Brewery is in a pretty cool location in Fort Point. Nice people.
Clear golden yellow with a big fizzy white head. Not much lace or retention. Nice spice and funk in the nose. Fruity and crisp. Some yeast. Same with the flavor. Barny, dry, and a bit of funk. Nice dry fruit and spice. Very enjoyable drinking experience. Great cold or at room temperature. Smooth and slightly sweet. Great feel and body. I didn't learn to truly appreciate this beer until the last glass of the growler. And you gotta love local beer! Delicious stuff.

A- Pours a hazy golden color, with a light head. Left very little lacing
S- Lots of yeast esters on the nose which can come from the higher fermenting temperatures which Saisons are known for. Slight citrus aroma from the dry hops which are added to Trillium
T- Once again the esters from the yeast take over along with some great spice.
M- It could be that I travelled back to New York City with my growler, but the carbonation was pretty light. I generally like my saisons with slightly more carbonation, but considering I have sampled this beer during test batches, I'll take the carbonation level as a fluke.
Overall, Trillium is a very easy drinking beer which I can see myself drinking regularly. Can't wait for the sours to be ready, because I know what J.C. is capable of when it comes to sour and barrel-aged beers.

A-Pours a cloudy golden color. Nice, tall head with mild lacing. Body glows.
S-Semi-soft on the nose. Mild yeast and butter. Some lingering hoppy notes too. Underlying sweetness with a hint of yeast-imparted fruitiness.
T-The flavor starts off pretty nice but it falls off quickly leaving a relatively bitter but unfulfilling finish. It stars off as a pleasant combo of yeast, hop and fruity sweetness but then it flails and stumbles toward the finish.
M-Rather light. Easy drinking. Moderate carbonation.
O/D-The beer simply didn't leave any truly impressive points to take away from the sampling.

Poured from a fresh growler picked up at the brewery on 3/22. Beautiful hazy gold with a big head of soft carbonation that faded slowly. Aroma and initial taste both surprisingly mild, with lemon and some malty sweetness. Mouthfeel is pleasant if a little thin, and didn't have the sharper carbonation I would expect. Gets considerably more interesting on the finish as it leaves a pleasant earthy yeast flavor.
Overall not bad and I did truly enjoy the finish, but for a flagship beer from a brewery that intends to do interesting beers it seems a little tame.
