Pours a deep dark orange amber with an average size white head, that quickly fades leaving behind a small white cap of foam and sticky lacing on the side of the glass.

Aromas begin with a small bit of citrus, but much more of a piney hop presence. There is a slightly sweet, grainy and honey maltiess that trys to poke out but the earthy and piney hops overtake it.

The tastes begin with that sweet honey maltiness but the pine and citrus immediately join the show and punch you in the tongue. Oodles and oodles of herbaceous, piney, earthy and citrus hops. Really too overpowering and the bitterness overtakes all malt flavor.

Mouthfeel is medium-full bodied with medium carbonation. Finish is palate wreckingly bitter and a bit of alcohol pops out to dry it out even more as it warms.

Overall this is not my style DIPA. I prefer ones with a more balanced hop profile. Maybe I also just don't like all these extremely herbal/floral hops in such a great amount. Either way, I will pass on this going forward.

Unearthy begins as an exciting burnished orange amber color which is quite deep in tone.
There is very little in way of carbonation and the foamy cap fairs no better. The foamy head is light and thin with some clinging lace at the edge.

Aroma was mostly sweet caramel malts and alcohol.
Hops are absent as far as I can tell. Perhaps I have a stale beer. You would think that an imperial IPA would have considerable hop wallop both in aroma and taste.

Taste is finds sweet toffee malts and warming alcohol. Very light hop flavor.
Drinks fairly smooth and is quite dry and bitter lingering deep into the aftertaste,
I would of liked to have seen more hops but it's possible this is stale and out of date.

Quite tasty. Hazy copper coloration. Smells of brandy and caramel. Taste is complex with some oak-like notes with a boozy finish (which I don't mind at 11%). Has enough hops for me, but I could see hop-heads being slightly underwhelmed. Overall, a tasty, unique take on IIPAs.

12oz bottle poured into a NB globe. No bottle dating but it’s part of a recently released Super Pack so I have reason to believe that it’s quite fresh.

A: Poured silky smooth. A white, 1 1/2 finger head sits on top of a very clear reddish brown body. Head settles to a decent cap that provides a nice creaminess to every sip. Decent lacing and alcohol legs throughout. It's a great looking beer.

S: Just tons of sweet bready malt, pineapple and citrus. Also some earthy vegetal components. I’m more familiar with the oak-aged version of this, so I almost can’t help associate this aroma with some wood notes as well.

T: Sweet, sweet, sweet...and what isn’t sweet is tongue-assaulting bitterness and alcohol. As I mentioned when describing the aroma, there’s something earthy about this that is putting me off. Quite a bit of alcohol burn shows up mid-palate and drives on through to the finish.

M: Body is between medium and full and the texture is somewhat oily. Carb is fine for the style. Drinkability is relatively low. This is a big DIPA, but the mouthfeel is not what I prefer and the alcohol isn’t hidden very well.

O: I love most of Southern Tier’s beers, but this is not my cup of tea. The best DIPAs showcase hops, complement with malt and sneak in some alcohol. This is mostly malt and alcohol. I’m glad I waited until this was available in 12oz bottles because 22oz of this would be way more than I would want in an evening. Just too cloying, alcoholic and ...I don’t know...just not for me.

Unearthly pours a hazy copper color, with a nice white head. Their is a strong floral aroma, with hints of sweetness. The taste contains a strong floral/hoppy flavor, with a strong bitterness. A good strong flavor, very bitter, but not as dry as it should be. Overall a very nice IPA, I found it a little different with a lack of a dry finish, and hints of sweetness.

Pours a hazy, medium amber color with a fluffy off-white/light tan head. Retention is poor but some decent lacing, nevertheless.
Smell is a well-balanced blend of malt, hops, wood, smoke (unexpected) even some vanilla.
Taste is amazing! So fully flavored, rich and delicious. Malt, hops, whiskey, wheat, caramel, wood, smoke all incredibly well balanced.
This is a big, full flavored, full-bodied brew with a medium effervescence. If I hadn't know before, I would have no idea this was any variation of an IPA. I'm not an IPA guy but this is a massively good beer, not a west coast-style hop monster, a truly well rounded and delicious, multi-note concoction. This went absolutely brilliantly with a spicy red curry. It is so good it would be just as good all by itself. Get this and you will be so happy.

