Poured from a 1 pt. 9.4 fl oz. bottle into a Portsmouth brewery tulip glass.
The color is a deep unfiltered orange with three fingers or do of a thick pillowy head. Some webby lacing being left on the glass.
The smell is hoppy as expected with some nice earthy aroma in the nose. There is a good tangerine aroma hangs for a bit before falling off.
The taste is big hops as promised letting the bitterness speak loudly. There is a good malt back bone that is holding up this well built structure. There is a sweetness that gives a great zing to the flavor leading into a bitterness that has large biceps.
The feel of this beer is big but with a smoothness that lets things slide down. The bitterness builds up on the pallet but does not feel overbearing.

Unfiltered Simcoe in a tulip.
Man, does this bottle have enough carbonation, or what! Loud pop upon uncorking. Poured 70% foam. A hand's worth of head. It's silkscreening the glass, although I'm waiting minutes for a mere inch to fall. The foam is retaining so well, it's almost petrified. After I added more to the glass, it looked like smoked meringue with peaks. Oh, and the color of what beer I have so far is a very cloudy brown.
Pine-y and resinous hop-oily in aroma. Dank with some backdrop orange and grapefruit citrus. Malts are hiding a bit; mostly sweet with a hint of toast. Yeasty, too. Thank you, bottle-conditioning.
Spicy and dank. Punchier with alcohol. Perfumey hops taste as such with a variety of pine, floral, and citrus notes. Spiciness is inexplicable. Lots of oils yields a resinous beer. Malty with a medium roast and some mild sweetness. Tobacco, onion, pot leaf, grapefruit, and candle wax. Big bitterness level, perhaps lightly hampered by a tempering yeast nuttiness. Sweeter as it warms. Not as tongue-twisting as the original. The easiness is pleasing.
The body is magnificent. Rich and creamy with that suspended yeast. A little oily on the tongue, aided by the alcohol, which is right there. Very focused.
This beer is always awesome, in whatever format. Happy to have finally enjoyed this unfiltered version. 4.25

Super cloudy given that it's unfiltered, orange/brown in color. A really nice fluffy head leaves behind some awesome lacing. Retention is excellent. Aroma is dominated by tropical fruit especially pineapple, thanks to the Simcoe hops. Other aromatics include pine, grass, and ripe fruit.
The flavor profile includes plenty of malty sweetness, although it's quickly balanced out by hop bitterness. The apparent bitterness is not very high, especially for a DIPA. Plenty of bright tropical citrus flavor. One negative: the flavor kind of dies on the finish. This has the trademark oily mouthfeel of an IPA, and when paired with a soft carbonation and barely detectable alcohol, leads to a big beer that still has good drinkability. This is a very straightforward DIPA that, while lacking complexity, is still damn delicious.

Poured into Sam Adams "perfect pint glass" or whatever its called.
A-Pours a cloudy copper with a nice 1 inch head thats taking its time to fall.
S-Smells very piney up front with sort of a maple honey sweetness to it.
T-This sent tingles down my tongue the instant it hit it. Has sort of a dull sweetness in the middle while blasting into a nice hoppy kick on the finish. The sweetness I would describe as a light, or almost watery, citrus flavor.
MF- Medium body. The light citrus flavor helps keep this beer from being to sweet or thick.
O-This is a damn good beer. A bit pricey but damn good. I would recommend this to anyone who loves there hops. If your not a hop fan I wouldnt bother with this.

Definitely had this a while ago but grabbed another bottle to try it again for reviewing. The cork pops like Champagne. The beer pours out with a deep hazy copper color with a fluffy white head on top. The smell of the beer is decent, not much different than the regular version of this. There are some sweet malts on the nose as well as a big hop aroma as well. The taste of the beer is sweeter than most IPA's, it's got a good bitterness in the finish. Caramel and bitter citrus notes balance nicely. The mouthfeel of the beer was drinkable, it's got some good body to it. It's a slick oily beer. Overall it's not bad, I seemed to enjoy this beer more a few years ago than I do now. Still a quality brew.

