Poured from the bottle into a wheat ale style glass.
Super large typical styrofoamy head, kind of like a meringue top nice and white hints at cream and egg sheen. Body color is a classic amber and cloudy murky yellow. Lots of rising carbonation.
Nose is sweet clove, toasted malts and grain. A little bit of orange in there. A bit of ripping dry husk action. Real nice lovely nose.
Chewy palate mixes with just the right amount of playful carbonation. Lingering finish. Palate is rich in malts and dark spices with some dry action. A chewy feel, with clove like aromatics, very much so on the finish. Borderline creamy texture but the carbonation cuts through that just slightly.
Overall, a great example of the style and tasty. More Ayinger win.

500ml bottle poured into Weisse glass 7/1/12
A murky brownish orange liquid completely saturated with big bubbles, large off white head has decent retention and a few random patches of lace
S a little fruity with some honey wheat bread to go with the usual suspects of bruised banana, clove and a little chewing gum
T a little more spice and just a hint of booze I couldn't smell, just a little toffee and everything else I could smell
M enters silky then gets a little foamy from the bubbles, medium bodied with a grainy aftertaste
O pretty solid beer for a good price, I was expecting something darker but this did just fine for me
not the best I've had from Ayinger but that still puts it above most German beers I've tried. pick one up if you see it along with anything else these guys make

Poured into a yardstick glass. Merry f'n Christmas!
A: Due to the way I poured it into the said glass (read: as aggressively as possible), it came out with one of the biggest damn heads I've ever seen. Forget measuring it in fingers, this thing would have had to been measured in FEET. And it was beautiful to boot. Frustratingly, the head retention is excellent. The body itself is a very cloudy, murky dark copper color that looks vibrant.
S: Apple, banana, cloves, and that trademark "bubblegum" smell dominate the nose. Smells a bit tangy, as well. Nice!
T: Very refreshing stuff. The typical wheat beer esters are there in full force (bubblegum, banana, cloves), but it also has a tangy apple quality that mixes beautifully with the other flavors. I have to say that I slightly prefer the flavor profile of a hefeweizen, but I can really taste the top-notch quality in this.
M: Nice smoothness, with refreshing carbonation. The feel of the beer doesn't stand out, but holy shit, is it easy drinking.
O: Like I said, if given a choice between a hefe and a dunkel, I'll probably take a hefe. But this is nonetheless an excellent beer. If you've never had the style before, this is a great place to start.

Ayinger, never had heard of it but I figured a with a bavarian dunkel you cant go wrong for Christmas Eve.
Appearance - a murky orange brown. Not that is looks unfiltered but it has a nice opaqe quality to it.
Smell - The smell first told me I had got a quality beer. Hoppy, yeasty, crisp, and faint green apple tones.
Taste - Perfection! Just what a dunkel should be. Crips, fresh, good hop flavor and also the crisp apples come back. Perfect aftertaste that doesn't linger too long.
Mouthfeel - The carbonation is right on for this beer. Not overpowering or leaving me wanting. Just cant beat it.
Overall - 4.5 One of the best dunkels (or beers) I have had thus far. I will buy this one again and through the year

A: Hazy golden body, two finger head slowly leaves a thin white head, very nice.
S: Wheaty, fruit smell, think its banana. Also getting some malt, and clove.
T: There is a yeast character in the taste, there is a bready sweetness and a dry finsh. Tasted a little banana and some spice. Very tasty Dunkel.
M: Lighter body than I expected finish is clean and refeshing. Very drinkable.
O: I enjoyed this brew, Ayinger is one of my favorites.

