Appearance: Dark orange, with some red highlights - decent size white head, leaves some nice spots of lacing - very clear
Smell: Hoppy and malty - lots of citrus - not particularly distinct - oranges and grapefruits - sweet, oily pine - caramel and amber malts - very sweet, as unfortunately expected - leafy mint
Taste: Sweet and hoppy - somewhere between a DIPA and an imperial amber - sweetly malty with lots of caramel and amber malts - biscuits with powdered sugar - overripe oranges and sweet grapefruits - oily pine and mint - about as sweet as fruit punch, with about average bitterness, and some booze
Mouthfeel: On the heavy side of medium, nicely carbonated, a bit cloying but not awful
Overall: Good, better than I expected
Southern Tier has earned quite a reputation for making some really sugary beers. Personally, I think this works for some of their stouts. But I was dreading Unearthly. To my surprise, this is more pleasant that I remembered. Yes, it's overly sweet, but it's worth a try.

Poured from a 22 oz into a fluted glass
Color is a beautiful light amber/copper, with a nearly-white, fairly thick head. Disperses fairly quickly, but leaves behind some beautiful lacing.
Aroma is strongly hoppy - woody, citrusy, and beautiful. Slight alcohol aroma, but mostly hops, with a little bit of sweetness for balance.
Flavor is bitter, with huge hop flavor - pine and grapefruit are the strongest characteristics. Some good sweetness to attempt to balance, but that's not happening. There's a slight bit of alcohol flavor that comes through at the end.
Mouthfeel is full, with low to medium carbonation, and some alcohol warmth.
Overall, a great imperial IPA, and I hope to see it on tap somewhere soon.

DOB:09/04/12 (one month old), 22 0z. bottle poured into a ST Tulip
A- Off-white 1.5 finger head forms,slightly cloudy, amber/reddish in color, some decent retention and little lacing
S- Caramel malts, pine and a little cherry and tropical citrus, aroma reminds me of GL Nosferatu with some pine added, alcohol as it warms
T- Nice caramel malt sweetness, a nice sharp bitterness, resinous pine, flavors linger in mouth
M- Full and creamy, coats the mouth, carbonation carmael sweetness and a lot of bitterness hit the tongue and linger nicely
O- A really nice IIPA, alot of balanced flavor with a sharp hoppy bite to it, I recomenend any IPA fan to try this one

A: copper orange color with a good amount of haze and 1 finger of a bright white head some alcohol legs on the glass
S: leads with a very resinous earthy dank hop smell followed by lots of oak from the barrel although there was a fairly high abv there wasn't any smell of alcohol on the nose
T: bitter hop flavor up front followed by some vanilla and bourbon from the oak a very interesting take on an ipa and barely any alcohol on the taste
M: fairly heavy mouthfeel the bet coats the mouth well with a great finish
O: this was a great beer my first barrel aged ipa although ipa's are meant to be fresh the barrel aging and the dry hopping that would have to go along with it adds a great complexity which makes this an outstanding beer

This was a draft at wine 101 in wake forest, NC.
This pours a lovely amber with amazing clarity, would be a 5 for appearance but it does no have a huge head or any real lacing to speak of. Smells sweet and faintly hoppy, tastes really malty upfront then Followed by hops. Could use a little more carbonation but this is a great beer.

Poured into pint glass, color is copper with off white head that is pretty dense and laces very well - color is a minus to me and the thinner head presentation as well.
Smell is resin, pine, citrus hop flavors blended well, followed by some solid caramel sweetness and lighter biscuit malt notes.
Taste is sticky, resiny, pine and citrus bitterness upfront quickly followed by some decent malt sweetness - this beer really hides the strength, there is some alcohol coming through, but the sweetness really over powers.Its just a touch to much for me, i like a big ipa to be a bit dryer, less caramel
Mouthfeel is a bit cloying, again from the pretty strong caramel like sweetness and strong bitter flavors - it really sticks to the tongue and checks.
Overall, this beer starts well and has some amazing hop presence but maybe a bit too much bitterness with too much sweetness leaves a less pleasant flavor lingering.

A: A hazy dark orange/amber body with a soapy, thick, beige head. The head dissipated at a moderate to slow rate, leaving some awesome lacing.
S: This is straight up east coast style pine IPA aroma. Caramel malts balancing it out and holding it up well. Lots of earthiness and a great floral character.
T: Big on the malts. I get mostly caramel sweetness. There's lingering, bitter stickiness on the back. Maple syrup, pine. Very complex beer.
M: Heavy body, coating mouthfeel. Little carbonation.

