Went on a mini brewery crawl this weekend stopping at Triple C, Heist, Birdsong, and finishing with dinner at Growlers Pourhouse. Started with Triple C, now for the next stop in our evening out... Charlotte's newest brewpub; Heist Brewery.
Situated in the cultural hub of NoDa, Heist occupies the old Highland Mill building. The place is beautiful... just the right mix of new and old. You get some very nice woodwork and stonework adorning the walls, while at the same time preserving the history of the space. When you walk in there is an open space with several tables and a bar, as you pass through into the next area you pass a kitchen area with a custom wood burning pizza oven that is open to the rest of the space so that the aroma of pizza baking fills the whole building. Once you stop gawking at the pizza oven you will notice a wall full of windows showcasing the brewhouse, and another bar area. Really, in addition to being eye catching and well laid out the place is huge, there is upstairs seating and yet a third bar type area with seats and tap handles. I could hang out here all day
The service is decent, the waiter we had was attentive and polite. He tried to be helpful, and knew a fair amount about the menu, but very little about the beer.
Now, on to the menu... I feel like this place has fallen victim to "celebrity chef syndrome". To many dishes that try to be just a bit too clever. Too little food for too high a price. Lobster Bisque Test Tubes, BBQ Braised Pork Belly Corn Dogs, Asian Shrimp with Lemon Wahhabi Cotton Candy?, Chicken and Waffles... C'mon man!! The burgers, and flat breads don't look too bad, but lets stop trying so hard to be the next food network star.
Now on to the main attraction... The beer. Unfortunately I am underwhelmed by the beer. Eleven house made beers on tap and all of them mediocre at best. How about we cut the beer menu down to a manageable four or five offerings and make them shine!! I don't need ten or eleven beers from a new start up brewery, I need two or three beers that blow my hair back (back when I had hair). We ordered two samplers so that we could try all of the beers, I thought the oatmeal stout was the best beer of the bunch. I would go on to describe the rest of them but I forgot about them even as I was drinking them. Now, don't get me wrong. None of the beers were deeply flawed, just uninspired. While none of them knocked my socks off, none of them were offensive or had bad off flavors either, just boring. I'm not looking for crazy, extreme beers, just good beers done well.
I really wanted to like this place. I was pulling for them to be the next great Charlotte area brewery... and they still could be, but there is work to be done.
All in all I am ready for the next place, on to Birdsong...

Atmosphere: cool wood and open design. A bit too roomy to be a comfy cozy place though. Nothing else really makes it stand out from another bar.
Quality: the beer just was not up to snuff for what i look for in a brewery. Some beers were undrinkable. It's bad when a brewery is pushing its cocktails over the beer
Service: not slow but seemed a bit inattentive. I could have used a refill a few times when my waitress was no where to be seen
Selection: decent variety but they were out of a few I may have tried
Food: probably the only thing I would go back for. But even then not amazing
Overall: a brewery with bad beers. Not much else to say.

Great feel when you walk in. Built in an old animal hospital, the building is all brick outside, and a lot of unfinished wood throughout. High ceilings throughout. There is a main bar, L-shaped, when you first walk in, and a second bar in the back, which I'm guessing they open on busier nights/weekends. There is also an upstairs seating area for overflow. Handful of televisions throughout with plenty of sports on all of them. The food was really good, and the menu was pretty diverse. Some standard gastropub food, but also some more unique and southern inspired fare, too. Prices were a little pricey, overall. The beer was decent, with 10 taps running. There is beer to go, but nothing stood out as remarkable to take. No descriptions of the beer on the menu, and the list is relegated to the back of the menu, almost like an afterthought. The only real hiccup was the service, and it may just have been this once, so I will definitely give it another go when we are in the area again, but our waiter came over right away when we first sat down, and after that we literally had to flag him down every time we needed anything, and those visits were very few and very far between. Also, he had charges on our bill that weren't ours, and then disappeared, forcing us to track someone else down to correct the charges. So, other than the service, I really enjoyed this place.

Excellent atmosphere. This place has a lot of potential. Sadly it is wasted somewhat. The restaurant is the primary business, the brewery was an afterthought it seems. You can tell they basically cleared out a few tables and put in a glass wall for the brewery. The brewery is small and German and made to look very very nice. But as for volume production, no way. They have three small fermenters and it does not appear they serve off site. I guess they wanted a brewpub moniker and so they put in a pretty system for ambience.
The service was fair, but for the price and the atmosphere you would expect a lot better. We ate at the bar and were the only ones at the bar and had a hard time getting any service. Even with the bar tender less than three feet away.
The staff is clueless about beer. No idea of the brewery volume, the process, if any tours are available. Nothing. They have some text about ABV and four or five other beer terms in the menu, but that's it. For dropping what looks like six figures on a copper clad, probably custom brewery you'd think they'd talk it up more in the menu. Or at least make the bartender have a clue about what a brewery is and how one functions.
The food is a bit pricey, but the atmosphere is great. The place is very well decorated and who ever did their interior design was a genius. The place looks superb. The food is very good.
The beers leave much to be desired. They are to style, but not distinctive enough to stand out. Again, you drop major dough for a pretty boy brewery and you think they'd try and make the beer comparable. Then again, the clientele are probably there for the food/atmosphere and the brewery is a prop mostly.

Went on a slow sat afternoon. Thought we'd try it waiting for Noda or Birdsong to open. Got seated but never served - left after people that just walked in next to us got served. They want to serve pretentious food, not beer. Choices are very limited and no signature beer on the menu. Don't waste your time on this hipster joint.
Stay away - go to birdsong or Noda.
