Transcribed from notes dtd Sa, 04 Dec 2010. This was an IHMaple Shade beer offered at IHLNC on that particular day.
Another beer with tan wisps in lieu of actual head. I simply could not keep up. The nose reminded me of a dubbel with its dark fruit esters of plum and raisin. The cheat sheet mentioned a "Belgian Abbey yeast" but nothing more specific than that. Color was a deep brown with NE-quality clarity and ruby highlights. Mouthfeel was thick, not quite syrupy, but on the approach. It tasted of black cherries, raspberries, blueberries, plums and raisins along with a fair amount of heat. Zounds! Tastykake had recently released a Limited Edition Berry Cobbler Baked Pie and I was put in mind of it. How timely of Lappy, the brewer, to walk in as I was drinking this beer! Finish was smooooth, dangerously so. Man, I could have put away a good bit of this beer, but at 12.5 %, well ...
Named for a friend of the assistant brewer who had recently gotten engaged.

From the Maple Shade IH location, served during the Winter Warmer festival. I was leaning towards BSDA but quad seems just as appropriate.
A: The quad is an amber color that could pass for a dubbel if it weren't so clear. That led me to think BSDA before seeing the entry. A quad fits though. Resting atop the ale is an off-white head that exists as a thin band.
S: The nose has candi sugars, dark malts and a lingering sour cherry aroma. The sour cherry aromas verge on vinegar, resulting in a Flemish nose.
T: The quad has a strong spice profile that feature licorice, dark candi sugars and vinegar. While the sourness isn't a driving flavor, that tart cherry body lingers just below the surface. The more I linger though, the more the vinegar comes to the forefront. The quad is very hot, weighing in on the higher side (12.5% per my sheet). This beer may be the winteriest warmer of the day.
M: The mouthfeel is sweet with just enough tartness to leave a lasting impression. The last beer from my sampler and definitely one of the richer offerings.
D: Whether the beer is 10% or 12%, it is big. Small sips get the job done.

A: In a chalice the coloring appeared a pitch black, when back-lighted only the slightest hints of ruby-cola can be detected along the glass edges. A thin, frothy, sandy-beige head sits atop briefly, but adheres well sticking to the glass forming a thin band. Thin scriptured lines were left for a lacing.
S: Fruity and spicy nose of dark fruit of spicy plums and Belgian candy sweetness mingles together nicely. Pears and apricots can still be appreciated underneath with a bit of sweet licorice and rainsy notes coming through.
T: The opening flavor was sweet, loaded with Belgian candy sweetness and dark fruit of sweet plums. Fruity tones from the choufee yeast are present and greatly appreciated. Sweet licorice, raisiny notes, and a fresh breadiness are experienced on the finish along with some sweetened alcohol and warmth. Particularly clean, spicy with beautiful emphasis on the yeast (sweetened dark fruit, & licorice) along with some alcohol gives this a great foundation and base for a complex and intriguing experiencing. Hands down to date their best brew out of this brewery to date.
M: The mouthful is light, oily slick on the tongue. Very softly carbonated, letting the smooth slippery texture speak for itself.
D: Nice drinkability, warming with spicy sweet dark fruit nature and sweetness that lingers about but lightens the mood enough to make you forget about its big 9.8%abv nature. You cant walk away with just one glass on this limited brewed beer. Please bring this back and ship it to Denver. Award winning potential and the best beer out of this brewery to date. Brewed big and sweet with an eloquent cleaniness that any stringent Belgian drinker could appreciate. Low on the abv side per style makes this particularly easy enough for 2-3 servings that will keep you impressed.
