From my notes:
On draft, in a plastic pint cup. (Cup, vs. glass, only because it is plastic after all.)
Pours a golden blond color. Beer has a pleasant aroma to it, an enjoyable display of floral hoppiness. On the palate there’s a sweet, chewy backbone that compliments the floral notes. Nice carbonation. At 9% it’s a big boy but deceptively so. A double IPA that’s easily drinkable for its strength, with a finish that’s inviting and, dare I say, refreshing.

Sampled at 1702, Tucson, July 2011
Arrives from the tap with a one-finger thick, lightly tan colored head; as the head subsides it leaves some nice lacing on the sides of my glass. The beer is an amber / copper color that shows a clear, deep gold / copper color when held up to the light. My first inspection of the nose has me noticing soft citrus notes backed by more noticeable notes of sweet pale malt, cracker like grain and perhaps a touch of biscuit like maltiness. Other notes of grapefruit zest, some sort of musty citrus character, soft pine like notes and even a touch of menthol like hoppiness is noticeable after the first take.
The beer is sweet up front which accentuates fruity hop notes of tangelo, lychee and ruby red grapefruit zest. The finish sees some warming alcohol lingering on the palate along with a firm, but not aggressive bitterness. The body of this beer has some definite heft to it; it viscously clings to the palate and really tempers the hop bitterness that is found here. The citrus hop character can have an essential oil / slight herbal edge to it at times, but this is a beer whose hop flavors are dominated by the fruit side of things. At times this reminds me of Meyer lemon zest flavors (rounder, and not quite as dry as regular lemon zest). Somehow the hop fruitiness can seem a bit over-ripe, or maybe even fermented (not really quite rotten though) towards the finish; though this is not always apparent and is quite subtle when it is.
Not a bad example of a Double IPA; it is certainly tasty and has been executed pretty darn well.

I was very happy to find this on tap at Von Trier, here on the East Side of Milwaukee. Passed to me a light, amber wheat color with an inch egg shell head that fell just a bit but stuck around with great lacing. A fairly clear brew with significant visible carbonation. The nose presents orange peel, grapefruit, and more subtle grasses, like candy to a hop head's nose. There's also clear bread malt notes making their statement. The taste has citrus peel at the fore, followed quickly by a somewhat sour and sweet bread malt flavor. A bit of herbal hop notes and alcohol pushing through toward the back, with moderate hop bitterness closing things out. In addition to these, there's a touch of raisin in there, along with some brief funkiness. The mouth is on the lighter side of medium-bodied, and it's both brightly acidic and somewhat syrupy. Quite effervescent. It's not quite as smooth as I would have liked, but really not bad.
This is an extremely welcoming beer--great appearance and nose--that I feel wasn't quite as strong in the taste and mouthfeel. But it's not for lack of flavor: This DIPA is really very stocked with hop and malt flavors. I think my beef is more to do with a lack of smoothness and a bit too much syrup sensation in the mouth. There's certainly complexity, but I would have hoped all the flavors would have come together more seamlessly. I would definitely like to come back to this one later and see how my feelings have changed.

M- Medium to light bodied with good carboantion
D- Overall i was surprised by this brew. Wasnt exspecting alot from this one but it was very tasty and all the flavors combined nicely.

On tap at the Queen Vic in Houston.
A: Pours a hazy orange color. A two finger white head forms with good retention. Plenty of lace as well.
S: Resiny pine aromas with a substantial bitterness. Hot alcohol, buttery malt, and a metallic aroma.
T: Follows the nose with a large resiny pine flavor and bitterness that lingers on and on. Very oily. Buttery malt and metal. Some wood flavors lingering as well. A bit of alcohol heat.
M/D: A medium body and carbonation. Resiny and oily. There is some alcohol heat, but for the most part not that hard to drink. Just nothing I care to come back to.
Lots of resin, oil, and buttery malt. I like that it is not all hops with some balance, but it does not mix that well for me. Add to that the strange metallic flavor, and this just so so.

