750ml bottle, opened for the New Years countdown and split with some friends. A loud pop of the cork followed by a nice pour into a Cantillon flute.
Infinium looks nice coming out of the bottle. There's something very appealing about the color, which lies in-between a straw and light gold. Notable carbonation but no real head retention or lace. The head was gone within a minute of 2011.
The smell is nothing like what I expected. It's pleasant enough, but seems out of place in a Brut biere. The first thing I got was banana and tropical fruit, then some wheat and yeasty scents. The fruit is nice but there's really nothing out of the ordinary, and I expected it to smell drier, more estery and less boozy.
The taste is bready and has some hefeweizen characteristics. Next, some fruit including banana and peaches dance along with crackers and grass. A bit of corriander and clove along with slight black pepper hit just when the alcohol peaks then fade away. This is just not cohesive and Deus puts it to shame. Finishes sweet with notable booziness.
Mouthfeel is sparkling and drinkability is high for a 10.3% that, odds are, is being shared and not consumed by one person in one setting. I can't help but feel like this beer was a dissapointment. I thank Sam Adams and Weihenstephaner for the effort, but I wish they didn't hype this to be something new. It wasn't that unique except for the price tag.

750 ml bottle, vintage 2011. Thanks to my homie mfndsvp for sharing this bottle. Served into a Shock Top hefeweizen glass. My second review of a collaboration beer on BeerAdvocate.
A - Gentle pour yields like five fingers of ridiculous head. Body is a light cloudy golden orange color with tons of bubble action rushing to the top.
S - Has a fruity pineapple nose, slight hint of Belgian yeast / funk in there also. Has a very unique smell to it, I will give it that.
T - Feel is carbonated, some tart citrus reminiscent of fresh juicy pineapple, Belgian yeast, touch of hop bitterness, and some alcohol warmth, but the 10.30% abv is masked well. Finishes slightly sour.
M - Feel is juicy, fruity, bitter, and dry in the finish.
Overall, a unique beer experience, probably one that I won't soon forget. Glad to have gotten to try it, since I wasn't about to take the plunge for 20 dollars. Not a beer I will be having again any time soon, especially considering it's price tag, but this is one of the more far-out creations from the Boston Beer Company.
