12 oz. bottle. Bottled on 23rd of December, 2011. Poured into a Belgian style stemmed-glass.

A: Holy raspberry gods. This is the most beautiful color I've ever poured into a glass. Raspberry ruby red with a foamy pink head. No lacing.

S: Sour berries, mulled fruits, sweet red wine.

T: First you're hit with a puckering sour burst on your palette, and then after a couple seconds the sourness subsides and the real essence of raspberries comes through. All I can really detect is a sour raspberry taste, and being as this is a raspberry lambic, I'm okay with that. They really struck that chord perfectly.

M: Freaking sour, what else?

O: This is the first sour I've ever enjoyed. I know this is one of the least favorite offerings from Cantillon has, but I'd be more than interested in trying anything else they have to offer. Very intense beer.

Poured from a 75 cl bottle into a Cantillon chalice. Bottled 2013.

Appearance: Poured a one-finger head. Quickly dissipates in thickness, though a thin layer of foam remains on top. Mostly clear ruby red. Moderate carbonation

Smell: Almost all raspberry. Slight funk. Sour notes.

Taste: Very straightforward. Raspberry carries over from the smell, though less sour than anticipated. Starts with the fruit, stays with the fruit. Mild bitterness in the finish. Compared to the Kriek, it is sweeter, but not by much.

Mouthfeel: Pleasant fizz, lighter, but not as light as other Lambics.

Overall: Very straight forward. It is a very good sour raspberry Lambic. Expect that and you will be very happy, as I was. Not that much complexity, but when what you have is this good, you don’t particularly need complexity.

Slightly hazy with a rose reddish color. Low retention on its pinky head.
Sour aroma with good raspberries notes.
Predominant fruity flavor with a nice tartness. Quite funky and not really sweet as other copy cats. Strong as expected on raspberries, with some lemon citrusy. Hints of oaks and earthy yeast with spicy notes. Yeasts going wild. Dry finish.
Light body with decent carbonation and a robust acid feeling.
For this one you got be ready, do your homework first, don’t jump straight to this level on sourness. Go smooth first and climb the ladder.

From a 375 ml bottle (dated September 22, 2012) into a tulip.

A-The brew is a pleasant rose/raspberry color and slightly hazy. There is very little pink head and just a few streams of ultra-fine carbonation are visible.

S-The predominant smell is a funky, earthy fruit-flavored barnyard note. Sweetness and sourness are pretty minimal and the whole thing has a musty feel to it.

T-The taste initially follows the smell pretty closely with funky, earthy, musty flavors up front. However, the sweetness of the fruit builds and the finish is tart and acidic. There is a mild grainy flavor underneath the beer.

M-The feel is light and crisp with the aforementioned finish being long and saliva-inducing. The carbonation is very light.

O-This is not my favorite Cantillon because it lacks some of the vinous complexities that make the other Cantillons so damn good. Nevertheless, this is still a decent beer with good balance of fruit and funk and nice mouthfeel.
