From corked bottle into a Corsendonk chalice. Hard to read, but it looks like identifying numbers: L021300...could be several years old.
Color is golden with small beige head...lots of floaties as the bottle gets moved around.
Aroma of sweet malts, powder sugar, fresh baked bread.
Medium carbonation and mouthfeel.
Flavors of floral hops, candy sugar, coriander, grassy hops, light pepper and herbs, some astringency. While this bottle is, I'm guessing, a tad past prime it's nonetheless very tasty, and my numerous experiences with this beer fresh and aged have always been positive. Very flavorful, full bodied, complex and satisfying.

Huge white head atop a golden/straw colored lightly cloudy beer. Lively carbonation activity.
Just a hint of skunk to the aroma, but it is far overshadowed by delicious notes of hay and funk, pepper, cloves, grainy malt sweet, and a tart fruitiness.
Full flavored zing of spice and tart, light funk joins the sip, some of that nondescript fruity flavor also. Sip ends with the spice and sweet getting some righteous herb and flowers into it, a bit of earth and bitter, and it is nicely dry.
Bright in the mouth, clean, sorta thick and highly carb. for style, but it works well to showcase the flavors. The linger is just right.
Wonderful saison, certain to please those who like spice forward and lightly funky, certain to disappoint those looking for the crazy funk or the extreme tart characters of some saison yeasts.

Poured into a Duvel glass.
Pours a cloudy golden yellow orange; tons of bubbles and a massive near white head. Head is tremendous looking. Incredible head retention and lacing. The head and lace is massive. Really is a tremendous looking brew and is among the best looking brews I have ever seen. Wow.
Brew smells of spice; yeasts and coriander lemon zest. Good nose.
Brew is spiced; citrus, lemon - zesty. A good brew just a bit too spiced. It could use more yeast which would add to the body and mouthfeel. The brew is spiced from start to finish. Cant tell it has high abv, somewhere between a triple and a saison. Good tastes, just could have been something way more. Good.
This is one of the best looking brews you will have. It doesnt quite hit on the taste though. But it is very good.

Serving type: 750 ml bottle. “112006” is printed on the front label but I have no clue if it is a bottling date or not. Also, “2.011” is printed on the cork.
Appearance: Poured into a tulip glass. The color is hazy gold. Two fingers of white, fluffy head left a bubbly skim and thick ring around the edge.
Smell: Appealing farmhouse funk mixed with hayloft. Apple cider, clove spice. The farmhouse/Brett funk is tame compared to other saisons. Pepper spice gives it a little kick, and there are also hints of lemon and bubblegum.
Taste: Light, effervescent mouthfeel. The taste offers a nice kick of spice upfront; mostly pepper, but I want to say cloves are there, too. The Brett funk is present but is tame as in the smell. It is not as fruity as the aroma; no apple, really — at least it is not as prominent. No bubblegum, either. Mostly spice and a little lemon. The funkiness comes on as the beer warms. The booze is noticeable but not overpowering. It offers a nice warming sensation.
Drinkability: Pretty good stuff, though the taste disappoints. I think I would much rather drink this during the summer than the holiday season, though.

A - pours a hazy pale straw color. A thick over four fingers worth of mouse like snow white foam on top. Excellent retention a is slowly fades leaving webs of lacing against the glass.
S - the nose is crisp and bright. Lots of intense citrus notes mostly bitter orange peel, sweet orange pulp and lemon zest. Sweet yeasty bready notes and hints of ripe banana peel. Notes of hay and dewy grass underneath.
T - plesant mix of dough and toast up front. Bright fruit esters enter quickly. Lots of banana peel and pulpy orange. Most citrus character lies mid palate with more instense bitter orange peel and acidic lemon pith. Tartness is a strong undercurrent to this ale which intesifies and lingers long after the finish.
M - medium bodied with a slightly watery texture. Very high carbonation but still within the realm for the style.
O - one of my favorite holdiay beers and one of the best saison style ales. One everyone should try.

