Palate Contaminants: other beer
The look is an opaque (though not cloudy) reddish-brown. Moderate amount of fine head that actually does linger.
Scent is medicinal cherry, cola, and cilantro. It's actually interesting, though. I'd even call it mentholated. More slightly sour cherry as it warms.
The cherries hang around for the taste, although they're weakly sour. There's this weird combination of chocolate and chlorine. (Again, I might have waited too long.) Slight bit of cloves.
Coarse carbonation, although not prickly. Light herbs (like the aforementioned cilantro) in the aftertaste. Overall, it's a bit more slight than I wished. Still interesting and good, though.

cool to have these guys in colorado. this is the first one i have gotten the chance to try, a dark wild ale brewed with cherries and aged in malbec barrels, pretty exciting! on tap at goed zuur right now. the beer is excellent in quality and flavor, but unfortunately not quite as unique as it sounds like it should be. the base is sort of a flanders red type, big on the malts and with some red wine vinegar sourness to it, more acidic than i think i was anticipating. the cherries seem to be kind of absorbed into its generic fruitiness, adding some sweetness and some tartness too, but not super cherry forward to me. what is really robust is the malbec barrel character, lots and lots of dark fruit here, plum and blackberry and currant, some wood too, fragrant though like cedar more than oak, unique there for sure, and definitely malbec, like i get that wine specifically here, not just a generic red wine profile. clean bacterial acidity way ahead of funk, tart but dry for what it is. it could use more carbonation, but other than that i thought this was really pretty awesome stuff and it has me really stoked to try some of the other ones that i have seen around town. we can never have too much quality wild beer in the market!

On tap at Bazi last night, a pre-blend Grenache single barrel variant.
Hazy red with a dense, beige head with good retention, this looks solid. The nose is a blend of woodsy, loamy, wet earth like funk, a moderate cherry character, tannic and heavy on the dark fruit and a nice vinous note to complement the brooding funk. This is among the darker cherry sours I've had, focusing heavily on brooding funk rather than crystal clear brightness. Mild lactic tartness, a touch of acetic acid and a little cocoa are present. Tannic on the finish with earth and a little oak, this beer is quite enjoyable.

Poured into a Gulden Draak tulip. Pours a dark walnut brown, barely passing light in the glass, with a huge three finger light tan head; a bit of a gusher on opening. Aroma is saison style yeast, earthy herbs, faint cherry and a woody component that took a while to place: almost exactly like pencil shavings. Interesting. Flavor is unusual, cherry juice, earthy herbs, wood, estery. Finishes with a hint of the saison style yeast Propolis uses and a light sour cherry and herbal bitterness. Light to medium bodied with active pepper carbonation. The flavors in this were odd and didn't seem like they would fit together, but they produced an unusual light woody, sour cherry flavor that was quite nice. I was actually expecting some plum flavor from the name, forgetting my basic botany; the genus Prunus includes cherries and plums. This was one of the more unusual ales from Propolis, but I really enjoyed it. Anyone who enjoys a mild cherry lambic and would like to try one with woody and earthy flavors might like this one.