Pours a deep dark orange amber with an average size white head, that quickly fades leaving behind a small white cap of foam and sticky lacing on the side of the glass.
Aromas begin with a small bit of citrus, but much more of a piney hop presence. There is a slightly sweet, grainy and honey maltiess that trys to poke out but the earthy and piney hops overtake it.
The tastes begin with that sweet honey maltiness but the pine and citrus immediately join the show and punch you in the tongue. Oodles and oodles of herbaceous, piney, earthy and citrus hops. Really too overpowering and the bitterness overtakes all malt flavor.
Mouthfeel is medium-full bodied with medium carbonation. Finish is palate wreckingly bitter and a bit of alcohol pops out to dry it out even more as it warms.
Overall this is not my style DIPA. I prefer ones with a more balanced hop profile. Maybe I also just don't like all these extremely herbal/floral hops in such a great amount. Either way, I will pass on this going forward.

Growler served into a Southern Tier tulip.
A - Pours a dark amber with 2 fingers of dense off-white head. Pretty nice lacing left at the top.
S - Sweet cereal grain, doughy bread, candied orange and grapefruit citrus, cotton candy, floral alcohol.
T - Sweet bready malt, caramel, grapefruit syrup. The hops start coming through in sweet citrus flavor and bitterness doesn't come until the end. Sweet pine resin comes out as it warms. Finishes sweet and semi bitter.
M - Thick body, chewy syrupy feel, sweet.
This is a sweet tooth DIPA. The thicker mouthfeel doesn't help for said sweetness but it's never to the point of cloying. It doesn't always have to be mouth numbing bitter every time and this fits the other side of the spectrum. The hops are there but they can't fight the heavy handed sweetness. That being said it works for the "BarleyWine meets DIPA Cleche". Their regular IPA on tap was my favorite beer from this brewery.

Unearthy begins as an exciting burnished orange amber color which is quite deep in tone.
There is very little in way of carbonation and the foamy cap fairs no better. The foamy head is light and thin with some clinging lace at the edge.
Aroma was mostly sweet caramel malts and alcohol.
Hops are absent as far as I can tell. Perhaps I have a stale beer. You would think that an imperial IPA would have considerable hop wallop both in aroma and taste.
Taste is finds sweet toffee malts and warming alcohol. Very light hop flavor.
Drinks fairly smooth and is quite dry and bitter lingering deep into the aftertaste,
I would of liked to have seen more hops but it's possible this is stale and out of date.

Quite tasty. Hazy copper coloration. Smells of brandy and caramel. Taste is complex with some oak-like notes with a boozy finish (which I don't mind at 11%). Has enough hops for me, but I could see hop-heads being slightly underwhelmed. Overall, a tasty, unique take on IIPAs.

12oz bottle poured into a NB globe. No bottle dating but it’s part of a recently released Super Pack so I have reason to believe that it’s quite fresh.
A: Poured silky smooth. A white, 1 1/2 finger head sits on top of a very clear reddish brown body. Head settles to a decent cap that provides a nice creaminess to every sip. Decent lacing and alcohol legs throughout. It's a great looking beer.
S: Just tons of sweet bready malt, pineapple and citrus. Also some earthy vegetal components. I’m more familiar with the oak-aged version of this, so I almost can’t help associate this aroma with some wood notes as well.
T: Sweet, sweet, sweet...and what isn’t sweet is tongue-assaulting bitterness and alcohol. As I mentioned when describing the aroma, there’s something earthy about this that is putting me off. Quite a bit of alcohol burn shows up mid-palate and drives on through to the finish.
M: Body is between medium and full and the texture is somewhat oily. Carb is fine for the style. Drinkability is relatively low. This is a big DIPA, but the mouthfeel is not what I prefer and the alcohol isn’t hidden very well.
O: I love most of Southern Tier’s beers, but this is not my cup of tea. The best DIPAs showcase hops, complement with malt and sneak in some alcohol. This is mostly malt and alcohol. I’m glad I waited until this was available in 12oz bottles because 22oz of this would be way more than I would want in an evening. Just too cloying, alcoholic and ...I don’t know...just not for me.

Served on tap in a 10 oz chalice glass
Appearance – Served a orange/amber color with a one finger white head. The head faded fast to give a decent level of lacing.
Smell – The aroma is heaviest of a sweet and citrus hop aroma. The citrus is mainly grapefruit in nature with the sweet being of a caramel aroma. Mixed with these are other hop aromas of a earthy and piney nature.
Taste – The taste begins with some caramel sweetness and a good dose of bread and a citrus hop flavor. As the taste moves on the bready flavor grows stronger and is joined by more hops of a earthy and pine nature. Toward the end the earthy flavors overwhelm the citrus. With this larger earthy taste comes a nice oaky flavor which in the end creates a woody taste that is left on the tongue.
Mouthfeel – The mouthfeel is slightly higher than average in thickness with a carbonation level that is rather moderate. It is rather fitting for the brew’s oaky and hoppy flavors; allowing all the tastes to sit on the tongue and be experienced, but yet giving just enough carbonation to give an invigorating mouthfeel.
Overall – A tasty more earthy and woody flavored IPA. A nice one to try.