Bottle purchased at Hyvee in West Omaha, NE.
No clear freshness date on bottle.
Poured into a Weihenstephaner weizen glass.
Pours a tall, off-white, meringue-like head, fluffy and cloud-esque. Head fades down over time to a 1cm cap atop the body and leaves spotty lacing, but nothing amazing. Body is an opaque dark-orange-brown with plenty of yeast sediment; when held up to a light, the beer is burnt orange with yellow highlights. Gazing into the beer, one notes fairly active carbonation streams that support the lingering ring of foam.
Aroma is strongly of esters: ripe bananas and apple cider. Secondary aromas include toasted bread, yeast, and mild phenols.
Taste opens with some wheat malt sweetness tempered closely by sharp phenols (clove and allspice) and esters (fruity, particularly banana and apple). The phenols and esters continue into mid-taste, with bubblegum and yeast appearing as well. Flavors fade out on a banana note, with lingering cloves as well.
Beer is medium to medium-light in body, with some tingling carbonation at first, which quickly decreases as this passes along the tongue. Mouthfeel ends up being first tingly, then smooth and creamy (exciting, expressive, then calmly satisfying). Finish is quite dry.
Ayinger's version of the dunkelweizen is classic, true to expectations, but also unique enough to draw its own interest. Like a more aggressive version of their hefeweizen. The flavors are powerful and stand out; the aromas do as well, if slightly more muted. This is a high quality dunkel, and should be alongside Weihenstephaner.

A truly classic German dunkelweizen. Pours a hazy dark orange/amber color with a great fluffy white head. Excellent retention and lacing.
Typical hefe aroma: yeasty spices, clove, banana, light citrus, grass. Smells sweet.
Tastes like banana, wheat, bread, clove. Lightly sweet, malty, but crisp. Carbonation is nice and lively; this beer is quenching and highly drinkable.
This has got to be one of the best examples of the style you can find. Highly recommended.

Appearance: Pours a clouded, dirtied tan body with a near-white, expansive head.
Smell: Fruity, malty nose with some traces of honey on morningtime wheat toast, a dusty yeastiness, and popped clove buds.
Taste: Faintly tangy wheat malt at the start, a moderately sweet inclusion of both wildflower honey and light-colored caramel before some fruity tastes of Gala apples, bananas, and pears. Very low, fairly brief tartness present. Light clove accent (certainly less than was present in the aroma). Very subdued bitterness. Soft but also a bit of carbonated crispness on the sweetish, lightly fruity finish.
Mouthfeel: Medium-bodied. Medium-plus carbonation. Fairly smooth on the tongue.
Overall: Quite pleasant and quaffable, one of those moreish beers where you clear through the entire bottle pretty quickly. This just might beat out Weihenstephaner's dunkelweizen for me.

500ml bottle.
Pours a murky brownish amber with a big creamy beige head that recedes very slowly to a thick cap of foam, leaving some nice lacing.
Aroma is sweet with lots of wheat presence but with plenty of dark malts as well. There are other sweet fruit notes with apples and pears and a healthy dose of cloves and even some citrus.
Taste is honey-coated bananas with dark roasted malts. It still tastes mostly like an amped up hefe with the yeast dominating though the malts add a nice layer underneath. The finish has a nice mellow spiciness.
The mouthfeel is highly carbonated, very active on the palate, almost too active but it's OK since the body is pretty meaty for the style.
Another fantastic beer from Aying, who really know their way around a wheat beer. I could drink this all night.

Lg brown glass bottle with a beautiful Ayinger logo. Poured into one of my weizen glasses.
A - hazy dark and light shades of caramel to a hazy bright orange toward the bottom of glass. A nice fluffy off white head with good thick lace.
S - very fruity. Bananas along with a few other hints of soft fruit. Very sweet malt aroma. The aroma of this brew is like a whiff of sweet banana bread with a touch of spice.
T - taste is sweet as well. Ripe banana bread with maybe a hint of apple. A nice wheat flavor also creeps into the mix. Good spice and clove hints as well. Excellent finish that leaves a great aftertaste department.
M - very smooth mouthfeel. Medium-light bodied that's very easy to drink. Superb feel from start to finish. Smooth and thick.
O - this is my first dunkelweizen of any kind. I've always heard mixed reviews on the dunkelweizen style. I've had many Hefes including the Ayinger here, and when it comes to Ayinger weizens Id go with the dunkel over the hefe, and their hefe is a absolute great craft brew. As much as I like the hefe, I liked this one even more. This is a world class brew and an excellent introduction for me into the dunkelweizen style. Man, Ayinger really have 2 great weizens with their dunkel and their hefe. Both are a must try.

A caramel brown colour, cloudy & forms a 2-finger sized foamy head with good retention.
Cloves, banana and wheat along with a little spiciness & some bubble gum. Faint coriander in the background too.
Lots of banana quickly followed up by mild citrus flavours, a hard to detect toffee flavour and a nice spicy clove taste.
Medium bodied with a refreshing feel to it & a smooth texture overall. Goes down great & even though the carbonation is high the beer isn't gassy.
Excellent tasting & well balanced that goes down a treat. The colour isn't as dark as I remember from previous dunkelweizens I have tried but that isn't necessarily a bad thing as this one still looks (and tastes) fantastic.

