2011 vintage. Poured from a 12.7 oz cork n cage bottle into a Half Acre snifter.

A- pours black with nearly no head. Slight dark tan ring forms on the edge of the glass.

S- huge bourbon notes punch you in the face, vanilla, sweet honey, and chocolate.

T- dark chocolate, huge bourbon and alcohol which slightly overwhelms the beer, some roast, vanilla.

M- medium body and low carbonation. Thinner than expected and still hot for a year or more on it.

O- love the nose on this beer but wish it wasn't as hot as it is. First time having this beer so maybe you need to age this one for at least a couple years?

Acquired via trade with RConn006. Served in a Lost Abbey Teku. After the cork reluctantly came free from the bottle, the poured out extremely dark, viscous, and nearly flat. On the nose, I'm getting coffee, vanilla, raisins, tobacco, and dates.

Full body and nice, creamy feel. The flavor is quite a surprise. I was expecting a big, thick, roasty, bourbon bomb. Instead, I get bittersweet dark fruit and oaky vanilla. No excessive roastiness or bourbon at all. There are also flavors of chocolate and ruby port. The finish betrays the 12% ABV, but it is warming and pleasant instead of boozy.

Overall, an outstanding beer, but not one I would trade for again. It's far too expensive and has too little roastiness and too much fruit on the palate to please me. The flavor really took me by surprise. It drinks as much like a quad as it does like a stout. Still, very glad I had an opportunity to try it.

2011 Vintage
Poured from 12.7oz into Yeti Snifter

Appears jet black with very little carbonation present. A few bubbles attempt to form a head, but to no avail.

Smells like boozy, oaky vanilla.

Tastes like it smells. The alcohol is overbearing at the back end.

It feels very thin in the mouth which isn't surprising with the lake of carbonation.

Overall, its a pretty good Bourbon Aged Imperial Stout. I feel its missing something with the lack of carbonation and the alcohol could be hidden a little better.

I will definitely give this another chance if I can find a different vintage.

Cork was required corkscrew..

Very little burnt brown head rises. Brew is not nearly as thick as I had imagined I would be. Lacing is non-existent. Clarity seems nice.

Milky, vanilla, roasty, chocolatey, slightly dough-y, spicy, hot, and more heat.

Tons of oak! Extreme bourbon and oak flavors. Deep, thin, high carbonation, high heat, vanilla, not overly smooth and not creamy. Backend bourbon burn is nice and welcomed.

OV seems like port may have tried to run before they could walk.. It's recommended, but very rough and missing some ties to many loose ends. Goes down easy, but not quite as easy knowing it was $17

Reviewed from notes. Poured from 12.7 oz. bottle into Peg's snifter glass.

A: So dark brown it's black. Minimal to no visible carbonation, and forms a small dark brown head.

S: Big, dark boozy and woody, sweet coffee and cacao malts, a little dark fruits and raisins.

T: Follows the nose. Coffee, oaky and woody, big booze, vanilla, cinnamon, dark fruity and spicy.

M: Thick sticky body, low carbonation sensation. Strong alcohol presence, but it blends well into the overall impression the beer gives.

O: This is a big, big beer. But very very good. Highly recommended.

Older Viscosity opens to a boozy, malty, yeasty aroma that is in a very large part bourbon, vanilla, charcoal, and char from the barrel aging, but below that is an incredibly thick, mealy Imperial Stout bearing massive coffee and tobacco notes, as well as heavy portions of dark fruit esters (black cherry, fig, prune, date), touches of heavy cream and caramel, and thick, dark, black breads – the kind that are a meal in themselves. It’s immediately obvious that, even without the barrel aging, this would have been a good Imperial Stout: the aromas are intense, varied, fully developed. The barrel aging simply adds a wonderful, catalytic layer of bourbon, vanilla, and charcoal that plays well off of the stout notes, emphasizing them and mingling with them in a wonderful generative swirl. But not overpowering them: think heavily-creamed world-class coffee with a dollop of bourbon and Irish Cream, sipped in a smoke-laden diner, finished off with a homemade caramel candy, and you’re getting close. In a word: intoxicating. One of the better smelling Imperial Stouts on the market.

