This beer has been aging in my cellar since February of 2008 and is batch #1. poured into my Ithaca Excelsior tulip glass.
A- Upon initial pour there is a nice frothy head made up of millions of tiny little bubbles. Carbonation is evident due to the champagne like bubbles racing towards the surface. Color is golden straw with perfect clarity; very nice looking beer.
S- The smells seemed to have melded over time and is difficult for me to pick them apart, but I do recognize a saison like aroma that seems very familiar. Earthy or slight mustiness with just a touch of lemon rind is also present with what I believe is brettanomyces buried behind it all.
T- Flavors have melded nicely and also seem more prominent now rather than when I tried this beer fresh. No alcohol taste is present and there is a very nice dry finish , almost Orval like but lighter.
M- Light to medium body with a nice amount of carbonation, no residual sweetness and a dry finish, very refreshing.
D- This one is very easy to drink and has held up to aging quite well. For 8% alc I really can't taste it and will finish bottle by myself...!

This is Batch #3, April 2008.
Pours a clear fiery orange that reminds me of the explosion portrayed on the label. The explosion was also present in the form of a cork that nearly shot itself out immediately after I uncaged it. Fluffy white foam is well-retained and there's a large amount of visible carbonation. Moderate funk in the nose with hay and a whiff of cheese/musty. Light tart citrus is present in the aroma as well. Barnyard appears as the beer continues to warm up. Flavor is a blend of citrus and light toasted malts, a dash of herbal spicy, and a crisp acidity that's likely coming from the Brett. Sparkling, brisk carbonation keeps the palette on alert and a medium-light body really helps make this a refreshing and drinkable beer. There's some warming from the alcohol but it doesn't hinder the session.
When I found this beer in my cellar last week I was surprised and concerned, wondering how I'd manage to lose track of it and hoping it had held up well. As I continue to pour more into my glass, I'm delighted at how delicious this is. Wish I had another!

750 ml bottle into tulip glass, bottled in March 2008. Pours lightly hazy golden amber color with a 3 finger foamy white head with good retention, that reduces to a small cap that lingers. Spotty foamy lacing clings to the glass. Aromas of lightly tart apple, pear, grape, lemon, pepper, clove, earth, hay, bread, herbal, and earthy yeast spiciness. Very nice aromas with good complexity and balance. Taste of pear, apple, lemon, pepper, clove, earth, funk, bread, herbal, hay, grass, leather, and yeast spiciness. Lingering notes of light fruits, citrus, pepper, clove, earth, bread, funk, hay, grass, and yeast spiciness on the finish for a good bit. Damn nice complexity and balance of flavors; with a nice malt and peppery flavor balance with good brett character; with zero cloying flavors after the finish. Medium-high carbonation and medium bodied; with a very crisp, prickly, and lightly slick mouthfeel that is nice. Alcohol is very well hidden with nearly zero warming noticed after the finish. Overall this is an excellent brett saison! Nice amount of flavor complexity and balance; and very smooth to sip on for an 8% brew. Really enjoyed this one.
