It's not what you were expecting. But once the momentum builds, it's electrifying to roll where it takes you. A surge of inspiration takes hold and sends you careening towards something new, something even better. There's no turning back now...
This is Witbier gone rogue. Refreshing grapefruit citrus character leads into a soft wheat body, finishing with subtle hints of spicy cardamom.
Our beers are unfiltered, some haze is natural.

650ml bottle, not sure what the desert highway police chase imagery on the label has to do with anything here.
This beer pours a very hazy, very pale golden straw colour, with two fingers of puffy, loosely foamy, and rather bubbly dirty white head, which leaves some chunky calving iceberg lace around the glass as it genially sinks out of sight.
It smells of bready, crackery wheat malt, perky orange and white grapefruit citrus, indistinct Indian curry spices, zippy yeast, and a plain earthy and leafy hop bitterness. The taste is softly edgy wheat malt, heady red grapefruit, lemon, and orange citrus pith, white pepper and cardamom spice, a still good to go and mildly phenolic yeastiness, and further, if understated, pear, apple, and underripe kiwi fruity notes.
The bubbles are pretty restrained, but in a sort of fury-based, yin-yang frothy manner, the body medium-light in weight, and mostly smooth, just a minor tug from yeast and spice alike providing that late-night dripping faucet effect. It finishes trending sweet, the broad-chested wheat malt, now muddled spices, and fading citrus notes leaving a proper remains of the day.
Overall, one agreeable witbier, the choice of adjuncts hardly out of line from the typical old-world standards (at least from a new-world perspective). Challenging, but not particularly so, and in the end, a pleasure to drink, for when the form of the waves is just right, or something, I don't fucking know.

Stunning cloud of yeast of dark straw color and no activity. Weak foamy white 2 finger head, lasting around 2 minutes, with poor legs and swirl reaction. Flavors of cardamom, grapefruits, lemon, wheat, barley, and floral hops. Slick and oily medium to full body with moderate prickly carbonation. Medium strength finish, mildly bready, more fruity, with a minty and spicy feel. The spices are interesting yet slightly overwhelming the bread side of the witbier. Freshness is alright, a tad too flat. Overall good quality craft.

British Columbia review dump.
A- Tall can goes into my becher with a hazy yellow hue. The head forms to one finger high with a frothy texture and fair retention. A medium belt leaves small webs of lace.
S- Cardamom is on swole. Whole cardamom pods and the spiciness that comes along with that leads into intense grapefruit zest, wheat bread and pink peppercorn notes. Intensely spiced.
T- Settles down a bit here and some balance is restored from the intense spice bomb aroma. That being said the cardamom leads the way with a fresh spicy flavor. Following that are ruby red grapefruits, peppercorn, wheat bread, vanilla sweets, cooking herb and clove notes. Strong flavors all around.
MF- Light bodied with a bit of a creamy consistency but on the whole it comes off a bit thin. Medium level of bubbles and the spices linger on the palate with a peppery bitterness.
A cardamom bomb but a palatable and tasty, fresh one. The cardamom slowly fades and all of the aforementioned things start to become more forward. If you like tasty spices give it a try.
