Could not pour foamier if it tried, you get an inch of liquid into the glass and the foam is already threatening to spill over. Once you start to pour super carefully you can get 3/4 of the glass full even if it looks like there's a puff pastry floating on top. The foam is very delicate and microcosmic and takes some time to finally evaporate, this without much lacing. Hazy red amber to orange color, glows warmly, close to complete opacity. Demure nose of apricot, pear, cherry fruit and hard toffee for sweetness, peat moss and fresh topsoil for bottom, peppercorns, lemon peels, tree bark and old cloves, hint of pork rinds, it's like a potluck dinner where the dishes get placed on the table randomly and without a guiding hand. Medium-bodied, the carbonation in the mouth is nice but shockingly short-lived for all its exaggeration through the pour. As in the nose, no one element sticks out above the others, however, here they dialogue better. The clove, nutmeg stays within bounds and there's no unnecessary spiciness. The grapefruit, orange citrus doesn't bite deeply. That peat moss, straw, hay and meadow dampness feels very natural in the whole. I can't find anything here that expresses a truly sweet feel but the apricot, grape, cherry fruit as well as the hard dark chocolate chunks do what they're paid to. A beer that is entirely a whole rather than the sum of its parts, grows on you with each sip, especially if you let it set the tempo. (Bottled 3/27/09.)

A-Beautful rust/amber color with a thick tan foam that aderes to the glass. Beer is opaque but not cloudy.
S-I couldn't get too much on the nose..not sure if my sniffer is broken or if the beer just doesn't have much. Did, of course get the piney hop smell that one would expect from a Belgian IPA.
T-What the smell lacked, the taste totally made up for. Nice hop zing, with a nutty flavor and carmelized sugar and fruit.
M-Oily hop feel, but nice overall.
D-Definitely could have a few of these - nice zing, but doesn't totallly take your tastebuds out of commission.

750ml bottle from the original bottling. Bottled Apr 22 2009. Super loud cork pop and pours into my glass a slightly hazy amber orange with a ton of carbonation creating a massive four finger head that's slow to recede. Aromas are big on hay and deep Brett funk upfront. Bright floral hops jump into the mix with crisp toasty malt and a light caramel. The Brettanomyces are the star of the show here though..very vibrant and earthy.
First sip brings smooth, lightly toasted malt with a bit of caramel along with a fusion of Brett funk and resinous, floral hops. Earthy notes with hay and a tart twang. Estery goodness as the Brett has really blossomed here. Flows down with a twist of hoppy bitterness. Finishes smooth with a lingering Brett funk. Really quite lovely.
Mouthfeel is on the light to medium side with tons of fast moving bubbles. I personally would have liked a bit less carbonation but I am guessing that the yeast just wouldn't have it that way. Overall, this is a wicked, wild, funky twist on Hop Devil and I am enjoying it thoroughly. I will have to track down another bottle or two, with the low abv it's easy to put away a 750.

750 ml poured into a Guinness Imperial Pint. Bottled on date of March 27 2009.
A - Clear red-orange amber color with an enormous tan head. Strong retention that slowly turned rocky as it went down leaving large, clumpy lacing.
S - Strong yeast and hop aromas permiating through the dense head. Lots of barn-yard aromas imparted by the brett. yeast. Stable, straw, and musty blanket funk (why does this actually smell good in beer? haha). Hints of pine and citrus but that take a back seat to the large citrusy-fruity smells of a few drops of pineapple and mango wedges. Mild but apparent malt backbone holds the incredibly complex smell all together. Wow.
T - A fantastic medley between the funky barnyard flavors of straw and musty blanket from the brett. yeast with the fantastic fruity and floral characteristics from the hops. Like the aroma, everything is held together with a robust, caramel-roasted malt backbone that lingers on the finish. Slight spice of alcohol finishes off the complex flavor.
M - The alcohol lends a slight spicyness to the well carbonated, slick, and medium-bodied brew that finishes slightly dry with a mild bitterness.
D - This is my first [while writing the review] of the 750 ml. I may have a hard time finishing it but it's damn delicious.
[Note: I polished it all off and really enjoyed every sip.]
That was a fantastic beer to have for my 200th review. I was a little scared of it to be honest but it turned out to be great, a fun beer to review due to its serious complexities, and got me hammered while watching The Fountain.