New 12oz bottle poured into a snifter.

A: Pours a very clear golden amber with a thick 1 finger white head. Leaves a little bit of lacing on the sides.

S: Blooming hop aroma with earthy and floral tones. Very sweet malty backbone. Slight alcohol notes.

T: Less hop-dominant than I would have expected. A sweet malty presence with an earthy hop backing. One of the least hoppy double IPA's i've had but still a very good one. I like how most of the hops appear on the back-end.

M: Thick and syrupy mouthfeel, on the low end of carbonation. Has a little bit of that nectar feel. Alcohol is very well hidden.

Overall always been a favorite of mine. I think the 12oz bottle is more appropriate as this is a doozey to drink more of.

Bomber picked up at the LCBO; no packaging date. I don't usually expect to find stuff from Southern Tier on the shelves around here - the only other one I've managed to find is Pumking - so spotting this one raised an eyebrow. Poured into a big wine glass.

Pours a cloudy golden-apricot colour, generating only a modest, one-finger layer of creamy foam at the surface that fizzles away over the next minute or two. The only remnant is a thin, soapy collar around the edge of the glass and some scant lacing. Mild aroma with caramel and butterscotch malts, as well as notes of wet cedar, orange and peaches. Pleasant, but it could stand to be a bit bolder.

Perhaps I spoke too soon - this is one bold-tasting brew, with tons of earthy bitterness. Toffee and caramel sweetness mingles with a range of fruity flavours - pineapple, orange, dates and plums all come to mind. The finish is herbal, piney, very earthy and bitter, with the ethanol a loud contributor. These flavours linger in the aftertaste. Full-bodied, with a slick, oily, almost syrupy mouthfeel, and restrained carbonation for some slight crispness.

This seems to have a lot in common with some of the barleywines I've had, with its slick body and prominent malt profile. I have an inkling this might be a pretty old bottle - as I understand it, this was in the LCBO's spring release so it's got to be close to 4-5 months old by now. This might explain the lack of complex hop flavours - but it's also possible that this is just the way it was designed. And to be fair, high abv brews are generally not my preferred tipple to begin with.

Final Grade: 3.63, a B. Southern Tier's Unearthly is a good sipper, on the hefty side, but overall a brew that I found to be enjoyable in small doses. Finishing this entire bottle is doable, but I'll probably have had more than my fill by the time the last drop is poured. I'd like to try a sample of this that I know is fresh, but there's no guarantee I'll get around to it. Pricy stuff, but probably worth it given the difficulty of finding decent DIPAs and barleywines in Ontario.

A - Beautiful bright orange. Nice clarity. Lightly off-white head with excellent retention and nice lace.

S - Sweet, with an unexpected heaviness to the nose. Woodsy hop, cookie dough, wet vegetation, and an edge of cilantro. Hint of booze.

T - Thick and malty. Honey, green wood, herbal bitterness, over brewed black tea, orange rind, and molasses.

M - Heavy and semi-syrupy, with low carbonation.

O - The dense profile feels heavy and a shade syrupy, and cuts down on the drinkability. Nice backend.

Picked up this bottle at the Giant Eagle down the street from me. Came in a 22 oz. bottle and poured into a tumbler.

Appearance: Not very much in the way of head during the pour. Maybe a thin layer of foam by the end of the pour. The color is the same as a new penny, a beautiful shining copper.

Smell: At first I get hit with a ton of citrus hops and some tropical fruit hops, then I get some pepper and sweet malt that is hiding beneath all the hops.

Taste: Upon first taste, its basically a citrus bomb to the face with a strong caramel malt backbone which compliments it very nicely. As it warms I get a lot more malty sweetness as well as the tropical fruit hops begin to become more noticeable. Finish is very peppery.

Mouthfeel: Very thick. It seemed like syrup in beer form and it threw me off. Not very pleasing but what would you expect with such a high ABV.

