750ml, January 2010 vintage.
A: Pours a deep bubbly pink with a fizzy light pink head that quickly faded into nothingness.
S: Bright raspberry fruit juice notes mix well with underlying notes of damp musty earth, musty wood, and faint dry tannins and citrus acid.
T: Follows the nose with sweet raspberry nectar, wet soil after a rain, musty wood, and earthy basement funk. Dry oak tannins and raspberry skins balance the sweet juice, and the finish is full of biting citric acid, lemon, and slight cranberry. The finish is tart yet sweet and does not last long.
M: Medium-light body, fizzy active carbonation, drying mouth but not a desert, with a good acidic bite but not an intense mouthfeel puckering sourness. Drinks very well.
O: Not as intensely sour or bold as Lou Pepe, definitely more easy going. Not as pure fruit concentrate as Framboose. Somewhere right in the middle. One of the best examples of framboise on the market.

Poured from a 75 cl bottle into a Cantillon chalice. Bottled 2013.
Appearance: Poured a one-finger head. Quickly dissipates in thickness, though a thin layer of foam remains on top. Mostly clear ruby red. Moderate carbonation
Smell: Almost all raspberry. Slight funk. Sour notes.
Taste: Very straightforward. Raspberry carries over from the smell, though less sour than anticipated. Starts with the fruit, stays with the fruit. Mild bitterness in the finish. Compared to the Kriek, it is sweeter, but not by much.
Mouthfeel: Pleasant fizz, lighter, but not as light as other Lambics.
Overall: Very straight forward. It is a very good sour raspberry Lambic. Expect that and you will be very happy, as I was. Not that much complexity, but when what you have is this good, you don’t particularly need complexity.

Slightly hazy with a rose reddish color. Low retention on its pinky head.
Sour aroma with good raspberries notes.
Predominant fruity flavor with a nice tartness. Quite funky and not really sweet as other copy cats. Strong as expected on raspberries, with some lemon citrusy. Hints of oaks and earthy yeast with spicy notes. Yeasts going wild. Dry finish.
Light body with decent carbonation and a robust acid feeling.
For this one you got be ready, do your homework first, don’t jump straight to this level on sourness. Go smooth first and climb the ladder.

From a 375 ml bottle (dated September 22, 2012) into a tulip.
A-The brew is a pleasant rose/raspberry color and slightly hazy. There is very little pink head and just a few streams of ultra-fine carbonation are visible.
S-The predominant smell is a funky, earthy fruit-flavored barnyard note. Sweetness and sourness are pretty minimal and the whole thing has a musty feel to it.
T-The taste initially follows the smell pretty closely with funky, earthy, musty flavors up front. However, the sweetness of the fruit builds and the finish is tart and acidic. There is a mild grainy flavor underneath the beer.
M-The feel is light and crisp with the aforementioned finish being long and saliva-inducing. The carbonation is very light.
O-This is not my favorite Cantillon because it lacks some of the vinous complexities that make the other Cantillons so damn good. Nevertheless, this is still a decent beer with good balance of fruit and funk and nice mouthfeel.