On tap at Todd English P.U.B., 6/2/11.
A-Pours a clear amber with a frothy off white head. No real lacing.
S-Sweet and bitter, malty with a nice amount of citrus rind.
T-Sweet malt in the front, followed by a nice citrus bitterness. Well balanced between hops and malt.
M-Medium bodied, bitterness lingers nicely.
O-Very tasty. A nice example of the style.

As far as IPA goes in my book it must be fairly impressive to even get a taste out of me. (not a huge IPA fan.) So brewforia had it on tap and so I grabbed a growler of it. My plan was to mix for black and tans. As a stand alone IPA beer I really do enjoy it. There is some serious hops coming at you but you shouldn't be afraid. They will swish in you mouth and in the long run make you feel good.
Very nice beer that I will look for again.

I had a twelve ounce pour of this at Todd English P.U.B in Las Vegas. I think that offering beer at that ABV is relatively new for a Utah based brewery but I could be wrong.
Poured a hazy orange/golden color with a perfect head.
Smelled of grapefruit with a little malt. Very nice and enticing.
Flavor, as well, had a lot of hops with a well balanced hint of malt and alcohol for the perfect double ipa.
Overall a very good beer. I hope to see it in New York sometime but I'm not holding my breath.

On tap at the brewpub in the spring. From notes.
A: Pours reddish-amber with orange highlights. Light haze. Finger's worth of off-white foam on top of the brew. Some lacing.
S: Grapefruit hops, cloves.
T: Grapefruit citrus, light caramel malt, a touch of biscuit. Pretty tasty for a 4%er.
M: Medium-bodied. Good carbonation.
D: Wound up getting a pint of this and enjoying it... Compared to the other offerings at the pub (and in the general area), it was a star. Compared to anything else in the nation? Meh.

smelt of citrus and hops

Clear golden copper with a big offwhite head that sticks around and leaves some clumpy sheets of lace.
Big hop aroma with some toasty biscuity malt backing. Hops are floral, grapefruity/citrusy, and piney/resiny.
Solid toasty biscuit malt backbone with some alcohol burn at the end. Floral, grapefruit rind, pine, and resin dominate the hop profile. Malt and booze complement the hops for a very enjoyable DIPA that isn't a hopbomb.
Nice bitterness that isn't overpowering. dry sticky finish. medium body on lower end of carbonation scale.
Drinks very well. Good marriage of hops and malts help this one stick out. Would seek this out again.
Bottled on 4/3/13. Hops may have faded some.

Got in a trade with swingracex. 12 ounce bottle into tulip glass, bottled on 2/12/2013. Pours lightly hazy golden copper color with a 1 finger dense off white head with good retention, that reduces to a thin cap that lingers. Nice soapy lacing clings down the glass. Aromas of grapefruit, orange zest, tangerine, lemon zest, floral, grass, light pine, caramel, light honey, and light bread. Nice and pleasant aromas with good complexity and balance of hop and malt notes; with decent strength. Taste of grapefruit, orange zest, tangerine, floral, grass, light pine, caramel, bread, and light honey. Fair amount of pine bitterness on the finish; with lingering notes of citrus, citrus zest, floral, light pine, caramel, and bread on the finish for a good bit. Very nice flavor balance of hops and malt sweetness; with good complexity and zero cloying flavor after the finish. Light-medium carbonation and medium-full bodied; with a slick and fairly sticky mouthfeel that is good. Alcohol is very well hidden with only a slight warming noticed after the finish. Overall this is a very good double IPA. Good balance and complexity of hop and malt flavors; and very smooth to sip on. A very enjoyable offering.

This poured out as a yellowish gold color with some hues of orange in there. There was a foamy white head on top that settled into a thin film over top of the beer. There is a bit of scattered lacing on the glass as well. The smell of the beer is fairly hoppy, it could be much stronger, the malt kind of shows up a little too much for an IIPA. The taste of the beer has a pretty good balance of the sweet malt with the hoppy bitterness. Still it could use just a bit more of a punch. The mouthfeel of the beer is nicely carbonated, medium bodied and smooth. Overall it's a decent beer, definitely not one of the best IIPA's out there but it was still nice to try.

