Notes:
We brew this beer with four malts, four sugars, four hop varieties and we ferment it four times, using four different yeast strains. The complexity of the brewing process is matched by the complexity of this unique beer. Flavors of raisin, candied fruit and plum express themselves throughout.

Pours a hazy brown with hints of orange in the light and yeast sediment floating throughout despite the most careful of pours. Only a faint white head develops leaving nearly no lacing. That said, lacing appears more as the beer warms and body is disturbed.

Smells of dark fruit, something sweet, fermentation, yeast, and alcohol. Expecting sweet sugar, and deep fruits in the flavor.

Sweet fruit, alcohol bite, slightly peppery, and a pleasant hop finish. There is a lot going on here, but I am having trouble identifying each specific flavor. The pepper like flavors becomes more pronounced at the finish as the beer warms, with the sweet sugar becoming more apparent as well.

Four offers a fair amount of carbonation, medium body, and a generous candy like quality to the overall flavor character.

Four is a crowd pleaser, diverse flavor, great to sip on, and announces its presence by bottle's end.

Bottle from 2007

A: Pours a murky mahogany in color with light amounts of visible carbonation and some orange + brown highlights. The beer has a half finger tall soapy beige head that quickly reduces to an extremely thin ring at the edges of the glass. Minimal amounts of lacing are observed.

S: Moderate to strong aromas of dark fruits, spices, and Belgian yeast. Lighter aromas of toffee malt sweetness.

T: Upfront there is a light to moderate flavor of toffee malt sweetness which lasts throughout the taste of the beer. That is combined with moderate to strong flavors of dark fruits (fig) and spices (cinnamon and clove). There is a light to moderate presence of Belgian yeast and just a hint of bitterness in the finish that fades quickly.

M: Slightly heavier than medium bodied with light amounts of carbonation. Light amounts of dryness and alcohol warming in the finish.

O: This beer aged really well, it picked up some definite hints as if it had been barrel aged over the years and I think the sweetness has increased and it has mellowed overall. Very enjoyable, can't believe I let this one cellar so long before reviewing it.