On the tongue, the beer opens with a shot of jet-black coffee, ash, and tobacco, joined quickly by a boozy layer of bourbon, and tempered by molasses and brown sugar, caramel and vanilla. Excellent fig, prune, date, and black cherry fruit esters add to the complexity. Tongue-tingling swirls of black pepper add further texture. Small touches of lemon and pine from the hops. Late in the mouthful, as the sugars die off, the ashy underbelly rears up and fills the mouth with smoke and tobacco. The aftertaste is more ash and smoke, with lingering sugars, and a straight-shot-of-bourbon-strength alcoholic vapor. Mouthfeel is a surprisingly light medium (given the strength of the flavors), but oily in consistency, and carbonation is very light.

Overall, this is excellent Imperial Stout, and a must-try for fans of the style. The care and passion that has gone into this beer is palpable, and the skill required to so excellently barrel-age an already fine stout is commendable. As a whole the flavors are well developed, finely nuanced, nicely balanced between ash and sugar, bourbon and bread, vanilla and caramel, with only a slightly heavy alcoholic vapor and a strangely average mouthfeel marring the experience. Well worth the price.

Review from notes. 2008 vintage.

A: Pours black with a very thin layer of bubbles that dissipates very quickly. Minimal lacing as well.

S: Lots of bourbon in the aroma, some vanilla, brown sugar, and molasses, with faint dark fruit aromas.

T: Upfront there was some caramel and brown sugar mixed with some vanilla in the middle along with some roasted malt. The bourbon held up nicely in this older bottle.

M: Full bodied with moderate carbonation, abv hidden nicely.

O: Quite tasty, liked it more than Old Viscosity for sure. Pleased to see this bottle held nicely over 4-5 years.

Not sure of the vintage, no date anywhere in the bottle but I would dare to say it is from an old vintage since it cost me $10 at Toronado SF and the description in the label is shorter than the one pictured here.

A: Dark, dark brown, almost black. It is heavy and no head at all. Only saw a little of carbonation when I poured it, other than that, it is completely still. What is amazing is the legs this thing has. It may not seem very viscose, but once you see the film it leaves and grabs on to the sides of the glass you know why it's not your dad's 30 weight.

S: Nose is full of meat for me. Lots of wood, toasted caramel, vanilla, molasses, raisins, bourbon, and a touch of chocolate. It's a very interesting smell. Something I would expect more from a barley wine than a stout. It kind of reminds me of Black Albert but more intense and with bourbon. Not my style but have to accept that it is great smelling beer.

T: This is where the money is. This beer is one of the few that tastes almost like it smells but the experience in the palate is just incredible. So much going on. You get all the fruity sweetness at front (dates, prunes, raisins), then the oaky vanilla notes in the middle, and it ends with the roasty, chocolately, bitterness, topped off by the warm boozy feeling and slight taste of bourbon. Wow. This must definitely be at least a couple of years old, if not older since the alcohol is almost unpercibable. I had tried it before and it was a bit too boozy for me but this is just phenomenal. Once it warms up you get some milky flavors as well.

M: Silky, smooth, with a melted butter sensation that covers your palate. Some stickiness and a little tingling, peppery sensation in the tongue. Can't get better than this.

O: At first I was a little doubtful but I feel this beer tasted much, much better at room temp than cold. It is almost like drinking wine or port. I enjoyed it more and it got more interesting as it warmed up. I prefer a little sweeter stouts but I must say this is a great, great beer. This is one that should be cellared for some years. I can't believe how much it changed with some time. A must try for BA stout lovers, but I must say it still had that Barley Wine taste in it.

Poured from a 375ml bottle into a Hunahpu's snifter. I think this is a 2010 bottle, but the date rubbed off.

Appearance: Pours a thick black color with just a small layer of tan head that goes away really quickly and leaves a thin ring.

Smell: This beer smells wonderful. Lots of smooth roasted malt with chocolate notes and some dark fruit. There are also some oak, vanilla, and bourbon notes. Not much alcohol to be found.

Taste: This is a very sweet beer, but it's not cloying at all. There is a nice balance between the sweet malt, the smooth bourbon, and the roasted malt bitterness. I'm getting the bourbon with vanilla and oak. Dark chocolate with a slightly burnt note from the malt. The finish has a slight burn, but the age has muted it.

Mouthfeel: The body is on the thick side with tingly carbonation and a very dry finish. I thought this would be under carbonated from looking at it, but it really isn't.