Your funk is the best

Poured from 750 into wide snifter. Corked + caged. I like the thick-neck bottle.
A- Ruby gold strawberry blonde amber, very nice coloration and a head that lasts for days. One of the most prolific and fluffy heads I've ever seen.
S- Fuuunky. Nice hop profile, What is that I smell? The brett.. the brett? It's got to be the brett, boldly asserting its presence.
T- I like it. No, I love it. I adore it. A solid hop profile (coming from HopDevil), this beer is multi-dimensional. The yeast/brett is powerful, funky, tasty, heavy, bold, and in perfect fashion. This is a world-class beer... Got to give it to Victory for setting the beer apart from most others.
M- the best of both worlds. This is a perfect hybrid... a fantastically balanced beer that is expertly crafted. Hops are crisp but are not too strong, which allows for the funk to come on in and settle on your tongue.
D- Really high. This one's tasty... don't sleep on it, it's a winner.

A great meld of hops and Belgium funk. A bit surprising, maybe unusual, but Brettanomyces do wonders to the hoppy profile of this ale.
Presentation: 750 ml corked bottle. Simple and forgettable front label design with the hop devil over a Belgium flag color palette noting bottle conditioning. Back label describes the style and intent of the brew rather well. Shows an illegible stamped bottling date (maybe jan 10 09, but it is half erased.) and Alc. by Vol. (6.7%) Poured into a tulip glass.
A - Medium amber hazy pour with an extraordinary frothy head. Great retention and rich lumps of lacing as it progresses.
S - Rich hoppy funk. A tart profile over citrus and piney backdrops with some hints of malt embracing back again the Brett character.
T - Tart apple feel, raw cider at times, with a soft mustiness woven with some malty character that is embracing a crisp and assertive hoppiness, citrus peel.
M - Medium body with lively carbonation, a crisp, semi-dry and biting finish.
D - It grows on you. If one appreciates what Brett typically does or is willing to accept it and play with it for a while, this is a rather luscious brew.
Notes: This assertive funk hoppiness might be quite unusual, and maybe not for everyone. In fact, if the live yeast is not of one's liking this could be tough, but actually it works rather well, and feels very rich. It's a complex and strange brew, probably an acquired taste but the rotting fermentation is actually on a great hinge to unleash tart flavors woven with solid hoppy character. Not sure who I can share this with, yet, but it sure is a memorable brew.

Had this in the bottle a few months back and wasn't crazy about it, but now having had it on tap a few times, I am really getting to love this stuff.
It's a nice orange color with a reasonable head. The smell is a nice mix of citrusy hops and Brett.
The taste is much like the smell. It seemed that in the bottle I had there was some sort of unpleasant disageement bewteen the hops and Brett that resulted in a bizarre clash of off flavors. But, what I've had on tap is really a great combination of the two, nicely balanced. Two flavors I love, getting along just fine. Sweet malt, citrusy hop along with the funk...and it's a good amount of funk, but not over the top.
Body was medium-light and very drinkable.

Pours a nice amber in color with a huge, foamy off-white head. I could barely get any beer in my glass because of the head.
The smell is hoppy, earthy and tart. Distinctly Belgian.
This is a very interesting beer. It's hoppy and bitter while also dry and crisp and tart. It is also very different from Hop Devil and shows how much of a role in brewing yeast plays.
The body is solid.
Overall this is a great beer. It's a funky IPA: A beer with a new layer of complexity.