Poured 750 ML into a 13 oz tulip glass, bottled 11/04/11& best by 7/04/12. Pours a dark murky orange red with a two inch off white head, with orange highlights, and thick lacing everywhere. Smell is lots of clove, banana, hints of pine, and maybe a little citrus. Taste is similar, with some grapefruit in the finish. Body is large, enough life, not overly dry, and easy drinking if you like Belgian IPAs this is perfect for you. I understand it isn't really fresh, but this way more Belgian than DIPA.

Had this review under the filtered version...
Caged and corked 750 from Jagger.
Appearance. Pours a hazy deep amber with over 2 fingers of thick, off-white head.
Smell. Huge hops here!! Pink grapefruit, caramel oranges, limes and pineapple with a little pine.
Taste. Big caramel malt taste upfront that I wasn't really expecting. Followed up with big citrus and grassy hops. Nice bitterness but not overwhealming.
Mouthfeel. Medium+ body with smooth, medium carbonation.
Overall. Great big dipa here. Nice ballance and easy drinking considering the abv.

Undated 1 pt 9.4 fl oz bottle purchased from Princeton Liquors in Maple Grove, MN. Poured at 4C (and warmer over the session) into a fluted beer glass.
A: Hay copper body with a ton of tan head and decent lacing.
S: A dank aroma with notes of booze, caramel and a hint of pine.
T: It falls off the rails for a DIPA here. Where are the hops? Molasses, some sweetness and a thick, barley wine like body dominate the palate. Boozy. Barely any discernible hop flavour. Gravely disappointing. What do Simcoe hops taste like? I have no clue after having this malt forward beer.
M: Thick, sweet and a hint of bitterness. Not enough bitterness compared to the maltiness.
O: Was this an old bottle? No way to tell, but I sure as hell hope this was. No where near a DIPA. Not what I was wanting nor thinking I was getting.

T-citrus, especially grapefruit, and pine with some malty sweetness and a moderate bitter hop finish

NO corked and caged??? Sigh, just a 12 oz bottle
A-- Poured a light cola color and settled a dark amber ruby color. Nice look to this. One finger light tan head. Helhd up extremely well. A good few minutes at half a finger and the rest of the time a thick film/ collar. One good ring of lacing on the glass.
S-- Pungent, yet crisp and lively. Pungent grapefruit, orange and pine. Like walking through a Pine forest after rain. Good malt backbone to this.
T-- Lots of carmel covered orange and grapefruit. Slightly slick and sweet. Good amount of bitterness to this. Has some barleywine tones to this.
M-- Burnt toffee with orange medicinal qualities. Low carbonation, oily, and orange cough syrup medicinal. Hard orange/grapefruit medicinal finish with burnt toffee.
O-- Good looking, good nose, and good taste to start. Then it got real medicinal. Decent enough for one, maybe two. Stick with the West Coast DIPA's

750mL corked and caged into tulip. cant find a bottled on date, but pretty sure this is some recent shit.
A: super frothy head. reddish tints to white cream. terrific retention and lacing. highly hazy body. hard to call this orange as there are brown hues in there as well.
S: tons of floral/piney simcoe hops. there is an earthy/green tea-like aroma that i associate here. reminds me oh so slightly of green tea ice cream. really pleasant.
T: a hoppy brew with a serious malt component. but mostly hoppy. sticky in the finish. the simcoe is earthy and refreshing. the malt is pale-centric but has some mild caramel notes in there as well. almost too bittter, and not enough grain. the yeast also offers some apple, pear fruit notes.
M: pretty fresh bottle conditioning offers a zesty carbonation. i have to say fully bodied, even if it does drink slightly more on medium side.
D: pretty cool of them to do their very tasty double simcoe unfiltered into the 750, however i think i may like the regular double simcoe better. either way, love trying brews from these guys.

