A- This beer pours a pale yellow body with a slow sea of bubbles supporting a snow white lumpy head.
S- The soft esters of yeast mix with dandelion flowers, chamomile flowers and a soft green hop hint in the finish.
T- The soft dry fruity esters and dried flowers finish with a lemony hop note and a slight mineral water taste in the finish. There is a dry pungent note that lingers with a faint field corn hint.
M- The medium mouthfeel has a gentle fizz that finishes softly.
O- This beer is bright and slightly dry with some nice subtle depth but it takes on a bit of a soapy quality as it opens which is a bit off putting.

Rare color for a beer, light gold milky. Lots of thick snow white head with good retention and leaving laces.
Nice aroma with predominant Belgian yeast.
Slightly different flavor from what I have tasted so far in beers, though not awkward. Very pleasant and refreshing. Quite citric but not aggressive, hints of lactose, cloves, lemon, bananas, oranges and green apples. All that but very subtle, yeast predominates here as well. Dry aftertaste and a bit acid finishing.
Light body with good carbonation, almost effervescent in touch with your tongue.
Although it is a mild beer (relatively to the Dubbels and Tripels) it has its own personality. Drinkability at its best, I could drink this all day. Complex but not bold. Higly recomendable.

Poured 33cl bottle w freshness date into wine glass. Showed a high effervescence, retention was pretty good though not amazing, left a really nice lace. Colour is a light straw gold.
Nose has some clay-ey yeast up front. Prominent maltiness and hops. Quite crisp with a solid mineral edge to it.
Taste has a quite mineral start, then crisp green apples, with a bit of tastness, plenty of yeast which dominates. Malt provides a good balance, and all together this shows quite a good bit of flavour Toward the end some drying bitterness and it finishes crisp and again mineral esters.
Mouthfeel has a high carbonation, moderate bite and body. Quite good, bit of sharpness, but refreshing, leaves a tingling sensation.
Enjoyable ale, it has a couple rough spots, but it has a really good complexity and flavour. Carbonation could be toned down, but flavour of the beer was quite impressive, try it out.

Pour is a straw like yellow with a slight haze and tight white head. Nose is assertive lemon, light yeast, touch of banana and sweet phenol. A little watery compared to the nose, sweet lemon, zesty spice but faint. The finish lingers with lemon banana and a hint of a lacto aspect. Light body and creamy on the palate with low carbonation. More balanced and deep than the triple.

Sampled from a 33cl bottle. Date had notched out "A" then "O" then "11". Not sure what the "A" is (week within the month?) and not sure if it was bottled or best by October 2011.
A - Yellow and hazy with a moderate white head of large bubbles. Big chunks of yeast sediment scattered as I started to pour. A constant flow of bubbles upward as the yeast chunks tried to settle downward.
S - Lemon and wheat. Very inviting.
T - Tangy and tart with a hint of lemon that lingers throughout. Spicy and dry with some fruit.
M - Light and airy.
O - A nice, refreshing beer if you ignore the chunks of yeast.

New to me brew/brewery picked up tonight at Bier Thirty in Bown... Paid about $7 for the 750... seems like a nice deal. Poured into my slim tulip with an easy 3 finger eggshell white head... nice retention and lacing... the brew is pretty clear straw blonde.
Grassy and slight lemon with something that I associate with "oxidation" but hard to describe, maybe light "bandaid" phenols?
Flavor is better with a nice balanced clove element that bounces off the slight residual maltiness .. some minor banana esters follow with a bit of lemon on the finish that is accentuated by the good carbonation.
Spritzy carbonation... with a medium light body make for a pretty damn drinkable beer.. This definitely an interesting lawnmower beer or a late night watering the plants beer (tonight).
Will I buy it again? Damn.. a 750 is tough late at night... but SURE... No real flaws other than what I perceive as oxidation in the nose.... and more likely my nose is the problem.

There’s Belgian Dubbel and Tripel ales, and then there’s Stimulo, better known as an Abbey Single. Typically, that means a smaller beer; lower in alcohol and pale in color. And that’s what we have here. A very drinkable and flavorful beer that’s a nod to what the monks might drink on a regular basis. Drink like a monk? Sure, why not.