Avec Les Bons Voeux vertical (2005, 2008, and 2009) served at a tasting. Green bottles served into Samuel Smith's nonic glasses. Consumed from recent to distant. Expectations were high. Reviewed from notes.
A: Pours a half finger beige colour head of amazing (10+ minute) retention. Body colour is a milky caramel. Quite creamy. Head is amazingly luscious, creamy, and nicely thick. Looks almost like a creamy scottish ale in the vein of Belhaven. Gorgeous. The '05 is lighter, almost a yellow colour.
Sm: Rich fruit, caramel, fig, spice, fermented fruit. Pineapple. Pale malts. Luscious sweetness. Floral hops. Flowery notes. Fresh and incredibly evocative, even with age on it. One of the finest aromas I've ever experienced. Honey.
T: Milky notes, caramel, palte malts, subtle brett yeasts, honey, heavy floral character, and a bit of white pepper. Pineapple is as subtle as ever; that's difficult to do. Yeasty clove. Nectar. The floral character is amazing. A bit imbalanced in its age, but very unique for a saison. The '05 has delicate fruit notes evocative of the delicacy of something like Westvleteren.
Mf: Smooth, peppery, of perfect coarseness. Great thickness and carbonation. Suits the flavour profile brilliantly. Gets dryer as it gets older. Soft and silky.
Dr: Very drinkable and enjoyable. The '05 is divine, with great yeast and refined delicate fruit. An incredible saison when properly aged. One of the best in the style to be sure.

Poured from a 750mL bottle into a tulip. 9.5% ABV.
Appearance- Huge white billowy head, hazy golden body. Little lacing.
Aroma- Belgian yeast smells, big clove, some flowers, light banana. A slight spiciness.
Flavor-Lightly bitter, some alcohol (expected for a 9.5%), relatively dry. Lemon?
Mouthfeel- Huge carbonation, medium body. Creamy.
Great big saison which my wife and I thoroughly enjoyed. I honestly prefer the "standard," but this was very nice.

From a 750 ml bottle (2012 on the cork) into a wine glass.
A-A normal pour produced a huge (three-plus fingers) head of white foam. The head stuck around for quite a while and left nice chunks of lace on the glass. The brew was murky and light orange and yellow in color.
S-The smell was a spicy mixture of straw, lemon, a bit of bread crust, and some light fruit. Not terribly funky. Little whiff of booze heat, too.
T-The taste tracked the smell pretty closely with a mostly dry, mildly floral spice mixture being predominant. There was also some lemon, some straw, and just a touch of light, sweet banana flavor on the mid-palate. Alcohol was noticeable, but not intrusive.
M-Feel was light to medium in body with a fair of fine, prickly carbonation.
O-All in all, this was an enjoyable saison, and one that I did not feel out of place drinking in December in the mountains. (I'm typically a very seasonal drinker, so saisons are not my go-to in the winter). I'm not sure if it was that much better or worse than a regular Dupont, but it was slightly different, so points for that. I could see this pairing nicely with turkey and stuffing.

I picked up this bottle at the store about a week ago, and I couldn't wait to open this up.
When I initially opened the bottle I smelled pineapple, then the foam started rising up the neck. I poured this into a chalice style glass, and I got a ton of head from the initial pour.
This is a very good smelling beer. I get more of the pineapple and apple from the nose.
The body light and tasty. The belgian impact is very present. This is a fruity, yeasty offering.
I recommend picking this up and opening it immediately. After all, you can't wait very long with a green bottle.

750ml bottle, best before september 2017
A- Dark golden colour, quite murky/hazy. Huge, bubbly, soft-looking white head, great persistence through the last sips, suprinsigly it does not leave that much lacing
S- Definitely a sweet malt base, maybe some sugar in the mix. Strong yeasty presence, bringing an earthy/barnyard kind of feel. Spicy notes, expecially pepper, on the back of things and maybe a slight lemonish note
T- Bold grainy, crisp entrypoint, very lively in the mouth. Bittersweet, with a very nice balance, throughout the whole tasting, with notes of honey along with a persistent herbal feel. Some kind of earthyness is also present. Background notes of pepper and lemon as the smell suggested. Finishes decently dry despite it's complexity and slightly musty feel, leaving you longing for another sip
M- As mentioned, very lively. Quite dense in body along with pretty high carbonation. You can really feel this beer. The 9.5%ABV is perfectly hidden though
O- All the basics of saisons are there, but in a stronger, bolder version, in terms of body, mouthfeel, maybe even complexity. It may feel on the point of being a little too much, but it never really gets over the top. Plain good stuff, worth a plain good 4