Overall: Its a much more malty IPA than a hoppy IPA which is what I prefer. The Mouthfeel was way too thick but the malty/ caramel sweetness was just what I like in my IPA

No enjoy by date on the bottle; but, the malt and hops bill is listed on the label. Cool...

Slow pour into a standard pint glass.

A: No head formed during the pour. The brew is a light copper color with just a touch of a golden hue. It is also very clear.

S: The aroma is mild, and consists of a grapefruit and orange citrus hops. There is also just a hint of sweet malt, and a bit of booziness, too.

T: The taste is earthy hops and a bit of citrus, along with just enough sweet caramel-like malt to take the harsh edge off the bitterness. There is also a little alcohol heat, too.

M: The body is on the heavier side of medium. It is also pretty smooth for a 9% beer.

O: A pretty good IPA. It has a pleasanlty strong earthy hops flavor, which is different from the aroma. It is a good beer, but I might not go too far out of my way to find it again. But, glad I tried it.

A - clear bubbly copper, thumb of head retained decently at half a finger, some random lacing
S - tropical fruits, peppery, light herbs, and grainy
T - strong mix of bright citrus and resiny hops, light peppery note, toasty grain and a touch of oily hop resin
M - lightish body, solid carbonation kick, alcohol heats the chest on the way down, finishes with a solid pleasant bitter
O - a fantastic yankee DIPA with an interesting and complementary hop flavour mix, big ups to andrenaline for including another great Southern Tier brew in this trade

22 oz bottle poured into a tulip at cellar temperature.

L - Pale-to-medium amber color with a 2-finger cream-colored, bubbly head. Decent retention and some patchy lacing. It’s a little cloudy but from what I can see, there’s a good amount of carbonation bubbles.

S - A strong caramel malt presence with a hint of rye. I know it doesn’t list rye as an ingredient on the bottle, but it does say “red wheat,” so maybe I’m smelling that. A pretty good dose of pineapple, peach, grapefruit, pine, and resinous hops, as well.

T - Starts with sweet caramel malt and fruity hops and builds to a bitter and spicy finish with grapefruit, pine, and peach hop flavors. Again, there’s the little hint of rye that I get in the spicy finish.

F - Medium-bodied with good carbonation, a sticky and chewy mouthfeel, and a very bitter and slightly dry and spicy finish. Hop bitterness and spice lingers for a nice amount of time. A pleasant throat-and-palate-warming sensation from the alcohol accompanies the finish.

O - This is a good DIPA. Good marks all around, but nothing really stands out for me. It could just be that I’m not crazy about the particular hop profile, but this beer seems to be a bit lacking in that department, especially for something that touts “aggressive” and “unearthly” hop usage. Still, this is very tasty, the hop (and rye?) spice is a nice touch, and the alcohol is hidden very well. A final point: there are some breweries that have a certain “taste” no matter what style you’re drinking. Sierra Nevada is one example. Southern Tier is another. I’ve had a couple of their beers (only reviewed one), and they all have something about them that resonates through all of their offerings. I enjoy when beers from the same brewery have this quality and see it as a nice signature touch.

From notes... Part of the spring LCBO release.

A – Slightly hazy golden copper colour, two fingers of off-white head, solid retention and sporadic lacing.

S – Peppery citrus hops, loads of pine and cedar, sweet alcohol, oily resin.

T – Pineapple hops off the top, super citrus notes, cedar and pine with and earthy hop finish. The caramel and toffee come through nicely to complement the hop bomb.

M – Medium bodied, smooth and surprisingly wet.

O – Incredibly tasty, loaded with flavour. These guys nailed it, what a super DIPA. I will grab another bottle or two to enjoy before they’re all gone!

Honey amber color in the tall tulip with some pleasant sudsiness. Sharp on the tongue and moderately carbonated. Flowery and spicy aroma.

Really sweet, with nonstop butterscotch and Sugar Daddy malty intensity. Very malty with a perfumey flavor and an intense nose of flowery hops. Not all that bitter, considering the category.Tastes more like a Tripel mated with a Barleywine. In a way, it's the ideal DIPA for people like me who don't think more hops are always better. Rich and spicy, strong and sweet.