Unearthly pours a hazy copper color, with a nice white head. Their is a strong floral aroma, with hints of sweetness. The taste contains a strong floral/hoppy flavor, with a strong bitterness. A good strong flavor, very bitter, but not as dry as it should be. Overall a very nice IPA, I found it a little different with a lack of a dry finish, and hints of sweetness.

Pours a hazy, medium amber color with a fluffy off-white/light tan head. Retention is poor but some decent lacing, nevertheless.
Smell is a well-balanced blend of malt, hops, wood, smoke (unexpected) even some vanilla.
Taste is amazing! So fully flavored, rich and delicious. Malt, hops, whiskey, wheat, caramel, wood, smoke all incredibly well balanced.
This is a big, full flavored, full-bodied brew with a medium effervescence. If I hadn't know before, I would have no idea this was any variation of an IPA. I'm not an IPA guy but this is a massively good beer, not a west coast-style hop monster, a truly well rounded and delicious, multi-note concoction. This went absolutely brilliantly with a spicy red curry. It is so good it would be just as good all by itself. Get this and you will be so happy.

New 12oz bottle poured into a snifter.
A: Pours a very clear golden amber with a thick 1 finger white head. Leaves a little bit of lacing on the sides.
S: Blooming hop aroma with earthy and floral tones. Very sweet malty backbone. Slight alcohol notes.
T: Less hop-dominant than I would have expected. A sweet malty presence with an earthy hop backing. One of the least hoppy double IPA's i've had but still a very good one. I like how most of the hops appear on the back-end.
M: Thick and syrupy mouthfeel, on the low end of carbonation. Has a little bit of that nectar feel. Alcohol is very well hidden.
Overall always been a favorite of mine. I think the 12oz bottle is more appropriate as this is a doozey to drink more of.

Bomber picked up at the LCBO; no packaging date. I don't usually expect to find stuff from Southern Tier on the shelves around here - the only other one I've managed to find is Pumking - so spotting this one raised an eyebrow. Poured into a big wine glass.
Pours a cloudy golden-apricot colour, generating only a modest, one-finger layer of creamy foam at the surface that fizzles away over the next minute or two. The only remnant is a thin, soapy collar around the edge of the glass and some scant lacing. Mild aroma with caramel and butterscotch malts, as well as notes of wet cedar, orange and peaches. Pleasant, but it could stand to be a bit bolder.
Perhaps I spoke too soon - this is one bold-tasting brew, with tons of earthy bitterness. Toffee and caramel sweetness mingles with a range of fruity flavours - pineapple, orange, dates and plums all come to mind. The finish is herbal, piney, very earthy and bitter, with the ethanol a loud contributor. These flavours linger in the aftertaste. Full-bodied, with a slick, oily, almost syrupy mouthfeel, and restrained carbonation for some slight crispness.
This seems to have a lot in common with some of the barleywines I've had, with its slick body and prominent malt profile. I have an inkling this might be a pretty old bottle - as I understand it, this was in the LCBO's spring release so it's got to be close to 4-5 months old by now. This might explain the lack of complex hop flavours - but it's also possible that this is just the way it was designed. And to be fair, high abv brews are generally not my preferred tipple to begin with.
Final Grade: 3.63, a B. Southern Tier's Unearthly is a good sipper, on the hefty side, but overall a brew that I found to be enjoyable in small doses. Finishing this entire bottle is doable, but I'll probably have had more than my fill by the time the last drop is poured. I'd like to try a sample of this that I know is fresh, but there's no guarantee I'll get around to it. Pricy stuff, but probably worth it given the difficulty of finding decent DIPAs and barleywines in Ontario.

A - Beautiful bright orange. Nice clarity. Lightly off-white head with excellent retention and nice lace.
S - Sweet, with an unexpected heaviness to the nose. Woodsy hop, cookie dough, wet vegetation, and an edge of cilantro. Hint of booze.
T - Thick and malty. Honey, green wood, herbal bitterness, over brewed black tea, orange rind, and molasses.
M - Heavy and semi-syrupy, with low carbonation.
O - The dense profile feels heavy and a shade syrupy, and cuts down on the drinkability. Nice backend.