Rose de Gambrinus was a Cantillon beer than I was very excited for, both because I love Cantillon's brews and because I'm a raspberry whore. I couldn't wait to get my hands on this one and crack it open. It pours a deep, blood red color with a pink-ish, lavender tinted head. Very volatile and effervescent in appearance; the head wisps away within a minute or so and fades to a mere ring at the edges of the ruby brew.
The aroma that met my nose as I leaned in towards the glass was wonderful; near perfect execution of funk and fruit that seems unobtainable by any brewery other than Belgium's best. The amount of raspberry in the aroma was stunning; simply gushing with juicy puree and bursting raspberry skins, both tart and sweet. Despite the heavy hand of the framboise, I was picking up on a nice bit of strawberry in the aroma, too. The pungency and tartness of the fruits sting and cling-on to the saliva glads up front and never seem to let go.
The insane fruit bill collides with an equal share of delicious, Belgian, yeasty funk. Huge notes of must, cheesy funk, barnyard, damp cellar, old cork, and sloppy, wet hay. The funk is incredibly powerful, yet so delicately offset by the marvelousness of the fruit. Without each other, these two parts fail. The fruit is too harsh and tart, or the funk is too powerful and off-putting. But together, they mate and form a complex and lovely display of aroma-melding that not many brewers can achieve.
Fearful that the flavor would not follow through with the wonderful aroma, I bring the glass to my lips. I'm in luck, because Rose de Gambrinus tastes amazing, too. The fruits are up-front, first and foremost, with a huge fruit profile that consists most heavily of raspberries, followed by strawberries, and contains faint portions of grapes and cherries. Tartness is quite high and the juiciness from the fruit is something to be in awe of. Acidic, bursting with power, and exceedingly refreshing.
Funk makes it's appearance a few moments into the first sip and gets stronger as Rose gets warmer. Musty barnyards come to mind, and maybe even a solid helping of horseblanket. Wet cork, hay, and old, damp cellar notes can be found as well, slightly hidden under the blanket of fruity goodness. The finish is as good as the start, full of a largely sweet and fading tart raspberry profile that meshes eloquently with the display of funk. Thin bodied with lots of carbonation for a nice upper-lip smack; sharp, tart, and dry in the finish.
I love sour beers and I love raspberry beers, so there were certainly high expectations going into this bottle of Rose de Gambrinus. It's safe to say that my expectations were not only met, but exceeded by a fair amount as well. Quite simply a wonderful execution of raspberry sourness into a funk-filled, yeast-heavy lambic. Cantillon never disappoints, and their most popular raspberry-centric beer is definitely a home run.

Seldom seen around these parts, I fondly remember picking this up years ago off the shelf and introducing friends to what traditional lambics could be.
375ml split into two goblets.
Deep rosy reddish orange color, slightly murky (likely due to handling). Thin layer of foam with pinkish white hue, it maintains a thin ring at the edge.
Farmy wet pasture aroma, leafy fresh raspberries, oaky sandalwood, authentic and fruity at the same time.
Spritzy and moderately tart, sour raspberry with a dry finish. Seedy and pulpy raspberries, wild sour ones, not at all sweet. Puckering though not extremely sour in the scheme of all things Cantillon. A nice aperitif to be sure, first time I had this it seemed more sour years ago... Chalk it up to a threshold shift in sour tolerance I guess, though batch variation is a possibility too. A classic framboise.

75 cl poured into cantilion tulip glass.
Appearance: beautiful deep medium rose/red colour with a 2 fingers of pinkish red head. Drops quickly to a ring. The beer is constantly moving from small little bubbles that are everywhere in this beer.
Smell: Juicy raspberries and a mild to moderate funk. Little bit of "sweaty hay" is noted in the nose as well.
Taste: All the flavors in this beer all seem to hit immediately up front. Funk, hay, lemons, raspberries, oak and musky / dusty barnyard. The tart is moderate and is kept balanced with the fruit and musk, but the tart character still dominates this beer.
Mouthfeel: light bodied beer with moderate carbonation. Finishes dry. Carbonation is lively. Fresh and crisp
Overall: Really nice sour/fruity beer !

A: A crystal clear ruby red topped with a tight mircofoam of 2 fingers of pale rose bubbles. Losing so of it's volume the head settled to a thin blanket.
S: Sweet and tart raspberry with a lasting note of funk and some very subtle wheat.
Somme hints of minerals mixed with the sweetness of the raspberry.
T: Sweet tart red berries, bright, dry and refreshing, suggestive of lemon pith. Followed with an earthy funk and minerals. Tart and dry on the finish, puckering and tangy with a hint of pepper.
M: Clean, crisp and dry in the mouth - some puckering that is enjoyable and refreshing.
High carbonation supports the dry clean mouth feel.
O: The mix of red fruits with sour notes and the clean refreshing minerals offer a complex drink that is worth enjoying on each and every sip. The ruby red colour and pale pink foam is rich and shines with a jewel like intensity. Beautiful to look at and well blended with a mix of sweet, tart, and earthy funk, Rosé De Gambrinus is a complex drink worth lingering over.

