the wet beaver is a neat one, a wit type heavy on the purple beets. they stain this a lovely shade of pink to violet, and its really pretty all hazy and creamy headed. impressive depth of color. it sells nice too, earthy, the beets are out in front, wet and rooty, woody even, dense, healthy. there is an herbaceous quality to the belgian yeast, pungent for a beer like this, but the bright fruity and spice notes work nicely with the beets, its a weird combination but a good one. really earthy and distinctly beety in the taste, with a little citrus in there with the wheat malt the keeps it lively and summery, hints of lemongrass too as it finishes, lots going on in the yeast. richer feeling but very dry and well carbonated, its the exact right mouthfeel for these flavors. an inventive and dialed in little beer right here, one of the first i have had from these guys and its rather impressive. neat base beer to showcase the beets in, not sure i have seen them in this style before, but it really comes together very well.

Pours ruby in color. Aroma is of pure earthy beet juice. Taste is a bit citrusy, but it's dominated by the earthiness of the beet. Not a huge beet fan so it doesn't fully work for me. If you love beets try it. It gets a 80/100.

Appearance: Arrives the color of pink lemonade with a pale pinkish head; some lacing sticks
Smell: Wheat bread, beet, clove and coriander
Taste: As in the aroma, there is a bready base, followed by beet, clove and coriander elements; the bitterness builds, through the middle, with an aspirin character to the finish
Mouthfeel: Light to medium body with moderate carbonation
Overall: An interesting beer and I like the surprising impact of the hops but I did not care for the aspirin tones in the finish