Merry Christmas 2011!!
Pouring this one as my dad bought me this beer a month ago, and been saving it for Christmas.
Pours a light straw yellow tone. High carbonation. The appearance is really set off by the beautiful head. "witkap"is white cap in dutch, and this really fits the description. Foamy, frothy, yeast bubbles, beautiful.
Smells of soured yeast lemon sweet sugar bicuit notes. I make the bread at the restaurant where I work and the smell is of the slightly sweet/sour starter strain we use. A hint of floral freshness is there as well, grassy even. Asian pear, lemon zest, Belgium funkiness in the water(if you've ever been there)
Taste is Belgium.Sweet/lemon, yeast, clove, pepper, medium carbonation mixed with a light yeast creaminess.
Lemon zest biscuit, pepper, yeast in a huge way, adding its unique mix of almost milky creaminess with acid and sweetness.
Grains and fruit flavors mingle to create a beautiful balance of sweet meets tangy meets sour alll in a sip.
Medium bodied, very light and goes down easy.
A bit pricy here in the States, should have brought a few back from Belgium.

Bottle poured into a tulip
A: Pours a cloudy light orange/yellow hue with a very prominent, very foamy white head.
S: The aroma is immediately spicy up front with clove, cinnamon and cardamom and gives way to fruity esters and banana. A pretty overt aroma from something so light.
T/M: It's highly carbonated and, unlike the plentiful fragrance, it tastes very dull. The lingering flavors are definitely nice: light apricot, orange, peach, some spicy yeast, but it's all very weak. This isn't necessarily bad; if you're going for a light Belgian, well, this is about as light as you'll find. It's definitely the lightest I've ever had.
Everything works well in tandem and even though I'd prefer something a bit heftier, it's still a good beer and I'm sure it would be perfect in the right mood.

Served chilled in a Duvel Tulip
A - pours a hazy straw-yellow with pure white head, two fingers, dissipating to a half finger head with good retention
S - malty, yeasty, some orange
T - bitter hops, sweet malt, with some sour at the end
M - light, high amount of carbonation, not much alcohol
D - good drinkability, quite light, i could have a few of these.

Poured light hazy pour with decent amount of head off the pour. Very sweet and almost more wheat or saison aroma. Very light and smooth with a clean finish. Very little bitterness at all in all a decent pale ale but not like many others. There is not many characteristics that make it compairable to other pale ales, at least in the states.

Poured a white all head in the glass and took a while to settle down. Slightly hazy straw yellow body color. Really not a whole lot of smell but it does have some malt and dried fruit. Taste has a little less dried fruit, some citrus hints, and frankly it's rather sour. And there's not much of a finish. Kind of an imbetween beer, a little like a wit, a little like an Abbey, a little sour.

Witkap Pater Single
Pours a somewhat muddled straw color, big soapy head with excellent retention. Aroma is very Belgian, with the typical yeasty aroma, straw, wheat, damp hay, etc. In the flavor, much of the same. Mild bready maltyness accompanied by a prevailing soft fruit yeast presence. Apricot comes to mind, but not as pronounced. Ghost like hop does just enough to balance. Simple, pleasant, and highlights the great abbey yeast strain of Slaghmuylder.

Really enjoyed this beer--takes a while to appreciate the subtleties that come through.
A-yeasty, cloudy and golden. thin head, no lacing
S-not much hop aroma, but a delicate honey aroma comes through.
M-spot on with the carbonation, medium body
T- first thing that I experience was a slight yeasty spice at the back of my tongue, followed by a rounded citrus (orange) and a note of coriander

The first Belgian Singel I've ever had or seen. This pours out almost like a Wit beer, cloudy and pale yellow. Thin white head not much lacing. The smell is kind of citrusy but also a bit light also. The taste of the beer was kind of one dimentional to me. there was no transitions here. It tastes similar to a Weisse beer but doesn't really have much of an aftertaste. The mouthfeel was a bit too thin I thought. Overall, I'm glad I tried it but it's not something I'll be getting more of.

Pours a murky pale yellow color with a huge 3 inch white head that fades to a small cap. Little spots of lacing here and there on the glass. Smells like this one might be infected, as there is a noticeable dirty socks smell coming off this beer. I am also getting some citrus. Taste is actually not half bad. There are some grain flavors, like water logged biscuits, with a lemony citrus finish. There is a citrus zest essence on the finish but without any bitterness. This beer is pretty flat and watery in the feel. Overall, I think there is something wrong with this one. Not too impressed.