More than a little hot with alcohol, but the liqueur-like flavors go right along with the ABV. From the 22 oz bottle.

Bottled on Jan 10, 2012. Consumed on Mar 2, 2012 into Unibroue glass.

Appearance: 4
Clear, golden copper body with 1-11/2 inch white head that slowly dissipates, leaving great lacing. What you would expect from IPA/DIPA.

Smell: 4.5
Initially, thick, juicy, sweet citrus aroma, particular grapefruit/tangerine. Also get the presence of piney hop notes and caramel malt with time as the beer settles and warms. With agitation, the citrus aroma perks up again. Definitely a great, above average smelling beer, esp give that this bottle had a bit of age at 6+ weeks old.

Taste: 4
Initially a touch of sweet citrus and malt is detectable and then almost immediately a huge blast of high-to-extremely high blast of bitterness explodes on the palate. A true hopbomb IMO. At this point, the bitterness is mainly an astringent mild piney-ness, with a faint notes of citrus.

Though this beer is mostly one-dimensional, there is mild amount of caramel malt detectable throughout the flavour profile. This offers a bit of balance against the very high hops presence. In the end, I feel this is just enough malt to contrast what is extremely hoppy beer, though a touch more malt sweetness could offer some improvement.

Mouthfeel: 4
Mild-moderate thickness and carbonation. A very strong astringent bitterness of hops; borderline enamel-stripping levels.

Overall: 4.5
Hopbomb with great aroma. Can see this being a bit much for some, and a little one-dimensional, but definitely satisfies a hop craving. I would seek this out again, and imagine a even more prominent aroma with a slightly fresher bottle.

A fairly dark amber color.

Minimal head that settles quickly. Sips are almost completely flat, lacking carbonation.

Minimal smell.

A bit heavy on the malts for my tastes.

The hops are present, though not very heavy, and not nearly heavy enough to break through the overpowering malt flavor.

Not terrible... but I cant say I enjoyed it myself. Be prepared for the heavy maltiness and lack of carbonation. And definitely dont expect a powerful hop bitterness just because of the hop themed design on the bottle.

Poured from a 22oz bottle, with the born on date rubbed off, into a pint glass. Appearance is hazy dark orange/amber. Smell is mostly biscuity malts, bready. Taste is even, sweet at first with a little bite bitterness at the end. Some alcohol in the aftertaste. The malt flavor and sweetness from the alcohol are more predominant here then in West Coast Imperials. IMO, not a bad beer but at $9.99 for a 22oz I prefer something a bit more hoppy.

*Bottled on 3/23 -- poured into a Gordon Biersch restaurant glass*

A: Pours a clear pale gold with half a finger worth of bubbly egg shell color foam. Lots of bubble action going on in the body. Looks very refreshing actually -- like a crisp Lager would look like. Pretty good feature.

S: The name of the beer is appropriate because this beer has an earthy hoppy aroma. Maybe a bit too malty in the back for me -- the biscuit variety. Strangely enough, the smell is rather muted. Much more so than other IPAs. Might be because I chose not to put it in a tulip glass, but then they should sell these in 12 oz. then.

T: A nice piney, earthy flavor gives way to a bitter finish. Real nice hop taste here. Malt is a bit sweeter than was foretold in the smell. The alcohol is managed surprisingly well. Yes, there is a little bit of citrus and spice dancing around in the flavor too. Good stuff. **The more the beer warms, the more a sweet citrus, fruity flavor starts to dominate** Still nice, though.

M: A smooth, creamy beer that completely coats the mouth before leaving behind a tingle-ly sensation. Some nice malty chewiness, which exposes the booze just a little. Very nice, though.

O: Pretty good offering from Southern Tier that stings the palette in a good way. My expectations were low given some other beers I've had from ST, and this blew them away. Would suggest this to people, and look forward to having it again. Would probably rank this between a 4 and 4.5.