Made the mistake of opening after work, before dinner, and without noting alcohol content (9.5%), but fortunately within the safety and comfort of my own home and without heavy machinery present. Served from 750ml bottle into a tulip glass.
A: Pale straw-honey color. Mostly clear with only slightest haze or cloudiness. Vibrant but not excessive carbonation; bubbles like Champagne. Classic Belgian dense whipped egg white head that leaves wonderful lace.
S: Herbs & spices, but not much hops. A little of the horse-blanket-wet-dog you'd expect from a Farmhouse ale. Oh...hello, alcohol!
T: This is not a subtle beer. Lacking the malt or hops presence to offer cover, the alcohol content draws attention to itself. Even the spice of the Belgian yeast can't compete. Finishes dry, with lingering warmth. Yes, it's boozy.
M: Pleasant carbonation contributes to good mouthfeel/texture. Might have earned a 5.0 if it wasn't for its seemingly combustible nature.
O: A pleasant beer that perhaps would have benefited from better timing on my part. However, even with or after food, I don't think it has the backbone to support the high alcohol content, leaving the beer fundamentally out of balance.

A- Pours a hazy straw color with a thick white head and lively carbonation.
S- The aroma is bold, with huge notes of tart lemon, barnyard funk, and fresh herbs. Some banana notes from the Belgian yeast is also evident.
T- The first thing I notice in the flavor is some biting sour apple that I didn't initially pick up in the nose. The rest of the taste follows the nose with slight funk, crisp/refreshing tartness, and a bit of grassy bitterness from the herbs.
M- The mouthfeel is medium to thick, but it is offset by heavy carbonation. It is a bit reminiscent of a dry white wine.
O- This drinks very easy, and the 9.5% is completely unnoticable. One of my all time favorite saisons, even if it is pretty high in alcohol for the style!

750 ml bottle, 2012 vintage, poured into a tulip glass.
A- Pours a clear, light golden color with a big fluffy white head, great lacing.
S- A light, bright aroma of lemon and white grapes, hay and yeast, a bit of floral and spicy notes as well.
T- Delicious light fruit, lemon, grapes, apples. Some earthy, funky notes and a mild tartness, as well as some light spice. Malt is light and bready and a bit sweet. A bit of floral hops and some fruity alcohol.
M- Medium-bodied, has a smooth, soft feel with a dry finish.
O- A great saison, its fruity, yeasty and spicy aspects are all awesome and delicious, I'd be happy drinking this at any time of the year.

Poured into a Saint Somewhere wine-style glass. No readable freshness date.
A- Pours a hazy gold color with a two-finger white head that plateaus up above the top of the glass. So strange: the plateau remains intact even as sips are taken and the rest of the head slowly diminishes.
S- Lemony, effervescent yeast aroma plus a trace amount of skunkiness (probably due to the green glass bottle). Slightly sweet with some mild herbal spice characteristic. A bit musty and barnyard-like.
T- Peppery, herbal spiciness with some wild yeast flavor. Alcohol is extremely well masked. Notes of lemon peel and coriander. Slightly bitter in the finish. Booze comes through a bit more as it warms.
M- Spritzy with high carbonation and a light body. On point for the style.
O- Always so worried when I buy green glass imports since they rarely have freshness dates, especially since I got burned on a bottle of Biere de Miel I purchased at Whole Foods. Luckily, I went with my gut when I saw this on the shelf at one of the bottle shops I frequent which I hadn't seen there when I last visited maybe a month before. This easily makes it into my top ten Saisons. Satisfying in every department.

