A&S - Pours a hazy light brown with 4 fingers of off white head. Be careful while pouring! Pine hops cover a 3 foot radius upon popping the cork. Smells nice and sweet, tons of pine/citrus combo that those Simcoe's produce, some grapefruit, a maple syrupish malt aroma, again smells super sweet.
T&M - Hits flat, sticky and sweet, tastes very creamy with tons of sweet malt creating an almost vanilla flavor. As the carbonation grows, so does the hop bitterness, as well as some unfiltered characteristics. Tastes quite odd at first with a dominant hop flavor, however its very attractive, not too much alcohol burn, kinda woodsy flavor that works well with smooth sipping qualities this beer contains.
O - It seems to me I will be craving this beer once in a while, I will indeed make a note of this, its definitely one to try. Love the unfiltered characteristics. Stay thirsty my friends!

Poured from a 1 pt. 9.4 fl oz. bottle into a Portsmouth brewery tulip glass.
The color is a deep unfiltered orange with three fingers or do of a thick pillowy head. Some webby lacing being left on the glass.
The smell is hoppy as expected with some nice earthy aroma in the nose. There is a good tangerine aroma hangs for a bit before falling off.
The taste is big hops as promised letting the bitterness speak loudly. There is a good malt back bone that is holding up this well built structure. There is a sweetness that gives a great zing to the flavor leading into a bitterness that has large biceps.
The feel of this beer is big but with a smoothness that lets things slide down. The bitterness builds up on the pallet but does not feel overbearing.

Unfiltered Simcoe in a tulip.
Man, does this bottle have enough carbonation, or what! Loud pop upon uncorking. Poured 70% foam. A hand's worth of head. It's silkscreening the glass, although I'm waiting minutes for a mere inch to fall. The foam is retaining so well, it's almost petrified. After I added more to the glass, it looked like smoked meringue with peaks. Oh, and the color of what beer I have so far is a very cloudy brown.
Pine-y and resinous hop-oily in aroma. Dank with some backdrop orange and grapefruit citrus. Malts are hiding a bit; mostly sweet with a hint of toast. Yeasty, too. Thank you, bottle-conditioning.
Spicy and dank. Punchier with alcohol. Perfumey hops taste as such with a variety of pine, floral, and citrus notes. Spiciness is inexplicable. Lots of oils yields a resinous beer. Malty with a medium roast and some mild sweetness. Tobacco, onion, pot leaf, grapefruit, and candle wax. Big bitterness level, perhaps lightly hampered by a tempering yeast nuttiness. Sweeter as it warms. Not as tongue-twisting as the original. The easiness is pleasing.
The body is magnificent. Rich and creamy with that suspended yeast. A little oily on the tongue, aided by the alcohol, which is right there. Very focused.
This beer is always awesome, in whatever format. Happy to have finally enjoyed this unfiltered version. 4.25
