Notes:
Brewed in the style of a Belgian monastery. This mahogany ale has the sweetness of dark Belgian candi sugar paired with a distinct aroma of plum and pears.

On tap at the brewery. Much lighter in color than a traditional dubbel; almost copper colored. Good lacing, decent head retention.
Lots of fruit in the nose, with pears, plums, bananas, and an almost hefewezien-like bubblegum aspect. These notes also emerge in the taste, combining with strong fruitcake spiciness, moderate sweetness, and a low underlying bitterness. Very fruity.
Somewhat unconventional take on the style, but very tasty. Reminded me of a dark wheat beer with that banana and bubblegum flavor, combined with the darker, heavier fruits and spices you’d find in a dubbel. Worth a shot.

Beer poured from bottle into a stemmed wine glass
A - Cloudy body; beer poured with a one finger beige colored foam; slight amount of lacing formed on the sides of the glass; molasses or brown syrup in color
S - Yeasty and malty; deep whiffs produce scents of fruits, especially banana; typical Belgian style in smell, subtle hints of spices; not very overwhelming
T - Yeasty; slight sweet almost bourbon flavors, mostly caramel though, probably from high ABV formed from excessive amount of malted barley; malty biscuit backbone; fruit - like banana
M - Filling and moderately heavy feel; tangy feeling on the sides of the tongue from the carbonation
D- Not bad and a nice beer; could be considered a well-balanced dessert or after dinner beer; I'd be willing to try more from Iron Hill

A: Caged & corked 750 ml, poured into a Chimay chalice. Body is murky amber with a small stone/khaki-colored head.
S: Raisins and candied sugar. Plums and basic fruitiness as well. Brown sugar rounds out the sweet nose. Pleasant.
T: Sweetness dominates, though not in a bad, cloying sort of way. Raisins, plums, dark fruit and sugar - candied and brown - and caramel malt are the primary flavors. Finishes with a touch of alcohol; it's more noted when it warms.
M: Body is medium with a very fine-bubbled carbonation that gives it a good, creamy mouthfeel that's fizzy on the palate.
D: Good. Went well with mussels steamed in beer (SN Kellerweis) with some heavy cream, shallots and garlic. But drinking it on its own after dinner, the sweetness gets to you.

The Iron Hill Abbey Dubbel is described on the menu as being brewed with dark Belgian candy sugar and balanced with notes of plum, pear and spice. At 7.3% alcohol by volume, it fits right in with the Belgian category. Probably my favorite from the sampling menu - despite my mild feelings towards Belgians in general - this one has a lovely head that retains excellent lacing throughout. It's a rich and clean and clear amber.
The smell is composed of candy, burnt malts, pear, and some spice - maybe coriander? Needless to say, the description comes through the nose. The taste follows it, although the pear in the nose doesn't hang in there as much as I was hoping for. It's spicy at the back end, which leaves you wanting to have more. Beyond that, you don't notice the booze, which is nice for a change.
A well-composed medium body with good carbonation makes this an enjoyable and drinkable brew. If they do it again at Iron Hill, and I can let go of their Pig Iron Porter, I may be back for it.
