Poured into a Gulden Draak tulip. Pours a dark, hazy mahogany amber with a half finger light tan head with good retention and lacing. Aroma of Belgian yeast, bready and caramel malt, earthy herbs. Flavor of apple cider, caramel malt, dark and dark dried fruit, sage and related mint family herbs. Finishes semi dry with a slight sourness and herbal and light hop bitterness. Medium bodied with peppery carbonation. An interesting take on a dark Belgian ale, with the classical cardamom and clove replaced by earthier mint family herbs. Finishes a bit more tart and astringent than expected. As usual, interesting herbal, spice and honey elements typical of this brewery, with less saison influence.