Picked up this bottle at the Giant Eagle down the street from me. Came in a 22 oz. bottle and poured into a tumbler.
Appearance: Not very much in the way of head during the pour. Maybe a thin layer of foam by the end of the pour. The color is the same as a new penny, a beautiful shining copper.
Smell: At first I get hit with a ton of citrus hops and some tropical fruit hops, then I get some pepper and sweet malt that is hiding beneath all the hops.
Taste: Upon first taste, its basically a citrus bomb to the face with a strong caramel malt backbone which compliments it very nicely. As it warms I get a lot more malty sweetness as well as the tropical fruit hops begin to become more noticeable. Finish is very peppery.
Mouthfeel: Very thick. It seemed like syrup in beer form and it threw me off. Not very pleasing but what would you expect with such a high ABV.
Overall: Its a much more malty IPA than a hoppy IPA which is what I prefer. The Mouthfeel was way too thick but the malty/ caramel sweetness was just what I like in my IPA

The carbonation was a bit screwed up, but oh well. Smell is sticky and honey sweet (exactly what I expect after having the oak-aged). The smell also holds a bit of spicy hops as well. The taste like has a very odd hop flavor. Its like a spicy, herbal, almost peppery feeling. The only other place Ive seen it is a local brewery (Carolina Brewery Firecracker Pale). The malt is much mroe subdued than I expected (in a very good way).

Had this on tap at Bulldog in Yurakucho, Tokyo. Poured into a tulip glass. Cloudy bronze brew with a thick crepe-looking head. Amazing rich bitter hops with a sweetness of miso paste and sweet caramel malts. Aroma matches following the hop side more closely. The lacing slides down the glass and glitters like a fireworks shower explosion. Sweetness of miso and caramel peanuts remains in the aftertaste with a bit of excess gas. Overall, an amazing strong IPA with its 125 IBUs that will lead me to more Southern Tiers. Easily one of my favorite IPAs ever.

No enjoy by date on the bottle; but, the malt and hops bill is listed on the label. Cool...
Slow pour into a standard pint glass.
A: No head formed during the pour. The brew is a light copper color with just a touch of a golden hue. It is also very clear.
S: The aroma is mild, and consists of a grapefruit and orange citrus hops. There is also just a hint of sweet malt, and a bit of booziness, too.
T: The taste is earthy hops and a bit of citrus, along with just enough sweet caramel-like malt to take the harsh edge off the bitterness. There is also a little alcohol heat, too.
M: The body is on the heavier side of medium. It is also pretty smooth for a 9% beer.
O: A pretty good IPA. It has a pleasanlty strong earthy hops flavor, which is different from the aroma. It is a good beer, but I might not go too far out of my way to find it again. But, glad I tried it.

22 oz bottle poured into a tulip at cellar temperature.
L - Pale-to-medium amber color with a 2-finger cream-colored, bubbly head. Decent retention and some patchy lacing. It’s a little cloudy but from what I can see, there’s a good amount of carbonation bubbles.
S - A strong caramel malt presence with a hint of rye. I know it doesn’t list rye as an ingredient on the bottle, but it does say “red wheat,” so maybe I’m smelling that. A pretty good dose of pineapple, peach, grapefruit, pine, and resinous hops, as well.
T - Starts with sweet caramel malt and fruity hops and builds to a bitter and spicy finish with grapefruit, pine, and peach hop flavors. Again, there’s the little hint of rye that I get in the spicy finish.
F - Medium-bodied with good carbonation, a sticky and chewy mouthfeel, and a very bitter and slightly dry and spicy finish. Hop bitterness and spice lingers for a nice amount of time. A pleasant throat-and-palate-warming sensation from the alcohol accompanies the finish.
O - This is a good DIPA. Good marks all around, but nothing really stands out for me. It could just be that I’m not crazy about the particular hop profile, but this beer seems to be a bit lacking in that department, especially for something that touts “aggressive” and “unearthly” hop usage. Still, this is very tasty, the hop (and rye?) spice is a nice touch, and the alcohol is hidden very well. A final point: there are some breweries that have a certain “taste” no matter what style you’re drinking. Sierra Nevada is one example. Southern Tier is another. I’ve had a couple of their beers (only reviewed one), and they all have something about them that resonates through all of their offerings. I enjoy when beers from the same brewery have this quality and see it as a nice signature touch.

I grabbed a grolwer of this from my local whole foods in Northern Virginia--I got the first tap off this keg..
A- It poured a deep amber color and was very clear. There was a creamy 1 inch head that quickly disappeared after the first sip.
S- A very sweet smell of pineapples, figs, and cream. There is a slight hint of syrup there as well.
T- As the beer hits the tongue there's a distinct flavor of fruity hops; it's a combination of pineapple, orange, and raisins. The beer then develops a syrupy, toffee-like sweetness not unlike a barleywine. It finishes with a subtle, bitterness of alcohol. For a beer this alcoholic, there is very little trace of the alcohol and what you do taste is rounded and not sharp or acidic.
M- Medium to heavy with a bit of sugariness left on the finish. There is a ripe wetness to the end of the beer.
O- This isn't the textbook DIPA, with a fairly weak hop profile, but it's a good beer. I almost think of this as a barleywine: it's sweet and bold and heavy with a very subtle bitterness on the finish. As an example of the style, I don't think I could recommend this, but for a big, bold, sweet beer that gets you hammered, it's worth the bomber (or growler if you can find it).
