For our fifth stop, we journey to Exit 6. This part of Burlington County was settled by Dutch Walloons (now Belgians) whose first order of business was to build a fort–and then a tavern. The area has always had a rich agricultural heritage and we’re using locally grown rye as an appreciation of our farmers past and present.

Exit 6 starts out as a deceptively simple recipe–pale malt augmented by 20 percent rye, fermented with a classic Belgian yeast. But then it gets interesting with the hops: English East Kent Goldings, Slovenian Styrian Goldings and Japanese Sorachi Ace.

The result is a rich saffron color with a spicy character from the rye and lemony citrus notes from the unique Sorachi Ace hops.

Poured from a bottle into a pint glass. Pours reddish orange with a small white head. Smells of citrus hops with slight spicy notes. Tastes of citrus hops with nice sweet grain with slight spicy notes. Beer is light bodied and easy drinking, good carbonation. Overall, an above average beer.

My second offering from Flying Fish, though not spectacular, certainly solid...

This is actually a strange story of a beer with different aspects to it. On the one hand, it has a decent, golden hue with orange tint, very light looking with good lacing down the glass. The smell was mostly reminiscent to most other pale ales - citrusy with the strong notes of hops - though nothing distinctive. The mouthfeel was difficult for me to rate. At first it was this spicy attack on my tongue that added nothing and took away everything from the experience of the beer, but as it warmed, it toned downed and actually added a light, spicy flavor. I would categorize this beer as medium-bodied in th end. Taste-wise, though good, it was much like the smell - nothing truly distinctive about it.

I took a chance on a variety 12-pack from this brewer, and so far, I pretty glad I did.

Always happy to review NJ brewers. This is great example of their experimentation as authentic underdogs.
Enjoy by 12-2017.

A: Copper-red, mostly clear body with vis rising bubbles, and too flat head, but ample lace and easily re-kindled film with a swirl.

S: Ample aromas of rye, Belgian yeast, the Sorachi hops tingle, with lemons, apple orchard, and spice.

T: This beer follows the ample smell delivering full belgian-tickling yeasty flavor that soothes and caresses, a kind of Japanese take on a Belgian dubbel.

M: It's thinner than I'd like, ABV hidden well, but the tongue tickle saves it, finishes dry and is a great door opener, food and cheese beer.

O: Try 12. It's an original, unmatched take on Belgian meets Japanese meets rye IPA. After letting this warm, I upped it as I enjoyed it more and more as it came down to cask temp.

12 oz bottle poured into a Belgian style stemmed glass. Nice golden color, and nice Belgian yeast and spice flavor from the rye. A bit bias towards this brewery which I've always enjoyed since a side of my family hails from Cherry Hill, NJ.

Poured from an 8 oz bottle. Pours an orange/straw color with a fluffy long lasting head of tightly packed bubbles. Aroma of citrus, spices (enough star anise to be noticed but not over powering) hops and sweet malt. The taste follows the aroma, sweet but not cloying, spicy, hoppy and citrusy. Nice medium mouthfeel. Overall a very nice beer for a cold evening.

DATE: January 8, 2016... OCCASION: Watching the Golden Globes with Shan after a good weekend... GLASSWARE: Chimay 150th Anniversary chalice... a generally thick, dense dark grapefruit with a fervent turbulence of bubbles... a haze of white head swirls then stagnates.... grapefruit, pepper, anise, lemon, and some other spices that the unique yeast sends forth... tremendously light drinking, soft, apologetic, with back-end bravado and a reasonable aftertaste... almost lethal at 7.5% ABV... the flavor profile is punchy, spicy and slightly sour... the grapefruit and lemon are suppressed, as a Belgian might be, but the yeast sparks funk and floral notes in equal doses--each sip brings a West Coast lightness with an equally playful kick... clove is front and center... overall, a beer that doesn't necessarily stun, but one that creates a comfortably nuanced soft hop experience... the Flying Fish Exit series continues to pop...

L - hazy, orange/yellow with 1/2 inch head. looks nice
S - apple/white grape juice
T - cool take on a style that I don't normally like, lots of juiciness, very refreshing
F - normal belgian yeasty mouthfeel, maybe lighter than most that I've had. Soft and delicate on the tongue
O - a cool take on this style

Woah, retired beer alert! Poured from the bottle into a tulip glass.

Deep apricot orange, with nice pinhead tan fine bubbles of carbonation along the edges. Head is creamy off white, kind of yellow tan about two fingers tall. Settles to a slow puck and one finger head.

Really nice nose. Spicy breads, and light nutmeg like sweetness. Some hints of honey and clove and light brown sugars too. Very nice.

Palate is real interesting. Lots of red apple and pear like flavors. Big bread sweetness mixing with honey and a crisp spiced clove. Finishes thick but not too much and a pillowy soft body feel. Big apple bread and pie sweetness on the finish.

This came out really nice.
