”Do you know what dwells in a glass?” asks Ole, in Hans Christian Andersen's The Watchman of the Tower. Better known for stories such as The Little Mermaid, Andersen wrote this short, cautionary tale for a somewhat older audience. Our quadrupel ale, also meant for the mature connoisseur, is a deep and mysterious libation, dark auburn and full-bodied, its sweetness deceptive. Looks great poured into a Maudite tulip. Deep brown-red with a thick tan head. The carbonation shows more activity than I expected out of a quad. The head begins to slowly settle, but there is a decent 1/4" that stays put. Also quite a surprise for a beer of this gravity. I stick my nose in the glass and I smell estery alcohol, rich tart fruit, candi sugar, and oxidized cream sherry that adds a dry nuttiness.
Now for a taste. This tastes similar to what Ommegang Three Philosophers would taste like if there was no lambic added and it had a bit more body. Thick and creamy on the tongue, and the alcohol heat comes out a bit to thin and dry it out. Caramelized apples, burnt walnuts, raisins, and sherry. Spice in the alcohol, but not too much heat. Looks like the fermentation temperature was kept well under control with this one, which is vital for a smooth Belgian that you don't want to have to soak in a sugary cover-up flavor. I'd say that the hops, alcohol, and malt is very well balanced to make this a big, complex, interesting quad. This would be great for after a big dinner in the winter. I would even pair it with apple or pumpkin pie. The residual sweetness lingers as it warms up keeping it very drinkable.

From the bottle
Appearance: Light, cloudy amber with a big tan head.
Nose: Sweet caramel, sugary fruits: peaches, bananas, strawberries. There's plenty of clove and a hint of pepper. It's classic Quad with the sweetness dialed up a bit.
Taste: Caramel forward malts up front, intense fruitiness in the middle with tons of banana. The finish is a bit flat, the banana lingers and a bit of clove comes through. This is far less complex than what I'd expect from a Quad.
Mouthfeel: Light and easy-drinking. Surprising for the style.
Overall: Not at all a typical Quad. It's lighter, simpler, and far easier to drink. It doesn't have the same complex contemplative nature that define the classic Belgian Quads, but if you think of it as a a fresh and original take on the classic style, it's a very nice brew.

Poured from the bottle into a wine goblet
Appearance: Looks awesome. Hazy amber brown. Thick foamy cream colored head. A little more than a finger's worth with great retention. Lots of carbonation. Tons of lacing. I wish all beers looked like this
Smell: Dried dark fruits. Sweet raisins. Sugary caramel. Maybe some figs. Yeast and booze (and lots of it)
Taste: Follows the nose for the most part. Lots of Belgian yeast character. Slightly tart plums. Caramel malts. As it warms it gets notes of apples. Warming booziness
Mouthfeel: Full-bodied and rich. Lots of character. Crisp carbonation
Overall: A nice quad for sure. Not an all the time beer or an all the time style but worth trying