bottled on apr 22, 2009. from notes, tasted in june 2009. poured into duvel tulip.
deep orangey amber. gem-like and clear w/ 2cm decant. huge 4-finger head; fluffy, puffy and off-white. slowly fades w/ meringue, to constant thin puffy layer and creamy ring. several decently-sized, consistent and distinct rings of lace all the way down the glass.
aroma: citrusy hops, pine hints, with subtle touch of brett. more like musty, wet hay. fruity esters of both citrus and apple, with that solid munich malt and caramel base typical of hopdevil. more pine in back.
taste: very different beer! hoppy, citrusy american varieties, with caramelized malt base and fruity esters. but dried out by that brett character, with a hint of must and leather. really makes the moderate to bold hop bitterness snappy and crisp, along with the phenols.
medium body, smooth, with resins for light astringency in the finish, but crisp w/ phenols and an otherwise moderate, fluffy carbonation.
hard to say if this is really a "belgian IPA", but i like it - though keep in mind i LOVE both the original hopdevil and brett in general.

Picked up a 750ml (caged and corked) bottle in a trade with Dawson's Liquor in Severna Park, MD and poured it into a Stone branded snifter - thanks fellas!
A: Pours a mildly hazy copper hue with a solid three-finger fluffy white head leaving a ton of lace in its tracks.
S: Major yeast funk - musty leather and wood, some sweet malt, fermented fruit with only a small amount of earthy hop in the mix - the yeast funk is very dominant, which i'm not bothered by, but I wish the hop was a little more prevalent.
T: Similar to the nose, but fortunately the bitter hop is much more present in the flavor and balances the yeast funk and sweet malts quite nicely. Being that I am a huge fan of IPA's and Wild Ales, Lambic, Geuze, etc. (anything with Brettanomyces, Pediococcus and/or Lactobacillus), this is a dream come true. If you don't like the flavor of funky yeast though, I would pass on this one. Definitely not your typical Belgian IPA, but a damn fine take on it!
M: Light-bodied with a good amount of carbonation, extremely dry and smooth leaving a slight bitterness feel from the hop.
D: Extremely drinkable - I picked up two of these in my trade and they will both be gone by the end of the night, no problem.

corked/caged 750ml bottle
Awesome label design. The bottle opens with a soft pop and pours a rich amber orange color, great clarity and a small peachy/off white head. Young funky brett in the nose, these were bottled last Wednesday, lots of earthy and herbal in the nose with a bitter grapefruit rind and peachy apricot hop character. This one is 100% fermented with Brett and they got it at the exact ABV of HopDevil? Wow. The funk is still young and pretty subtle in flavor, it has for the most part the exact hop characteristics of a HopDevil with an added complexity of subtle looming funkification. Medium bodied, mild carbonation and a long fruity bitter aftertaste that begs for another sip. It screams Belgian influence without a doubt. i will definitely be putting one of my other bottles down for a while just to see how this one comes along. Hops and funk? better than i had expected.

A: An amber hue almost like a light cherry wood color with some intermittent lacing .
N: Belgium, hoppy and malty all in that order, even some slight green apple
T: Imagine Hop Devil with a Belgian flair. Slightly sour but not overpowering. Light malty flavor, but when it is apparent it's caramely
M: Crisp, clean and dry.
D: This is a no brainer. Great flavor on a classic. Would love to drink it all night but it'll sneak up on you. Gets better as it gets warmer.
Imagine if Hop Devil had an older brother an this older brother left Downingtown, PA to go see the world and ended up settling in Belgium. This beer is a bigger bader bolder version of Hop Devil but with sophistication and style.

Pours a hazy dark amber with huge head that never fully dissipates. Aroma is a slightly funky, earthy hop smell. Definitely the bret peaking through. The sweet hop flavor of the original Hop Devil is there but with some spiciness from the bret yeast. Medium mouthfeel with a pleasantly dry finish. Thoroughly enjoyed this one.