Poured into a weizen glass. This one pours a hazy chestnut color with two fingers of frothy white head. Simply looks damn good.
Right off I get a big whiff of banana in the aroma. It seems to mellow out after a few sniffs where a nice spicy and bready aroma come through. The flavor has a little bit of banana bread like characteristics; slightly sweet and yeasty with some spice. A little bit toasty on the malts.
The body is light and the carbonation is lively and a bit sharp. Overall a pretty rock solid German brew here I told my brothers girlfriend to buy me a beer and she got me this. I should clearly try that tactic more often.

A - Very cloudy carmel color with an abundant frothy off-white head that faded fairly quickly to a thin foam that hung around throughout.
S -Smell is of sweet malt, banana bread,ad bisquit.
T - Clove up front that gives way to a fruity, sweet malt. No hop or alcohol readily apparent.
M - Really great level of crisp carbonation, refreshing, medium/full body for the style.
O - This is a pretty good good example of the style. An enjoyable drink, but I'd max out at two I think, and would desire a change.

From the 500 ml. bottle. Sampled on August 7, 2011. It pours a slight murky medium to dark amber. My glass was not big enough to pour it all in without spilling some due to the huge, frothy, off-white head. Wheat and bananas penetrate the nose with virtually nothing in the way of hops or malts. The body is nice and creamy and glistens on the tongue. The taste also brings out that wheat, clove, banana flavor but there is also a noted sugary sweetness thrown in. Exquisite for an 83-degree late summer day.

The scent is of fruit and some spice.
The taste was of banana and notes of apple I believe, really no hop presence, notes of grain.
Medium body, very crisp and somewhat creamy, high carbonation.
This was a very tasty beer, lots of good flavor, and very easy to drink. I would definitely go for this again.

0.5 Liter bottle poured into a Franziskaner Weissbier glass.
Bought from a store with a large turnover, so even though there is no date I believe that this is a fresh beer, and the tasting notes would seem to reinforce this. Purchased early summer 2011 and since then kept in a temperature controlled environment.
Pours a thick two finger head which settles fairly rapidly into a 1/8” cap, medium deep amber color, somewhat cloudy (yeast?), fine champagne like bubbles rise from the bottom of the glass.
Distinct and powerful aroma of yeast, spicy cinnamon, and some hints of citrus, the very enjoyable yeast continues to dominate as this beer warms, as does the spicy components of this beer, very enjoyable and pleasant smell. Refined and elegant in nature.
The first swallow reveals lots of very distinct yeast, excellent refreshing acidity, medium body, with a wonderful carbonation that is very champagne like with fine bubbles and a wonderful mouth feel, delicious flavors of fresh baked bread and lightly roasted grain. Delicious!
Decent finish of yeast dominated, grainy malts.
Overall this is a very, very enjoyable beer to drink, one that I would say is a session beer, as I could definitely drink several of these, one after the other. As a fan of Belgium Ales the powerful yeast of this beer is very attractive to me, and the relatively tame 5.8% ABV certainly begs one to have another. Seems to be at its best at about 45-50 degrees. This is an expensive beer to buy here in the States, and there are many domestic examples of this style.

A - The beer pours with three fingers of off-white foam on top of a hazy, golden-brown body. The head settles down rather quickly, but leaves fairly good lace on the glass.
S - Lots of bubble gum and banana with some bready notes of honey and toffee.
T - Banana flavored yeast and toffee malt with some bubblegum yeast. A little bit more fruity yeast in the middle with a hint of caramel. It finishes up with more bubblegum character and toffee paired with spicy clove notes.
M - Medium-thick body, moderately high carbonation, and a somewhat sweet finish.
D - Very nice, like Ayinger's light colored weisse it has an excellent yeast character, but here it is balanced by a light note of bready toffee and just a hint of sweet caramel in the middle. Very drinkable, one of the best German wheat beers that you are likely to come across in the US.