750 ml bottle served @ 50* into a flute, consumed on 3/30/13. Bottled Feb 9th 2011. My first Cantillon. Been sittin on this for a year. Split with the wifey.
A - Nice big puffy fizzy light pink head, dissipates quickly to a thin blanket that holds up through the entire glass due to high carbonation. Good clarity, slightly hazy. Orange/pink body. Not much lacing at all.
S - Can catch some tart fruitiness during the pour from a foot and a half away. Tart with some light funk & fruit notes. Funk gets stronger as it warms, funky cheese.
T - Pretty tart but fairly balanced. Not as fruity as it probably was fresh but as a result of age a solid sour/funk profile is in control. Still the raspberry is there no question. Fairly complex. Finish is on the dry side. That fatty/cheesy funk really comes through at the end of the glass once its warmed, delicious.
M - Effervescent, prickly carbonation makes this delightful. Medium-light body.
O - This is very pleasurable to drink. The overall balance and high carbonation make it very refreshing. Really wish I had easy access to this on the reg.

Fantastic aromas with great balance and big complexity of tart fruit notes with barrel and yeast character; and great strength. Taste of big tart and sour raspberry, sour apple, raspberry juice, cherry, hay, straw, pepper, clove, oak, leather, oak, funk, light vinegar, and earthy yeast spiciness. Good amount of tart fruity acidity on the finish; with lingering notes of tart raspberry, sour apple, cherry, hay, straw, pepper, clove, funk, oak, and earthy yeast spiciness on the finish for a while. Fantastic flavor balance of fruit, yeast, and barrel flavors with big complexity; good balance of acidity and sweetness; and zero cloying flavors present after the finish. Medium-high carbonation and medium bodied; with a crisp, acidic, and lightly syrupy mouthfeel that is great. Acidity is moderately high, but not overwhelming. Alcohol is very well hidden with zero warming noticed after the finish. Overall this is a fantastic raspberry lambic! Great balance and big complexity of fruit, barrel, and yeast flavors; and very smooth to drink despite the fair amount of acidity. A highly enjoyable offering as expected.

A glorious Cantillon bottled on the 26th of September, 2012
The nose bursts with fresh, juicy, just-picked raspberries. Underneath the raspberries is a touch of barnyard funk but it is surprisingly subdued for a lambic.
The raspberries again, dominate the palate. The raspberries are bright, juicy and full with the slightest touch of sweetness. The raspberries begin to take on an earthier flavor as it progresses down the palate, like dirt covered raspberries. The raspberries begin to fade towards the back and are taken over by an herbal spiciness and a bit of barnyard funky-ness. Lactic acidity is present in the back with a gentle drying and tannic sourness.
The mouthfeel is light and extremely silky.
A fantastic fruit lambic with a great balance between ripe raspberries and acidity/sourness. Love it, and I love you Jean van Roy

A - It is dark amber to copper in color. I meager pour yielded a large off-white head the dissipates quickly.
S - I smell some tart raspberries. I also get some musty, moldy basement aromas.
T - It is mouth puckeringly sour. I wasn't prepared for how sour this beer would be. The raspberries are not as relevant as I thought. The dank comes through in this beer.
M - Medium
O - It's been a while since I have enjoyed a good sour beer. I have had Lindeman's lambics that I find too sweet. This is my first Cantillon and will spoil my palate for a good while. The rarity of Cantillon is somewhat depressing knowing that it not be often that I find another one of these gems.

Many thanks to, uh, whomever shared this at Geoff's house. There were so many sours flying around that I lost track of who stripped the enamel off of what. Classic green 750ML bottle.
Pour is has a lovely girlish pink figure, clear, since I avoided the yeast boogar oozing along the bottom of the bottle. Nose is fresh, tart, & vaguely fruity. Doesn't scorch my nose hairs out of existence, which I appreciate it.
Rose de Gambrinus is my kind of sour, leaving my asshole unpuckered. It's lovely & light, tart without being too sour. I couldn't quite identify the fruit & had to be told it was raspberries, but the fruitness is undeniable & welcome. Lightly acidic with a touch of lemon on the end. Easy to sip, this is the rare sour that I could drink a full glass of.
I hope to find this brew fresh at Cantillon this summer when we visit, I'll bet the raspberries would pop out even more. As is, a very good beer & nice sour.

