750 ml bottle. Bright pale yellow in color with a nice fluffy white head decent lacing. Malty spicey hoppy aroma. Saaz? Peppery. Very light and refreshing. Malty hoppy flavor. Crisp. Peppery. Dry tasting. Finish is spicey and malty. Drinkable. Very nice.

Bottled on 5/30/08. 750ml bottle was poured into a large Duvel tulip glass.

Appearance: A hazy orange yellow with some signs of carbonation. Amazing to see carbonation in the bottle that has been sitting for almost 4 years. Slight head, but it has remained for several minutes now. Nice lacing on the glass too.

Smell: vanilla, spices, bready notes, yeasty esters, citrus aromas, and apple sweetness.

Taste: All the above blended together with some tartness and bitterness towards the end.

Mouthfeel: smooth, medium carbonation, medium bodied, easy to drink, and wish I held on to it for one more year.

Overall: Solid beer. wish it would be made again and very happy I got this bottle last August. Will be looking for more of these in the near future before they are all gone.

Hazy amber in the Ommegang chalice. Decent head that subsides before long. Amazingly, label says it was bottled July 3, 2007, so we are drinking it just before the suggested five-year aging limit. Not that the age has done this much good, but it's a testament to Victory's clean brewing technology.

Fairly rich and winey body. Nose of roasted malt and caramel. Some tangy taste, but less acidic than many Saisons. Interesting flavors of golden raisins, dried pineapple, and mango. Fair amount of hops enliven the aftertaste. Rather nice blend of malt and fruit as it warms a little. A little butter and mustiness keeps it from winning the prize.

Purchased the 750 ml corked bottle at Mega Liquors in Hemet, Calif., so beware the "bottled on" date. Another point in Victory's favor. But I might not have bought the stuff had I noticed it's advanced age.

HUGE thanks to hannydawg for this 2007 bottle! I was not aware that there was still a listing for V-Saison...I just presumed reviews were combined with the newly named Helios. Onward! Poured into a S'Feuillien Saison glass.

Right off the bat, the appearance is a bit of a letdown. Slight hazy medium orange color with a fizzy finger of nearly white head. Dissipated really fast to only a finite froth. There's definitely some earthy funky aroma notes on the nose. Plenty of fruity esters in this one as well. Musky, slight granny smith apple. Getting a slight hop note on the taste, earthy and lightly floral. Slight tart fruit notes and other assorted fruitiness. Some barnyard funk in there as well. The feel is slightly rich for a Saison, but possibly to be expected with the age. Finishes clean, light to medium bodied.

Definitely a different kind of monster than the helios. Me like. I think I like it as much as fresh Helios, but in a completely different way.

Got this on clearance at Beverage World in Ft. Oglethorpe, GA. Bottled marked July 2007.

A- A deep golden body. Very week head. Good off the pour and then not a lot else. Lacing throughout.

S- Alcohol, hay, must, honey, camomile

T- Toasted malt, honey, black pepper, and camomile with a slightly bitter backbone. Quite good.

M- Carbonation went away really quickly. Definitely lacking there. I felt like I didn't get the full flavor experience.

D- Yes.

750 ml (07.03.07 bottling) poured in to a pint glass.

Pours a nice golden colour, with a light off white head that left good lacing.

The nose is very light and bright, reminding me of champagne. There is the tiniest hint of a sour aroma off setting the definite yeast presence. Nice earthiness (tho not overpowering) and a subtle sweetness.

Drinks very crisp and clean, with a lovely bit of spice that really lingers on the tongue. Definite notes of melon with a hint of stone fruit, especially in the sour notes. The sour tang is very subtle, and offsets the slightly sweet, bready backbone nicely.

The mouth feel on this beer has a pleasantly dry, almost tannic quality. It reminds me very much of drinking a nice, tho slightly sweet, glass of champagne. Lots of tiny bubbles (the term for this escapes me) as opposed to a more aggressive carbonation. The spice lingers pleasantly.

I really enjoyed this beer! Tho I never had a chance to sample the brew when it was fresh, I think that the extra few years bottle conditioning really contributed. It had characteristics that I can only describe as a more mature version of the characteristics found in fresher saisons. Too bad this was my only bottle...

Bottled on July 07, 2007, poured into a tulip

Prevalent yeast phenols (farmhouse, musty scents) with honey, lemon, bubblegum, peppercorns, cooking herbs, and diacetyl; yes butter.

Earthy and spicy upfront with a smooth peppery middle, fading to a dry, mouth coating finish. The body is on the lighter more effervescent side, and carbonation is quite high, which is near perfect for this style of beer.

Overall, a very pleasant, balanced, and flavorful saison that interestingly enough, is accentuated by the diacetyl quality.

Also purchased from Whole Foods. Wife says our 11-month-old daughter picked it out for me.

A - Nice appearance. A resounding pop with a clear, gold pour, strong effervescence and a sudsy, persistent, white head (about an inch).

S - Tart, earthy smell. Light smell of pineapple and hops.

T - Quite bitter and some off flavors. Drinkable and pleasant, but a bit aggressive for the style. Funky belgian yeast very forward on the palate.

M - Refreshing and clean, but with a salt-and-pickle sensation, and spiciness that lingers.

D - Complex and slow-drinking.Light and fairly dry, but with tartness, bitterness and complexity that makes it somewhat filling.
