This beer is retired; no longer brewed.
We put in a pin part of a test batch Saison and pitched a Roselare culture into it. The Roselare blend culture is supposed to replicate the ambient micro flora of the West Flanders region, best known for its spontaneously fermented Lambics and Geuzes. It contains two saccharomyces cultures, a belgian and a sherry, two brettanomyces cultures, a lactobaccilus and a pediococcus cultures. It'll be quite interesting how this project turns out!

This was in a cask at the opening night of Craft Beer week in Chicago at the Garfield Park Conservitory. It was explained to me that this was a small bad batch of the Saison and Garfunkel where all the sugars were not consumed by the original yeast, so they added some Roselare Yeast to get at the rest of the sugar and sour it up.
It poured a cloudy golden orange, with very little head that went away very quickly leaving no lace in the glass.
The smell was not very much like the original Siason & Garfunkel. Where the herbal notes were overpowered by a acid funkyness with a stroung sour backing.
The taste was very focused on the sour and lost alot of the saison qualities. The barkyard type funk came though immediatly followed by the sourness. There was even a hint of alcohol flavor in the finish.
It felt good in the mouth, puckering yet sweet made it a pleasure to drink.
Quite happy to have gotten to try this I made sure I got a second pour as the night progressed. A good way to turn a folie into a nice glass of beer.
