Notes:
The sixth edition of the De Proef Brewmaster’s Collaboration Series is our first blended beer. Legendary brewer, Alan Sprints of Hair of the Dog joins Dirk Naudts at De Proef to create this unique bottle conditioned beer. Flanders Fred is a blend of Flanders-sourced lambic with a collaboratively-brewed version of the famous Hair of the Dog Fred.

The result is a deep golden ale topped with a creamy off white head. The nose is complex with notes of lemon, pine, tropical fruits and spice. The palate is rich and layered with toffee, apricot and almond, balanced by some green apple, a hoppy bitterness and barnyard funk.

Please enjoy Flanders Fred with food and friends. This beer should pair very well with many cheeses, roasted vegetables and grilled meats. We believe this bottle will continue to evolve beautifully over the next few years, adding a subtle blending of the flavors.

Served in a tulip

The liquid poured a cloudy, ruddy, rusty color and was topped by a frothy, light tan, two-finger crown. Outstanding head retention and fantastic lacing. Thick, drippy blankets coated the entire glass.

Lots of interesting things happening in the nose. I definitely could not peg the style, which made sense since this is a blend of two vastly different beers. A Belgian-like yeast quality was apparent. Some sweet cherry notes came through as well. Hints of raspberries. Slightly tart and funky. Somewhat lemony. As the beer warmed, the Flanders Red character came forth. More cherry and distinct oaky/barrel notes. Touch of balsamic vinegar. A subtle, brown sugar-like sweetness was also noticeable.

The flavor profile was drastically different from the nose. It was much sharper and more simplistic. The unblended lambic character dominated. There was a touch of sweetness on the front end before the bitter lemon rind notes took over. Unpleasantly tart and acidic. Belgian yeast notes were apparent. Touch of barrel and funk. Grapefruit pith. Grassy hops appeared on the finish. Bitter lemon rind carried over as well.

The mouthfeel was definitely the most impressive aspect of the beer. It was super soft and fluffy. Slick, creamy and smooth on the palate. The liquid contained a crisp, moderate effervescence.

I really enjoyed the nose on this beer, along with the mouthfeel, but the flavor profile was just too bitter and acidic for my liking. This reminded me of an amped up, American hopped Berliner Weisse that lacked any notion of subtlety. Perhaps this beer was better fresh.

Appearance. Pours a hazy amber-orange with half a finger of white head that leaves some bands of lace.

Smell. Sweet ripe sour cherries, old dank wood, peach and pineapple, and some nice sweet funky hay.

Taste. Pineapple and cherries, funky damp wood, lemon rind and some bitter grassy hops in the finish.

Mouthfeel. Medium body, medium+ fine carbonation.

Overall. Wow, if this is a Belgian strong pale, it's the best I've had. Seems like a cross of several styles to me but one thing's certain, it's a damn fine beer.

A: Pours a beautiful garnet color. Nice head and some decent lacing.

S: Tart smelling with nice complexity. Smells musty and has some stone fruit characteristics.

T: Maltier than expected in taste. Decently sour with much of the Fred base shinig through. Interesting to say the least.

M: Medium bodied. Nice head and lacing throughout. Pleasant.

O: An above average beer but not something I need to return to often. Might improve with age but that's a gamble.

Thanks to sonicalligator for sending me this one! The color is amber/orange. There is a bit of haze. There is a nice foamy half inch head.

The aroma has some hint of tart cherry. There is a tiny hint of mustiness.

The taste is dry, which caught me a little off guard considering the larger body on this for a wild ale. That is perhaps due to the high carbonation. There is a nice slightly lemony aftertaste.

This is a very good wild. It's dry, crisp, and refreshing. It doesn't stand above the rest, but it's delicious.