Pours a hazy light pink colour, with a nice white head.
Smells fruity and funky.
Tastes very crisp, dry and tart. Sour yeast and a very subtle raspberry taste.

A - Bright fire engine red in color with an effervescent pink head. Clear throughout with a poorly retained foam and no lace.
S - Tart funk and wet straw with a mellow barnyard aroma open followed by fresh raspberries adding smooth fruitiness to the armpitty nose. Floral aspects balance the nose out.
T - Fresh, thin raspberries aren't anywhere near sugary as the bulk of the beer is funky yeast and tartness.
M - Dry as can be, the overly tart finish is surprising but quite welcome. A little gut-churning acidic but quite a good feel.
O - Score another win for Cantillon and the guy on the bottle! This framboise is fruity but well-balanced and has the right amount of funky, wild yeast to it.

A-Hazy light pink in color when held to the light with about a fingers worth of tight, light pink head.
S-Nose is full of fresh raspberry and not much else.
T-Flavor is full of fresh raspberry again, some lemon, and has a little vinegar/acetic acid to it.
M-Light mouthfeel, gentle carbonation, pretty bracing acidity, and a moderate finish.
O-Good beer, but one of my least favorite Cantillon offerings. I think Lou Pepe Framboise is much better as far as their framboises go.

Split with my wife from a 375ml bottle into a wine glass.
Appearance: Dark pink with a faint pink head that dissappates quickly. Minimal lacing.
Smell: Very earthy, barn yard feel. It is also extremely tart. It definitely prepares you for the tastes to come.
Taste: Tart, like you would expect from a Lambic. Very little raspberry flavor, but what is there adds to the tartness. The barn yard funk is there as well. Very crisp.
Mouthfeel: Light carbonation, smooth going in and sits very easy on the tongue.
Overall: A good lambic, and definitely a solid offering from Cantillon. I can not wait to try more from them.

This butte pours a beautiful apple red color with a quick dissipating ring of pink head. Whatever lacing there is slides gracefully into the red liquid.
The nose tells me right away that this will be a tart brew. Barnyard funk, tart raspberries and some sweet candy-like tones.
The flavors are showing less raspberries but they have a light presence. Sweet and very tart with a lot of acidic undertones. The funky horse blanket flavors are showing throught each sip.
Mouthfeel is dry, crisp and intense from the acidity.
Overall, this is a well integrated lambic that has almost everything i'm looking for. I just wish the raspberries shined more.

Appearance: Pours a mildly hazed deep rose. Moderate carbonation on the pours produces a quick light-pink, bubbly head. Drops to absolute nothing. No cap, no collar. Lively carbonation pulls from the bottom.
Smell: Tart citric bite. Nice underlying push of raspberry flesh and tannic fruit skin. Powdery yeast. Some underlying funky aromas hitting at hay and damp earth. Sweet, but not sugary. Pure fruit sweetness. Some lemon zest as well. Very clean.
Taste: Tart raspberry flesh, juice, and skin. Obliterated tart raspberry. Nice citric kick in the back. Lemon rind. Some damp earthiness and hay. Slightly powdery. Tartness builds as the beer warms and brings a sharp, lip-puckering, acidity to the finish. Tons of earth and raspberry. Fresh picked.
Mouthfeel: Slightly creamy with a lively, yet not even close to effervescent, carbonation. Moderate body overall with a slight crispness as well.
Overall: My tongue can taste infinity.
A solid blend of destroyed fruit and tart. Almost brutally tart, but nicely sweet. Another great beer that I'll never see on shelves again. Alas, it was a treat while it lasted.