A - Three fingers worth of crisp dull white colored head with a slightly rocky top comprised of big chunky bubbles... Excellent retention... Once receded there is a slight collar and thin veil of lacing... The color is a slightly hazed mix of straw and mustard yellow... Gobs of chunky lacing cling to the glass...
S - A mixture of hay, grass, and wheat are first to greet the nose... Some notes of lemon zest... A slight Belgian yeast component... A bit of funkiness... A bit of apple... The scents lend themselves well to one another... Nice complexity...
T - Hay, dried grass, and wheat are at the forefront on the palate... A bit soapy... A light spice component... Some faints notes of orange and lemon zest... The finish takes on a herbal quality with notes of menthol and eucalyptus... The flavor profile improves a bit as it warms, but not quite enough to get it to that next level...
M - Sturdy... Medium bodied... Crisp... Clean... Sharp carbonation bites the tongue... The finish is a mix of dry and chalky...
D - A mixed bag... Very nice appearance and aroma give way to slightly disappointing taste, mouthfeel and overall drinkability... I can't say it's a bad beer, but it's definitely a bit rough around the edges and not one I would either recommend nor partake in again except perhaps the rarest of situations...

S-Intense pils malts, lemon, dried apricot, belgian yeast, spicy herbs, metal, ethanol (sharpie marker, lighter fluid)
M-Surprising medium body, above average carbonation
O- Like a citrus, ethanol infused pilz, as if someone poured lighter fluid into a summer pils. As it warms the ethanol fades to the back and the pils aroma turns to a grainy tortilla like aroma, with lemon. Though a decent beer, i find it hard to finish the entire bottle, and i don't see myself buying it again.

Poured into a Gouyasse tulip glass. Pours a light golden amber with a half glass white head that dissipates slowly to pillowy foam and massive lacing. Aroma of light malt, lemon, saison yeast; grassy. A hint of skunk initially on pouring. Flavor is spicy light fruit and mellow citrus, slightly buttery and grassy. Finish is dry with a spicy bitterness and residual light fruit. Light bodied with a great mouth feel from peppery carbonation. A very nice saison with subdued wild yeast, pleasant fruit and malt. Alcohol was warming, but well covered. I'll have to get this every winter.

Poured from a 750ml bottle
A - Dark straw effervescent body beneath a white fizzy head, almost like when you pour a soda real fast. Head fizzles to 1/4 inch but leaves pretty nice lacing.
S - Fresh cut hay and pilsner malts and hops. A good bit of alcohol and yeast in back.
T&M - Very effervescent and tingly from all those bubbles which makes it quite dry. A nice hoppy bite and pilsner malt up front with a sweetness from the alcohol. Nice Belgian yeast on the back of the tongue. Much hoppier than expected and this really comes across pilsner-like to me.
O - I really wanted to like this beer more than I did. It had nice flavors and I enjoyed it but could have used a bit more yeast and less pilsner malt.

Avec Les Bons Voeux is a strong saison, with traditional flavors slightly increased, but none more than the ethanol, which is easily tasted and felt on this beer. The typical saison yeast, pale malts, and lightly bittering hops are all here, along with an amplified amount of alcohol. Clearly a winter saison, I guess (if increased ethanol is the implication of a winter brew), this would be nice to share a small glass of with friends, but not something I'd seek out for individual consumption again.
Pours a very tall head of large to medium-sized bubbles, white in color, which has average retention for the style. The head collapses to a thick ring around the perimeter of the glass, leaving some significant lacing in its wake. The body is a cloudy golden orange color, light brining out pale orange and yellow hues. Carbonation is active and visible, rising from the center of the glass.
Aroma is rather and surprisingly clean: pilsner and pale malt characters with some Belgian yeast; light lemon citrus; and sweetish, dried grasses.
Tasting opens with pale malt characters, some mild lemon citrus, and bit of flowery herbs. Midpalate picks up saison yeast, mild hop bitterness, and substantial ethanol. Back palate notices hop bitterness, mild to medium saison yeast, and fairly strong ethanol. Lingering aftertaste of ethanol, modest European hop bitterness, and saison yeast.
Beer's body is medium-light to medium, with high, aggressive levels of carbonation. While the carbonation level is typical of some saisons, I don't find it particularly conducive to enjoying the beer as it produces an overly fizzy, at times annoying long-tingling, then finally bubbly mouthfeel that may also obscure some flavors/aromas. Similar to champagne, in overall feel. Ethanol noticeable on tongue, in nostrils, and on back of throat. Finishes semi-dry, with lingering ethanol burn on throat.