Light golden colored and overly lively with carbonation bubbles exploding form the bottom of the glass racing for it's home, a largh white 3 finger what looks like meringue head. Whispy and long lived.
Yeast, light fruits, flowery esters, lavender, peach, lemon rind, light corriander and bits of earth.
What a tasty refreshing treat we have here. Fruity, yeasty, earthy, light white pepper, star fruit, ugli fruit, lemon zest, citrus, orange rind, good acidity and backbone. Lively carbonation leaves the palate zippy clean. Seems much lighter than 6%

Sampled on April 30, 2011. It has a hazy, golden-yellow pour with lots of head and carbonation. It never really goes away. There are aromas of overripe fruit with a mor lemon-citrus note than anything. There are malts and yeast in the aroma as well but it really smelled like it came out of a dank, dark attic. The body is thin to medium. The taste is very sour with malts and yeast loitering around the citrus zone.

11.2oz, best by April of 2012; Poured into wine glass at cellar temp.
Pours with a short, bright-white (and tightly carbonated) head over a very clear, pale yellow body with tons of carbonation flowing up. Head retains forever as a film.
Fantasticly fruity & Belgian yeasty aromas - full of green apple, white pepper, sneakers, and pig farm.
Very clean across the palate, with flavors of peach fuzz, hay, tap water, and a kiss of apple juice. Mouthfeel is really, really smooth.
Terrific on the drinkability meter - clean, tasty, and smooth.

After trying some of the other Witkap Pater beers, I found this one to be extremely disappointing.
Pours typical belgian with a huge head, really good looking some champagne bubbles blah blah blah
smell was a lot of honey character, a good bit of skunk some yeasty stuff and a bit of sourish strangeness.
Taste was more of that honey dominant than anything, then some dried fruits and a little bit of basic malt character - again, not bad but fairly unexciting.

33cl into a tulip. Pours nearly clear very light pale straw. Dense pure white head while not towering is very slow to recede.
Aroma is mild and pleasant. Lots of doughy white bread yeast atop light citrus and early summer fruits.
Taste is exceedingly mild, mostly diluted citrus with a hop backup. Aftertaste is fleeting. Thin, watery mouthfeel.
Served well chilled on hot summer day this would go down very nice after any labor! This would also pair well with any delicate food as to not complicate your palate. While not a brew to be chosen when intending to savor what you sip, it is perfect for specific moments - in those moments it is an assured A.

Found this at Binny's and definitely felt a new Belgian brew needed to be experienced.
Appearance is a strong shade of yellow with a frothy head and nice lacing on the sides. Lots of carbonation and layers cover this beer. Also the unfiltering characteristic gives it a nice tough too.
Smell is high in citrus and wheat with a nice tinge of orange. This is a very carefully brewed ale and certainly a good amount of attention paid to the aromas.
Taste is much better than expected. Lots of citrus and wheat flavors, possible herbs and what not. Very flavorful the entire way and thick layers as well.
Mouthfeel was nice, thick and refreshing. Definitely worth it.
Drinkability is really great. This is more of a sipper though as opposed to a chugger. A beer of this magnitude deserves to be savored and enjoyed with friends. Definitely worth the price.

11.2 oz., unfiltered and conditioned. After foaming up in the bottle it pours a lightly hazed straw, topped with two fingers of bright white froth that leaves immense sheets of lacing. Smells a touch vinous, yeasty, with a bit of sourness and perhaps some spicy hops. Similar on the palate, with notes of pale malt, a mild bitterness and a distracting cardboard flavor on top of a light and dry, highly-carbonated body. Certainly a passable pale, but I wish it had more character.

A) Champaign color, hazy but clean with puffy white head.
S) Citrus zest, corriander & spice
T) Apple & pear juice, sweet malts & dates. IPA- like bitter hops. The 'bitter' is a bit dominent -- more than I would prefer.
M) Lively, bottle conditioned carbonation. Thin, crisp & refreshing
D) This beer will appeal to those who like their beer a bit spicey & hoppy