Rosé De Gambrinus has an appearance that is well worth breaking out the corkscrew for. It has a lovely, rich red colour and spotless clarity. Its complexion is darker than a rosé wine but a touch lighter than cranberry juice. Fine bubbles amount to zero head (although a tall lather of pink froth greats you on the pour). It is sexier than even its label.
Rosé uses fresh raspberries... but then macerates them in stinky two year old lambic. The result is therefore a fruit beer that is far more sour than sweet. In fact, the fruit is hardly detected due to the prominence of oak and lemon juice. Barrel features beyond its tart bacteria are appreciated; there is a soft vanilla undertone.
The mouthfeel is a spectacle. Lambics are typically the liquid equivalent of a slot machine hitting 'jackpot' and Rosé is a sure '777'. Among the loud sirens and flashing lights is the tartness of vinegar, the acidity of lemon juice and the prickliness of a cactus. If you're a fan of unpasteurized cheese, fruit lemonade or strong vinaigrette, this is up your alley.
Rosé does not have a huge breadth of actual flavour - certainly insofar as fruit is concerned - because the sourness is so overwhelming. Most taste falls under the "barnyard" category, implying the presence of 'funky', outdoorsy, tart organisms unknown. It is seriously dry and therefore mightily refreshing. Think mineral water with a big puckering kick. It stings the tongue. Too big a gulp will burn your tonsils right off.
While lambics have proven to age better than probably any other style of beer, fruit lambics are intended for immediate drinking. This particular bottle is approaching two years of age (just within its recommended life span) and thus showcases less of the fruit and more of the tart lambic (hence the raspberries tasting more like choke cherries), but it is still a marvel.
Brewers around the world have found success in crafting wild and sour beers, but Belgian microbiota remain my favourite; it is an ingredient that makes almost impossible things happen and classic producers like Cantillon simply deliver the best of this funky, unusual style. Take this advice: Go to the brewery and see firsthand the magic wand they brew this stuff with.

Appearance: What a beautiful pour - deep pink body (lightly hazed), with crimson highlights and orange edges. A rough pour yields a large, marshmallow pink coloured head that lasts pretty well for a sour and leaves some patchy lace.
Smell: Mmmm, this smells absolutely delicious - the nose is bursting with fresh raspberries. There is certainly way more fruit character than I have experienced in other fruit lambics - I will have to revisit fresher bottles of Cantillon's other offerings. Cherries and a touch of red grapes are noted alongside the copious amounts of raspberries. Other notes include: Musty notes, old wood, a touch of vinegar and a light earthy note.
Taste: As with the nose, there is a ton of raspberry in the flavour, alongside musty notes, old wood, wine vinegar and some oak. The flavour is quite tart, but not quite what I have come to expect from Cantillon.
Mouthfeel: Medium bodied (the fruit have certainly bumped up the body), with a medium-low level of soft carbonation.
Overall: Rosé De Gambrinus is a fantastic fruit lambic and probably the best of Cantillons base offerings. I really wish I had bought a 750!

A - Gorgeous reddish-pink, with a finger or two of fizzy head. It dissipates a little quickly, though.
S - Oh my, raspberry. I love raspberry. A whole lot of sour and tart and a little bit of sweet.
T - Mmmm, nice sour pucker, but balanced by a fair amount of raspberry sweetness. The raspberry flavor is pervasive, but it starts good and sour, then moves to mostly sweet, then finishes with some nice lingering funk. Really tasty.
M - A decent amount of carbonation, with solid acidity that leaves my tongue writhing just a little.
Overall, very tasty.

Big thanks goes out to sincereNc for sharing this one during a fair sized Cantillon tasting! 2011 Vintage! Served from bottle into a Cantillon balloon. Poured ruby red with a half finger white head that subsided to a minimal amount quickly. Maintained nice lacing throughout the glass. The aroma was comprised of sweet malt, raspberry, funk, diaper, and tart. The flavor was of sweet malt, raspberry, funk, tart, sour, and fruit. It had a light feel on the palate with high carbonation. Overall this was a pretty good brew. I still stand by the fact that this is one of the best lambics of this genre out there. I have had this one multiple times and have just now got around to reviewing it. I have easily crushed multiple 750 mL bottles of this in the past and will likely do so any time the opportunity presents itself. An absolute must try if you have not done so before as I know you will absolutely not regret it.