Overall: I really enjoyed this one. There was a bunch of complimentary flavors that combined and made it quite interesting. The oak and vanilla bourbon notes were very smooth. I would have more given the chance.

Picked up a 12.7 oz bottle from the Bottle Barn in Santa Rosa in late March for 14.49. Finally get to savor the vaunted Older Viscosity!

Beer poured black as night with a little bin of a tan head that dissipated quickly.

Nose is very nice, vanilla, coffee, roasted malts, and bourbon dominate.

Taste is comparable to the nose, notes of vanilla, dark fruits, slight coffee, some cocoa, roasted malts. Bourbon heat and flavor were very strong with the first sip and slip nicely into the background.

Mouthfeel is lighter than anticipated, somewhat smooth, definitely sip-able.

Overall this is a very delicious beer as Old Viscosity is solid on its own. Aging stouts in bourbon barrels for 3-6 months seems to be the optimal amount of time. Port hits it quite right with this one!

Normally don't do multiple reviews, even in different formats.... but thought I would add this, as it was a two year old version.

Picked up at the bottle shop at Blue Dog following the wealth of riches.

The beer pours a blackish brown color with good head retention and light lacing. This is another BA RIS that had the look of a beer that has spent considerable time in bourbon barrles. The nose is quite attractive, as I pick up bourbon, dark chocolate, light vanilla and a hint of coffee. I'll admit I'm a complete sucker for these bourbon barrel aged imperial stouts... especially when they're done as well as this one is. In any event, the flavor profile replicates the nose, with the bourbon and chocolate dominating (there's some noticeable milk dud as well on the palate, that I didn't pick up on the nose). The mouthfeel is this beer's best attribute. Mouthfeel is full, soft, plush and endless. It's almost silky on the palate, and the finish is lingering and nearly endless. Alcohol is noticeable, but frankly, it's exactly what I would expect in a beer like this.

Just delicious. Have had this beer on several occasions now, and it's always a treat. Furthermore, as this bottle well shows, the beer is quite ageable as well. Altogether excellent. I believe I just may need to have a second glass.

Straight up pour and only a thin brown head that vanishes leaving no lace. Black color, no highlights. Very light carbonation and heavy bodied. Nose is alcohol, almost like cognac and flavor is sweet oak and alcohol. Some alcohol burn at finish. Expensive at $17.99 for a caged & corked 375ml bottle from Julio's Liquors Westborough, Ma.

Pours out a really dark black liquid with very little brown creamy suds depending on pour.
Smell is malty char and caramel and molasses.
Taste is warm and boozy. It has lots of charred malts with a caramel and raisin flavor. The 12% is hid very well here.
Mouthfeel is a bit sticky and has hint of booze after the malts and sugars get out of the palate.
Overall this is one bad-a$$ beer. Probably one of the best stouts out there.

Vintage 2011. A bit thinner than I expected from Older Viscosity. The head that forms is light tan in color with sort of more effervescent bubbles. It sounds like I just poured a can of pop in to the class, but the bubbles are nowhere near that big as soda and the head sticks around for a pretty lengthy time thanks to some higher carbonation. When I look closer I can see the tiny bubbles rising up the sides of the glass replenishing the head and there's a small speckling of sediment on the bottom. Color is a very thick opaque black. Also leaves a bit of sticky lace around the glass as I drink.

So the smell of this right away is very bourbon barrel. Lots of bourbon (but not harsh at all) and vanilla notes, with toffee and caramel, maybe some dark fruit like raisins, all that with notes of chocolate, deep roasted malt, and some hints of coffee. Probably my second favorite smelling barrel aged beer behind Firestone Walker Parabola (2011). Frankly, the aroma makes me crave some nice bourbon even though I'm not a huge bourbon drinker.

Taste is fantastic, I must say. Lots of notes from the barrel aging - bourbon, bourbon heat, vanilla, caramel, toffee, raisins/figs, spiciness and oakiness. To be honest, these flavors are dominating the taste for me, but I don't mind as they aren't really overpowering and strong bourbon flavors. Very nicely done, they meld very well even if they are dominating the taste. With that said, I can still pick out the coffee, chocolate, and roasted malt flavors, but they take a back seat to the Bourbon. I also get some burnt brown sugar and a slight hint of dark cherry in the taste This really is a treat to drink, in my opinion. This is like the best of both worlds with all the Bourbon aromas and flavors combined with a nice Imperial Stout. I just really love the taste of this.