Poured into a tulip glass from a 750ml bottle.
Pours a nice dark and hazy amber color with some nice dark copper edges. There is a nice dense frothy 1 inch head that is ecru. The head is quite stoic not going down at all. Very nice retention with some slight stickyness.
Dank and juicy hop notes. Very grassy, earthy and intense. SLight intense hop juice sweetness and pine notes as well as some nice caramel malt. Nice balance of sweet malt and sweet and piney hops.
Starts off with some sweet malt notes and some caramel quickly followed by intense hop juice and bitterness. Very well balanced but intense non the less. Nice bready malt notes and some grain but definitely some nice intense piney hop notes. The carbonation is nice and lively.
Pretty good brew. Im glad I got to enjoy this. Very nicely balanced DIPA. I was not expecting it to be this way.

750 ml bottle, corked and caged, 9% abv. Cloudy copper color, with a slight brown tint. Awesome eggshell colored head holds forever and clings to the sides of the glass, leaving some sticky patches of lace.
Big piney, resiny hop aroma. Citrus fruit, particularly grapefruit in there as well. However, the nose is not entirely hop dominated, there is an abundance of caramel malt making its presence known.
Caramel malt feel, with a decent amount of sweetness. Big blast of piney hops, with a citrus undertone. Good amount of bitterness to counter the sweet malt. Bitterness lingers long in the mouth, but not at all unpleasant. A bit of a medicinal feel after a while.
Medium to almost full body. Big, chewy and hoppy. Some warmth from the alcohol, but not overwhelming. Very nice here.

This DIPA is cloudy, reddish amber, with a half inch, creamy almond head.
Citrus and pinesap are bold, crisp and clean and there is no layering.
Grapefruit is unmistakable and in your face. This is a very well done, single note IPA. The bitterness is prominent, and there is no attempt at balance. Some orange rind is revealed during a lingering finish from the Dogfish Head pint glass.
Full body and super dry with prickly carbonation and controlled alcohol.
Pairs nicely with spicy Italian sauce and well worth a second glass.

750 ml corked and caged bottle; no freshness dating. Murky brown/copper body with a nearly two-finger tan head. Nice lacing.
Solid hop notes, primarily pine and grapefruit in the aroma. A little sweet malt in the background.
The flavor is very interesting and a good bit different from the aroma as I get a strong floral and herbal taste. Still, plenty of citrus hop flavor, mostly grapefruit and a little orange. Some pine resin notes in the background with a solid sweet malt balance.
Medium texture in the mouthfeel. Tasty brew overall.

A - Transparent amber hue with a pillowy 2 finger white head
S - The prototypical simcoe profile is right there. An interesting combination of citrusy grapefruit and resinous pine. One thing the nose of this brew does is showcase the complexity of the simcoe varietal very well!
T - Although the citrus profile of the hops takes the cake in the nose, they are only opening players in the taste. The resinous piney flavors dominate the finish backed by a bit of a bready malt backbone.
M - Medium bodied and moderately carbonated. As others have noted, there is definitely an alcoholic note in there as well.
O - This is a solid DIPA that pays homage to the complexity a single strain of hops can offer. It didn't blow me away but I can't complain either. I would probably reach for something noticeably more citrusy than this or something noticeably more piney. The middle ground doesn't tend to be an area I prefer.

I mail order this one from Germany. Just to try it because it looked appealing.
A - A orange haze in my glass with some yeast snow. The head on top looks a bit orange, yellow and white!? Yes I know it sounds strange.
S - A beautiful pine forest enters my nose. In the forest there must be some citrus- and mango trees too, with grass between the roots.
T - A sweet citrus&pine syrup are having sex with my tongue. This a beautiful subtle blend and the after taste is just a perfect bitterness.
M - A medium carbonated body with a creaminess that could have been better though.
O - A lovely DIPA, nearly as good as the heady topper. I really love this.. I do think I got this one really fresh though. I will buy it again to see if I was dreaming.

