The Brett Project series of beers is a line that all has the same malt bill, similar to a Saison. But each 'project' is fermented, aged and bottle conditioned with a separate, single Brett strain. #1 uses a strain that was isolated by BKYeast from a bottle of '07 Cantillon Iris. 100% Brett fermentation, aged in a Chambourcin barrel for 6 months and then bottle conditioned for 3 months. Sweet floral, bright pears and musty hay are some of the characteristics of this Brett strain.