**As this beer warms it tilts heavy into the citrus realm.

bomber served in a snifter glass.

pours a luxurious copper tone with a solid finger-plus of a beige head. retention is so-so; lapses somewhat quickly into a thin cap, but then again this is a big beer. tremendous lacing.

aromatic nose promises hops en masse - grapefruit, maybe a twang of pine - but also accompanied by a malty backbone. flavor follows and exceeds the aroma. active, rampant droplets of deliciousness flood the palate and persist through the finish. hoppy, yes - citrus-forward with a few floral/pine notes - yet rather balanced for a DIPA, as the malt is a major player. ABV listed at 11%; could of fooled me... very solid brew, dare i say delicious.

medium-full bodied mouthfeel; rich and creamy... very nice. one of my favorite DIPAs, especially when i'm looking to switch up from the west coast style.

A-pours a nice amber color with an off white head with pretty good retention.
S-a bit of citrus, nice sweet malt profile, and the oak comes trough really nicely but isn't overbearing
T-tons of citrus and pine hops with a big sweet malt profile, the oak the oak comes through the entire flavor, but really comes through in the finish.
M-medium full bodied.
O-great balance of flavors with a ton going on. Really enjoyed it and would definitely get it again

A - Pours a deep orange hue, no hint of cloudiness at all. Thin white head that quickly fades, not much lacing going on.

S - Sweet malts on top of wonderfully pungent hops. More caramel in the nose than what I'm used to for the style, but not too overwhelming. Solid hop character, orange-y and skunky in a good way.

T - Much like the nose, surprisingly balanced beer. The malt character comes out a little more than I would like for the style, but definitely good. The hops present in the nose are a little more flowery and citric than skunky on the palate.

M - Thick but well-carbonated to offset it. It's definitely representative of the style. It's clear that what you're drinking is not a light American Pale Ale, and it's not an Imperial Stout.

O - Solid beer, but nothing too remarkable. Personally, I prefer their 2x IPA to the Unearthly. I think that's more personal preference towards more hop-forward DIPAs.

Finally had a chance to enjoy a bomber of this last night. I expected a big, bad, bold beer but this didn't quite fit that bill. The alcohol was quite present and this had a nicely balanced mouthfeel but this reminded me more of a Barleywine than an overly-hopped IPA. That being said, this was an enjoyable beer that required a long session to fully enjoy.

This had a very nice pour to it, with a rich amber-almond hue and a good head. The lacing wasn't much of anywhere to be seen and the aroma was quite strong. Lots of booze and barley which were reinforced by some pine, metal, oak, and ash underneath. This was nearly clear when held up to the light but there was a bit of sediment near the bottom of the bottle. I had no idea if that was intentional or not although I couldn't taste it at all. Underneath all of this was a very earthy mouthfeel that made this beer heavier than I thought and required me to take my time as I enjoyed it.

The alcohol melded nicely with the rest of this beer but make no mistake - it's there and shouldn't be ignored! This was a beer that wasn't brewed for the faint of heart in mind but those who love Southern Tier's offerings and something earthy, heavy, and complex will not be disappointed here. There's enough in this bottle to keep on occupied for a full night.

Poured into a snifter. No dates on it so can't say how fresh or not it is. Looks decent, if thick. And thick it is. I spilled a drop or two, my hand were sticky :-/

Aroma is malty, somewhat hoppy and just heavy. It's not bad but doesn't appeal much to me. Taste is similar... very sweet and quite bitter. Thick, cloying, boozy. It's big, not meant in a good way.

22oz bomber into a Duvel tulip

A - deep, orange. One finger of white head disappears quickly.

S - very mild hoppy aroma. Extremely faint nose (maybe bad or past it's peak). No lacing evident.

T - very boozy. Hops overpowered by alcohol. Bitterness comes thru mid way but still less than expected.

M - coats the mouth nicely. Very smooth.

O - the rumored 150 IBUs don't give the bitterness I had anticipated. Alcohol is pronounced but not overpowering. A pleasant warmth grows from the bitterness. Virtually no bite. A good beer but not an example of the style I would seek out ahead of the rest of the pack. Middle of the road, maybe up middle-class.