Thinner than I expected, that's for sure. But that actually makes this pretty nice and drinkable. Viscous consistency (how fitting), but again not as heavy as I expected. For as much carbonation showed in maintaining the head, this only has a feel of light-moderate carbonation in the mouthfeel - about what it should be for an Imperial Stout. Nicely done. Also, I'd say this has a moderate rich body and the finish is pretty long, but oh so nice with lingering Bourbon and stout flavors. Yum.

I actually already had 1 2010 Vintage and I picked up 3 of these 2011 Vintages when I saw them with the intent of aging 1 or 2 because I had heard good things about Older Viscosity. Boy am I glad I did. I might even pick up more if I still can. This beer is wonderful fresh and I think it will age wonderfully as well. Some people, especially those who don't like Bourbon, might be turned off by this when it's relatively fresh. If you do like Bourbon and you like Stouts, this one is definitely worth a try. If you don't like Bourbon but you can still appreciate Barrel aging, this one might be worth your time also. Very nice slow sipper.

2010 375ml bottle into Stone tasting glass...

A: jet black with a chocolate bubble ring from a vigorous pour....no pop from the cork...beer is as flat as tap-water

S: sweet bourbon, molasses, vanilla

T: same as the nose, but the lack of carbonation works against it.

M: viscous & flat...

D: I eventually force carbonated it, which greatly improved it's drinkability...but the bottom line is...
I should not have to carbonate beer I paid money for. Had a 2011 bottle a few months ago and it too was flat. Nice job TA!!!

Corked bottle thanks to Auror for bringing this over to our mini 3 person tasting. 4 ounce serving poured into Founders snifter.

A- Pours a almost completely opaque dark black with almost no carbonation or head.

S- Very strong sweet bourbon smell with some dark chocolate, molasses, oak, and a little bit of malts. Definitely above average aroma strength.

T- Sweet bourbon that blends well with dark chocolate, some light malts, and a tiny bit of oak. The sweet bourbon is definitely very well balanced in the beer without adding too much of a strong bourbon presence.

M- Pretty thick but not as thick/heavy as I was expecting (considering the name), little carbonation, very easy to drink for 12% abv.

O- This was a very nice bourbon barrel aged stout. The bourbon definitely added a nice quality to this beer. It wasn't too strong, but added a nice sweetness and was still very easy to drink. I highly recommend this beer if you like bourbon barrel aged stouts.

So thick and so smooth. Lots of vanilla and wood on this one. Very mildly boozy, but it all comes together and works. Love the complexities; love the burn. It just works so beautifully. Ends up being one of those beers I just want to sip and not worry about taking notes on.

A delayed review from a beer my good friend Julian was kind enough to share with me. Steep at around $15 for a 500mL.

A - Dark and super viscous. Looks like a bit more aggressive Old Viscosity. Head was small and left no real lacing.

S - Big roasted notes and a punch of bourbon! The barrels really shine here. Cocoa, coffee and vanilla also are in attendance.

T - In a few words: a bigger badder Old Viscosity. All the flavors are strengthened and the ABV burn is strong on the back end. That said, it does not really take away from the taste but rather accents it quite well via warming the flavors. Superb.

M - Big, smooth and carrying a nice amount of carbonation for the style.

O - A fantastic beer that is a bit too stout for my liking, hurting the drinkability. I would love to revisit this for a cool winter evening but the price will keep me at a distance.

Unknown vintage from Rutager for the CANBIF
Bottle into snifter.
Typical impossible cork from Lost Abbey but was greeted with a nice POP at the end.

A- Easy... thick, viscous, dark and oily black pour. Half finger light tan head and minimal lacing. Alcohol clings to the glass forever though.

S- Full on bourbon heaven! Smooth, sweet bourbon, brown sugar, vanilla, oak, dark chocolate, dark roasted coffee and some black strap molasses. The bourbon is very forward and I really like that. Alcohol is very subdued.

T- Bourbon right up front followed by some alcohol warmth. Vanilla, brown sugar, molasses, licorice and some oak in the finish. The coffee and chocolate are pretty minimal following the big bourbon character in this. You can really tell how much of a difference a new and old bourbon can translate into a beer.

