From a 750 ml brown magnum, caged and corked. Pours out a cloudy yet very bright deep straw/light apricot hue, massive tight rocky white head with excellent retention.
Wow, incredibly clean and straight-forward aroma for this style--crisp clean lemon zest, mandarin and tangerine, even some dry lime, dry grains and some dry spicy and grassy hops. Dry, clean yeast becomes apparent as it warms.
The flavour is incredibly clean for the style as well, another wow. I'm not giving it a full 5 in this category because it's still lacking at least a hint of funk or sharpness (making it seem more like a Tripel or Strong Pale), but the clean balance otherwise must be commended. Clean grainy wheat up front blended with lemon zest, light citrus fruits throughout the middle along with mild spice, light leafy and dry spicy hops on the finish. Nice dry aftertaste of hops, yeast and citrus lingers briefly.
Medium-light mouthfeel, slippery slick texture, with moderate carbonation.
This stuff is awesome. Saison or personal interpretation of a Saison this is a total winner for me, worth every penny (as expensive as it is), and sadly for my wallet I'm going back for more to stock up. This is the bottle I'm bring to every dinner party I attend while it's still available, and it's now my go-to for New Years as well. An all around enjoyable beer that needs to be experienced, and very accessible for those not familiar with the style.

The color is a yellow lemon that is slight hazy.
The aroma has lemon, orange, and some biscuit malt. There's a sweet banana candy.
The flavor follows the aroma. Orange, lemon, banana candy. There's a big spiciness of clove and pepper. There's almost an earthy herbal flavor too.
Good bitter hop finish. I've never had sorachi hops before, but this is quite a delicious hops. This really has more complexity than DuPont. It's extremely complex and I think DuPont is more classic and easier to drink, but this surely is a more fun beer.

Appearance. Pours a hazy light gold with almost 3 fingers of foamy white head. Great lacing.
Smell. Spicy saison yeast, banana and citrus, clove and a bit of light grainy malt.
Taste. Spicy and peppery saison yeast, orange and lemon rind and light grains, some lightly bitter grassy/earthy hops and just a touch of clove and banana.
Mouthfeel. On the low side of medium bodied with medium-strong fine carbonation.
Overall. Classic style saison with plenty of flavour. I enjoyed it.

Brooklyn is a new comer to TN. Had this previously on tap at Young Ave. Deli. Reviewing 25 oz. bottle purchased at Midtown Spirits in Nashville.
Poured into my tulip glass with a 2 finger head that dissipates fairly quickly, no significant lacing. This Ace has a hazy golden color with a slight pink hue. Smells like Belgian yeast and lemon. Earthy, grassy taste; I can taste the yeast it has a sour tang to it, peach aftertaste. Strong carbonation and medium mouthfeel. Mellows down as it warms and settles. Good brew, I think I preferred the Ace on-tap. From the bottle B+. On-tap A-

A very solid beer! Just a hint of lemon in the smell. Beautiful color. Nice and golden. Not served too cold which I think is important. Very good taste and aftertaste. Left my mouth tasting just a little dry. This beer just kept getting better with every drink. I would order this ale again anytime!