Served from 375 ml bottle into goblet.
A - Straw colored; slightly murky with some suspended sediment (could be my fault for not allowing to settle after transport). Fragile but tall head fades to thin layer of large bubbles and some lace.
S - Very clean. Crisp grain and surprisingly strong, fresh noble hops notes; black pepper, some faint fruitiness in the background like Juicy Fruit gum. No alcohol notes.
T - A big punch of noble hops flavor is up front, mixing with Pilsner-like grains. This is followed briefly by an almost metallic bitterness that fades away back to the grains and Juicy Fruit flavors. Some alcohol notes.
M - Medium body, creamy carbonation. Slight alcohol burn.
O - A good beer, but for me, the extra hops flavor and bitterness are a distraction rather than an enhancement for this strong saison. The metallic tang is too disruptive to me.

2008 vintage, poured to snifter:
Pours a glowing orange gold with a somewhat dense white cap that stays thick and milky for the remainder of the hour.
Spicy alcohol, sweet grain, apple cider and citrus, exceedingly sweet, still a ton of depth to this beer.
Warm fruit notes, bitter alcohol, far from bland, spicy clove and pool water, still an exciting saison after 4 years.
Drinkable given that it's a 10% saison. Interesting, what a treat.

Got this bottle in a BIF. Excited to crack it open. Looks nice. About an inch and a half of fluffy white head with ok retention. A few spots of lacing stay on the glass, but not too much. The body is golden and hazy. Aroma is nice. Fruity, floral, a bit spicy, and candied citrus peel without the sweet. Flavor is grassy, floral, citrusy, and spicy. Mouthfeel is right on. Light, med-high carb, dry, very nice. I had no problem drinking the whole 750 by myself, was very easy drinking and very enjoyable, but not really remarkable.

A special Saison brewed for the holidays, and perhaps for the winter, as it touts a hefty punch. Not sure if the extra alcohol does it much justice though. Clearly it’s a decent sip, but more of a sharing and pairing offering, as it seems bit lost on its own.

750 ml caged and corked bottle, 2011 printed on the cork. Served in a Unibroue tulip, the beer pours a cloudy gold color with a couple inch frothy off-white head. Head retention is excellent, and there's a decent amount of lacing. Aroma is fruity and yeasty, it smells like apricots, lemon peel, hay, peppery spice and some banana. Taste is similar to the aroma, the brew tastes like hay, peppery spice, lemon and orange peel, pears, earth and some bready malt. There's more bitterness in this brew than I was expecting. Mouthfeel/body is medium, it's a bit slick and creamy, and is very well carbonated. The 9.5% ABV isn't very noticeable at all. I liked this brew, I'd recommend this one to others. $11.49 a bottle.

excellent saison, pours hazy pale yellow, very very airy light white head a 3 inches high and lasting. looks like a nice big cloud floating there. smells yeasty, sweet, and strong. notes of spice and preserved lemons are present, hints of brown sugar as well. flavor is very light, maybe a touch of honey sweetness, floral hop and yeast profile. feel is fantastic, incredibly light in the mouth for a beer thats 9.5%. major carbonation, but its little tiny bubbles, great feeling. medium bodied. great buzz from this guy, dangerously easy drinking. overall a really solid saison, if a little light on the spicy notes. yum yum
edit: just had a 2007 vintage of this, and its changed a lot. lots of the sugars have seemed to congeal, making it thicker and sweeter, while the carbonation is tamed a little as well, and that airy lightness is gone. the alcohol is also tamer too, never would guess its as strong as it is. I think age has done some good things for this beer, but I have to confess to enjoying the fresh version a bit more.
