I rode the bus out here from Bamberg, and it was worth the trip. Get off the bus at the Kirche (Church) stop, and then walk back a short block to Hummel. You enter from the street, and the gastzimmer is on the left. If you pass through the room, you can get outside to some seating, but it is just tables on pavement, with an awning. Not very exciting, but nice if the indoor room is too hot or stuffy.
They always have 8 beers available. During my visit the following beers were available: On-tap Pils, Kellerbier, Märzen (on-tap, 1.60 for 0.5 L); Räucherator Doppelbock (2.20 for 0.5 L); Räucherla (1.70 for 0.5 L); Bottle Festbier, Hefeweissbier hell or dunkel (1.90 for 0.4 L).
I saw three rooms inside for customers. In the rear room with the tap, there were 5 tables, in the front room there were 5 or 6 more tables (these two rooms seem to be separated by a sliding partition, so perhaps they can be made into one larger room). There was also another room on the right as you enter. The rooms had reddish clay tile floors and wooden tables and chairs with wood tones throughout. Curtains on the windows, and overall Franconian.
The service was pretty typical but friendly. Not much English spoken, but with the help of my dictionary I got by. It was a quiet afternoon when I was there, and so I got all the attention I needed, and I give the lady high marks for effort since she did not speak English.
The food was pretty good. I had high hopes since this place was recommended to me for its food by a local in Bamberg. But I think the food's popularity might be due as much to the low prices as to the flavor. I had the pork schaschlik (with a tangy, curry tomato sauce) with fries and salad. This food was good but not overly exciting. There was plenty to choose from on the menu, however, and perhaps I just got unlucky.
If you want to get out of Bamberg, this is a good place to go. Take the bus and visit Hummel and Wagner (nearby), and stop in Memmelsdorf for the breweries there on the way back.
