing or overcoming the hops. Mouthfeel is so very smooth, almost creamy with a decent amount of carbonation that offsets the dryness that is evident later on. Really alot going on with this beer. Extremely enjoyable and drinkable. Great session beer. You have to try this one.

750ml bottle poured into tulip.

Straw yellow with beautiful off-white three-finger head.

When I pulled the cork out, immediately I was hit with major skunkiness. Once I poured it into my tulip, the smell rounded out into an interesting blend of skunk and the normal funky yeast smell.

Taste begins with fruity, citrus notes accompanied by the funky backdrop throughout. The malt kicks in near the end, which was beautiful.

Creamy mouthfeel, great blend of carbonation and smoothness.

Overall, a wonderful saison, and the one that most likely comes closest to the ideal in terms of style. Definitely one I would enjoy again throughout the summer.

A flaxen streaming liquid under layers of stiff foam radiates scents of the earth. A gift basket of aroma: lavender salts, forest honey, radish greens and apple butter packed in handfuls of fresh mown hay. My nose is all wet with puffy froth. Exceptionally balanced flavors reminiscent of that perfect after dinner salad of bitter greens, toasted sunflower seeds, farmer's cheese and dried cranberries in a light citrus vinaigrette.

When you've finished, use what's left of the head as a replacement for whipped cream on your fresh blackberries. I love it.

The appearance was an intense straw color verging on gold coupled with a fluffy lacing head. The aroma had a subdued spiciness to it with light notes of fruity ester and a tocuh of sour and olive. There is a solid background of pilsner malt in this beer to balance the fresh spicy, zesty character of the hops. Very light hints of citrus lemon are present, balanced by a peppery sharpness. The beer is deep and balanced. There is a dry, long finish. The mouthfeel was medium and appropriate. Great totality of a beer.