Appearance - 2 finger head that was somewhat fizzy. Very scary looking like a dark murky pond in the woods.
Smell - pleasant scents with lemon, bready and bannana hints
Taste - Decent taste exactly as it smells. Very little hop presence but very smooth. Full bodied taste.
Mouthfeel - fizzy but full bodied. Leaves a dry aftertaste like some red ales I've sampled.
Overall - a decent German beer, but not the greatest I've sampled. I could drink several of these but wouldn't seek after them unless there were bad options.

A- A cloudy light brown/dark copper colour, actually quite clear for the style. Classic weizen foamy head, quite big with very nice retention. Near no lacing at all
S- Light but fresh bready aroma with banana notes and some faint spicy undernotes. Maybe a hint of caramel
T- Bready malts are actually on the low side. A typical banana flavour immediately gets dominant (probably too dominant). Some spicy notes (clove, maybe others) bring a little life. Some caramel notes are now clearly detectable. Decently fresh flavour, though pretty much just banana
M- Light/medium body. Carbonation is moderate but still easily detectable on the tongue. A soft mouthfeel overall, maybe a tad too watery
O- Nothing really interesting with this beer in my opinion. it fits the style, that's all

It pours a darker hefeweizen color, not quite as dark as a typical dunkelweizen, it is a ur-weisse (traditional/pre-modern weisse) after all. It is cloudy with a foamy, creamy-looking off-white head.
The smell is dominated by bananas with just a hint of clove and wheat.
The flavor continues the banana theme. This is just a banana bomb and then some. There is some clove , some apple, and some lemon, yes but the dominant yeast flavor here is banana. There isn’t much in the way of roasted malt in the taste. There is a slight bit of hops that round it out.
This one is delicous x 10, it is a hot day in Munich today and you would be hard-pressed to find a better thirst-quencher. Screw the strawberry-lime-derpaderp, just let the yeast do it’s thing and you’ll get this.
World-class.

Poured into a stein from a 500mL bottle. No "best before" or bottling date to be found.
A - Pours a remarkably clear deep honey gold (almost brownish). 2 fingers of off-white head that fade somewhat fast.
S - Smells strongly of brown bread. Mild caramel notes. Crisp spices: coriander and, to a lesser degree, black pepper. Very mild esters that smell of ripe banana.
T - Sweet caramel up front quickly followed by a slightly sour and tangy flavor (don't know if I have an old bottle or this is just a character of the malt/yeast). A taste remarkably similar to banana bread is noticeable too--cooked bananas and walnuts. Finishes slightly bitter and dry with residual alcohol warmth.
M - Thin body with a clean, dry finish. Tingling carbonation.

A: The head is two finger of stupidly thick, beautiful foam. The beer itself is rather hazy and has a nice brown to dark copper, depending on the thickness of the glass.
S: Lots of wheat and banana, with a little bit of clove. There is also a hint of other spices.
T: The taste has a surprisingly heavy amount of bubble gum and clove with a little bit of floral taste. Their is a hint of bitterness as well on the back end.
M: Medium body with great carbonation.
D: The most drinkable beer I have had in a long time.

I’m in a bad mood, so this beer better be good. I won’t even begin to try and figure out how to pronounce it, but in the preliminary research I did… I want to go to Germany. If nothing more than the stein filled with beer. If I ever do (and I will) make it to Germany, I will make sure to go during Oktoberfest. They have celebrations here in the states, but there is NO WAY they are the same as those Europeans. Anyway, on with the beer.
The nose on this this is HUGE. It smacked me in the face before I could even pour a glass of this stuff. It has a very familiar nose, similar to a Blue Moon or any other wheat beer you might find. But after a sip of this stuff, I will never enjoy a Blue Moon again.
There are subtle similarities… but the aftertaste is so much smoother than that of a Blue Moon (and I use Blue Moon as that’s the most popular wheat beer here in the United States.) The ABV is a bit higher than a Blue Moon, but it’s not obvious. The aftertaste is quick, but the smoothness makes up for it. You are hit with hints of spice (a weak spice at that) long after the beer has been swallowed.
There is a slight carbonation on the back half of the tongue, but just like the aftertaste it’s quick. The smoothness of this beer makes up for anything else that could go wrong. It’s a lot better than a Blue Moon, and I would totally buy another bottle of this. But I really want to drink this out of a HUGE beer stein. Let’s make that happen this October, shall we? Bottoms up people!