Unfiltered Double Simcoe, 750-ml corked-and-caged bottle bought at Tully's in Wells, Maine, for $7.50. Have had this beer (a variant of my all-time favorite Double Simcoe) many times before but never got to review it.
Appearance: Carbonation is off the charts here. My first pour produced a wacky fist-sized head that took over half of the snifter I was using. Then it calms down and gets better, with a more normal one-finger head that lasts and then some and leaves some of the thickest lacing this side of Antwerp. A deep-rusty copper for this thing, not too different from the regular Simcoe.
Smell: Muddy, malty Simcoe hops. Raw, unfiltered honey. A bit of sheep droppings at the end. Earthy, barnyard. Funky and weird, but enticing.
Taste: Damn spicy! A bit of booze too along the way too. This is NOT your typical "pineapple-and-grapefruit" IPA. Lotta pine raisin, white pepper, exotic spices and yeast. Malt of course!
Mouthfeel: Medium body, almost full flavor and carbonation. Spicy, peppery finish. Odd and different.
Overall: While not nearly as exciting as the original Simcoe, this concoction is satisfying and intriguing. Quite drinkable too! I will always take the regular Simcoe first, but revisiting Unfiltered from time to time is always a pleasure.

Popped the cork and poured it into a tulip glass. A dirty red color with two fingers of tight off-white head that held.
Blunted citrus smell. It really just smells like a bag of hop cones, probably Simcoe hops.
Strong bitterness, lots of hops and fairly malty. I feel like I am chewing on the Simcoe cones.
Medium bodied, moderate to higher carbonation. Fits the IPA bill.
While it is enjoyable, I am not getting anything special out of it. It is a good IPA, but it does not standout from most others.

Poured into a chalice from corked bottle, dated 8/20/11.
A: Very dark amber/brown color, super cloudy, with a big fluffy tan head. Sticky lacing, good head retention.
S: Smells very, very hoppy; fruity, pine, and also a big blast of sweetness. Some bready aromas as well, almost like a sweet rye.
T: Intense bitter and fruity hop flavor. Woody, earthy, oaked flavors coming through, as well as some more malt as the hop assault subsides. The finish is a lingering sweetness with some hop bitterness thrown in.
M: Medium body, moderate carbonation, slightly creamy feel. Bittersweet finish with a definite alcohol warmth.
O: I had this beer a long time ago, from a regular six pack (not the unfiltered version), and I thought it sucked. But this one is extremely delicious. The last one I had probably wasn't as fresh, but after this bottle, I'll be buying again for sure.

Serving Type - 22 oz caged and corked bottle
Appearance - Golden tan/brown, monster 4+ inch head, tons of lacing.
Smell - Sweet fruity hops, orange, pineapple, grapefruit,some sugars, slight carmal malt aroma.
Taste - Grassy fruity hops with a alcohol and malt backbone. Has a somewhat oaked/smoked spice flavor. Hops are dominate at first until mouth adjusts, then the carmal malts come out. The finsh is malty but the hops add some sweetness and fruitness to add some bitterness.
Mouthfeel - Tounge gets nailed by the hops, then coated with malts. Palette is bittered, then sweetned by malts. Decent job working over mouth. Aftertaste is sweet, semi bitter and dry.
Overall - Really tasty, hoppy, and more malty then i expected. Regular double simcoe didnt blow me away if memory serves me but, i really enjoy this. Alcohol is a little high, and only comes out at the finish, so be careful with this 22 oz bottle.

A: Pours a hazy amber color with a towering tan head. Impressive lacing as you drink it down.
S: Strong earthy, pine and mint hop presence. Roasty caramel and crystal malt aroma with a fresh bread and honey aroma. It blends well together and makes for a very appealing beer.
T: Large hop presence with an abundance of pine, mint, spicy and earthy fresh hop flavors. Hops are very resinous and leaves a bitter coat in the mouth. Some light caramel and good fresh bread flavors come through and a sweet roasted barley backbone is apparent. Balance is toward the bitter hops though.
M: Medium body with moderate carbonation and a warming alcohol presence.
D: Enjoying this on my daughters 11th birthday. It has a generous hop kick to it and yet it remains in balance with a rich, sweet malt undertone. It was easy to drink and I enjoyed every bit of this big beer. Weyerbacher proves themselves yet again for quality beers!