I would definitely call this an American Wild Ale, rather than an IPA. The hops are definitely there, but the funky element most defines this beer. Pours a hazy orange with a bready head that sticks quite a bit to the glass. Nice balance of a funky slightly ripe cheese smell, citrusy hop aromas, and some light acetic notes in the nose. The taste loses almost all the sour notes and instead matches earthy/piney/citrusy hops with more of the cheese/barnyard funk. It's entirely a matter of taste, but these flavors to me go together remarkably well. It reminds me of a fairly ripe Spanish or French soft cheese wrapped in some sort of slightly pungent leaves. The earthy, tannic, and sharp herbal notes of the leaves counterpoint the funky cheese in the same way that the hops counterpoint the funkiness of the Brett here. I like it, and I really applaud the experimentation. The mouthfeel is full, thick, and especially funky on the finish. A very interesting beer indeed. If you're looking for a sour, this is not it- but might be given enough time. If you're looking for funk + hops, we have a winner.

Pours clear copper with an explosive, lasting white head. Thick lacing. Perfume, funky aroma, somewhat barnyard. Light mouthfeel, long finish. Tart, biting taste. Lots of yeast, which mostly masks the bitterness of the hops. The peppery hops show up in the finish. In between, there is plenty to like. The yeast comes in two parts, funky up front, then mellows into a sweeter, earthiness. Crusty, bready finish to go with the hops. Strange, but very satisfying blend of styles.

Lighter copper shade with a medium white head. Smell was very fresh hops, seaside with a light grassy smell.
Taste was lively, yet refined. Plenty of citrus without much bitterness. Slight sweet flavor with a dry finish. The yeast influence is very apparent.
Good mouthfeel - very smooth with soft, even carbonation and very easy to drink.
Unusual and tasty.

750 poured into an imperial pint glass.
Pours a pretty cloudy but gorgeous reddish amber...that is, once the foam settled. I poured a glass for myself and my wife and BOTH nearly overflowed and yes I DO know how to pour a beer! The nose is really funky with lots of grassy barnyard with a bit of caramel in the background. Very nice medium body with a LOT of flavor. That spicy Belgian barnyard funkiness seems to dominate. There's also a touch of citrus that give way to a very nice, dry, bitter funky finish. The more I taste, the more intrigued I become with this complex flavor. It's a really great combination of so many regional ingredients. It might be too funky for every occasion, but I love it!

On tap at Max's during their Victory blowout.
Wasn't sure how much I was going to like this beer, as the idea of infecting an IPA with brett struck me as a chancy idea at best.... but what do you know, Victory came up with a good idea.
The beer pours the expected copper amber color with good head retention and lacing. On the nose this beer is pretty interesting. I get the expected hopdevil citrus and pepper nose, but it's wound up with a considerable amount of sour funk, which greatly adds to the complexity. While I'm not a big fan of sour beers, I liked how the sour interplayed with the hoppy bitterness in this beer. Flavors on the palate replicate the beer pretty closely, but the hoppy bitterness ultimately seemed to dominate in this beer, which is what I prefer The beer is medium bodied, with persistent flavor throughout. The beer finishes well and the sour does seem to detract at all from the drinkability.
Much to my surprise, I really liked this. The sourness gives the beer a bit of an edge, and I think makes for a more interesting flavor profile. I think I prefer this to the regular hopdevil. A very interesting beer.

Poured into a large tulip shaped glass. It is dark amber and cloudy with a substantial amount of carbonation. A huge amount of head is created, as if it were over-carbonated. The aroma contains both banana and rose-like floral elements. There is a small bite from the carbonation on the tongue. The taste is somewhat hard to describe. I think I'm getting hay, along with the alcohol and floral tones. The finish is bitter and surprisingly long.