M- Full bodied, low carbonation, slight alcohol warmth.

O- I think bourbon beers are tops with me. The amount of flavour and character they instil in a beer is my absolute favourite.

2011 Vintage bottle served on 7/27/12 in a Tired Hands wineglass.

Pour: Nearly pitch black with no head, except a deep khaki rim along the edge of the glass. Some sediment floating around.

Smell: Bourbon up front with some vanilla and chocolate. Not as strong as Angel's Share or Deliverance.

Taste: Bourdon vanilla up front with some creamy coffee mixed in. Some milk chocolate in there too. Molasses is really prominent in the sweetness.

Mouthfeel: Pretty light and splashy. Chocolate lingers on the palate. An unfavorable alcohol into the nose at mid sip.

Overall: Pretty good bourbon barrel stout. I would say its very similar to Central Waters Peruvian Morning, but with a little more booze. I really liked it, but if I'm going to pay that much money for a Port Brewing/Lost Abbey offering, I'd rather get Angel's Share or Deliverance.

375mL into a snifter. Pours a pitch black w/ a thin crackly tan head that dissipates instantly to nothing. Looks appropriately like motor oil.

Aroma is deep, dark chocolate, molasses, dark fruit, earthy nuts, bourbon. Smells extremely rich and dense.

Taste follows nose. Molasses, vanilla, bitter chocolate, rich roasted malt, unapologetic bourbon, dark fruit, cocunut, booze. Complex and decadent.

Mouthfeel is thick and chewy with a semi-dry finish. Alcohol warms the mouth and throat.

Overall this is every bit as good as I expected. A real sipper of an imperial stout.

Appearance: port brewing ain't lyin. This is the deepest black I've yet to see. Held this up to the sun and not even a scintilla can get through this monster. The head is understandably slight but a mocha ring hangs around.
Smell: Creamy, buttery, chocolate malt. The barrel aging is prominent, a rich oak augmenting the chocolate. Rich to be sure but the high alcohol is tamed.
Taste: Everything the nose promises plus a nice, slightly bitter finish to offset the rich sweetness. Awesome.
Overall: one of the best beers I've ever had.

Poured from a 375mL bottle into St. Bernardus goblet. Vintage 2011, with an illegible mess beneath.

A: Virtually no head on this viscious (portmanteau of viscous/vicious) monster of an imperial stout. Black, opaque, and imposing. I can see engine.

S: Very bourbony. Too much bourbon? Loads of vanilla, touch of banana, and soft sweetness. Huge, imposing, but perhaps oversweet.

T/M: In a word, luxurious. Silky smooth, dense, and rewarding. The bourbon is obvious, but the 100% barrel ageing destroys any carbonation. Deep molasses and lingering vanilla complement the flat mouthfeel. Slightly sharp (alcohol?) and just a touch of bitter-dark beans to give it some balance.

O: Great beer, but oversmooth mayhap. Too much bourbon, pretty excellent stout, and I think that I prefer the Old Viscosity. This is too sweet and too flat, with zero hop presence. Still, recommended.

A - Pours very similar to old viscosity. Very deep, opaque brown. Tan one finger head that leaves a ring around the glass shortly after.

S - Bourbon for miles! You had me at the smell :-) Load of bourbon, vanilla and brown sugar. Nice roasted malt background.

T - Lots of bourbon. I love bourbon barrel aged, so I'm biased. There's a lot of bourbon and malt, some vanilla/brown sugar sweetness but not overpowering.

M - Perfect for this segment. Not thick and chewy, just like its cousin but gets around the palette well.

O - You had me at bourbon barrel aged! Leaps & bounds better than older viscosity.

Poured from bottle into snifters.

Appearance: Pours the same as Old Viscosity just a bit more viscous. A dark opaque body with a small cream head and barely any retention.

Smell: A strong, roasty aroma with the wonderful bourbon notes, vanilla, and dark brown sugar. Of course the chocolate and coffee come through in flying colors.

Taste: Begins with a roasted coffee and chocolate taste. Then a subtle smooth caramel and dark sugar sweetness. Ends with a very smooth vanilla and smoked wood taste and a great alcohol warmth.

Mouthfeel: Once again, oh so smooth. Medium-full body with good carbonation.

Drinkability: An excellent bourbon barrel beer, although I don’t think it was worth the $15 for a 500mL.