This is my celebratory beer for finishing the final part of the CPA exam. I don't know that I passed it at this point, but for the moment, I'm done.
A - Poured into an appropriately regal Westmalle chalice, the beer looks very appetizing. There's a crown of coarse-looking foam on top of a light amber body. Active carbonation streaming from the bottom of the glass.
S - Nose is of ripe pineapple, some musk, grass and pine.
T - While prevalent in the nose, pineapple carries over to the palate with only a small unsweetened hint. Taste is mostly hop-forward, with some piney hops leading the way amidst the expected Brett spicy leather. Definitely quite dry, with a lot of perceived spice and hops. Not Double IPA-style hopping, of course, but hoppy *for this style*, we're getting up there with this one. I'd like to pop an Orval next to this, because this seems like a good stab at an Orval-type beer.
F - Feel is maybe not as soft and luxurious as a Trappist, but if it's off, it's not off by much at all. Well-carbonated but not overly so, with a lot of palate-cleansing power.
D - I'm not sure I've had many better Belgian pales from an American brewery. This is a top-shelf American take on a classic Belgian style. It's drinkable without question, a dry beer with a lot of flavor at 6.7%, I'd take that any day. Victory just came to South Florida, and I'm digging them...they show some really nice range, and it's all quality.

Well done extreme brew. Poured with a large foamy frothy light tan head and a some lace. Color is a clear medium amber. Aroma is a heady blend of yeast, brett bacteria, citrus hops, malt, leather, and earth. Flavor's got this different thing going on in an unusual marriage between sour and hop bitter that actually works. Very good body and carbonation. Finish is like flavor and while not cloying, still not a session beer.

Poured a moderately cloudy dark honey colour with a slightly off-white / khaki coloured head that dwindled away into a delicate web of frost over the liquid's surface in about 45 seconds. Nothing too fancy; looked about average.
Smell was a lovely amalgam of resinous hops, yeast, spices and mild sugary notes. Very interesting indeed.
Taste was just incredible, in my opinion, as it provided *some* hops bitterness, but shifted over toward the yeasty, spicey notes so closely associated with Belgian ales. The later waned, toward the finish, concluding in a bit of a hoppy bitterness that was evident in the beginning. This is just fantastic, as it seems to marry two interesting beer concepts: the overly hoppy American IPA & Belgian spontaneously fermented ale. In the mouth, there is moderate carbonation and terrific smoothness. Weight, too, is moderate, being neither too heavy nor too thin. This is indeed highly drinkable, and very well crafted. Brilliant!!

Pour is out of control - fairly innocuous tilt of the bottle brings forth a huge frothy head that takes a solid five minutes to subside. Underneath sits a solid looking clear copper brew. Crazy lacing, as you might expect. Second pour is incredibly delicate and - while still eliciting a huge head - allows the carbonation and body to come through a little better.
Obviously, the nose is all Brett. Huge funky sourness, but mixed well with some light candy malt hints. Definite hops. A touch of sour apples. Light earthiness. Nice.
Flavor is nice - Brett and sour funk straight up. Earthy. Light fruity grapefruit hops. Really nice flavor. Malty goodness in there as well. Hops and sour on the back end.
Solid carbonation with an appropriate pour.
Overall, a good, weird beer. I would drink this again, although it lacks the crispness of a true Belgian.

I had half a bottle left from a tasting, put a stopper in it, and it was still remarkable well-carbonated the next day.
A: Hazy, copper-orange with a light tan head, good retention, slight lacing.
S: Floral, soapy, citrus and toffee with an enticing hint of barnyard funk.
T: There's a lot going on with the flavours here. There's the floral & citrus rind from the hops, a little earthyness & soap, spicy Brett character and underlying bread, nut & caramel from the malts (plenty of protein but not too much sweetness). Eclectic & wonderful. It's like brewing a Orval with some slightly dark malt (German no-less), then hopping it up American style.
M: Moderate body is smooth, somewhat acidic (from the yeast & hops) with an off-dry finish.
D: I like it, but the hops & Brett might be a little much for some.

Has a nice caramel color & good head when first poured. Smells quite yeasty. Tastes very peppery, almost clove-like. Similarities to Hop Devil are quite evident. Mouthfeel has a nice, spicy bitterness. Drinkability is good - takes a little getting use to at first, but I've found myself drinking quite a few of these badboys when available on tap. Overall, a very nice variation to my favorite beer (Hop Devil).