12oz~>Spaten Optimator Dimpled Mug
A ~ Pours a Coppered Amber w/ great clarity & sparse sticky lacing. Looks less than Intimidating for a 9% IIPA, but hey, maybe they just filter the shit out of their beer.
S ~ Rich, Sweet Malt notes with sticky, but faded hop notes. Pine & Citrus mostly. I can tell this once had an amazing nose. But right now it's underwhelming.
T ~ Citrusy hops following through w/ strong dried apricot/peach notes & sweet sweet yet clean maltyness that reminds of raw cane sugar. Pulling dryness from the hops, even at it's age.
M ~ Easy going down w/ an extremely sticky mouthfeel that I come to expect & enjoy in a IIPA. Dry.
D ~ Would definitely drink again, but Hopefully fresher next time. Great beer for the price.

Poured into a glass from a 12oz bottle.
A - pours a dark straw, appearing medium gold in the glass. Several large pieces of sediment in the glass. 1/4 inch white head with medium lace.
S - strong hop aroma, more floral than piney, along with a noticeable malt presence.
T - hop bitterness coats the palate, but the taste is quickly taken over by the malt. Bready malt with a noticeable caramel malt backbone. No harsh hop finish (I wanted it to be there). The alcohol is well hidden.
M - more heavy than medium bodied. Good carbonation for the style. Smooth finish, but smoother than expected.
O - great taste but not near as much hops as the aroma would lead to believe. More malty than hoppy. Not a bad double IPA but not the hop bomb I was expecting though. Still a good beer.

Pours a clear rich copper color with a solid two inch cream head that slowly dissipates, leaving webby, sticky lacing. There's an iceberg of head in the center of the glass.
Grapefruit, resin, dank hops, and tropical fruit dominate the aroma, with toasted malt and citrus rounding out the profile.
Citrus is HUGE in the flavor, with grapefruit and pineapple dancing alongside tangerine and lime, and mango playing a supporting role. Bready malt adds a bit of caramel sweetness and ties the fruity hops together, leading into a slightly bitter, dry finish. There's an underlying dank note throughout.
Body is fairly full, with moderate carbonation, a touch of astringency, and significant alcohol warmth.
Overall, a very nice dipa. Not as sweet as some, nor as bitter as others, with excellent fruity hop character. A bit on the hot side, but with it for the hop complexity.

As I pour a 12 oz. bottle into a pint glass, a decent-sized head appears atop a golden/orangish brew that leaves a plentiful amount of lacing during the drinking process.
I take a whiff, and mostly hoppiness hits the nose at first.... Following that, I get pine, floral, and citrus notes.... There's also the slightest sweetness in the nose.
While sipping it, I get a hoppy and citrus taste at first.... Like that of an orange.... It also has a little bready and bitter taste to it.
The mouthfeel is medium-bodied and moderately carbonated.... A bit dry and chewy.
Overall, I enjoyed this beer.... Has a great taste to it, but for a "Double" I.P.A., not quite as hoppy as I was expecting.

12 oz bottle from the state system poured into my goblet. The bottle has a born date (!) but I cannot quite read it, either 2 or 3-24-11, either way pretty new.
Re-review: Poured into my perfect pint from a bottle with a date of 9-18-12 (about three weeks old).
Appearance: Strikingly clear copper color with a short lived almost white head on top that leaves a bit of lacing.
R-Appearance: A touch of haze this time, but wonderful lacing and a three finger head.
Smell: Boozy caramel maltiness with citric and pine type hop smells.
R-smell: Nice caramel malt backbone with loads of hops to balance. I get pine, oranges, mango, and other tropical goodies. This is no Sculpin, but not bad.
Taste: Taste follows the smell. Long lasing bitterness on the finish round out a well established malt backbone, which is as big as the hops . The hops have a nice pine and citric character.
Pretty much the same as above.
Mouthfeel: The body and carbonation are spot on. The flavors coat the mouth nicely and are long lasting.
Overall: This is a nice addition to the Squatters line of beers. I think I like Elephino/Elephant (Red Rock brewery) a little better. That being said, this is a beer I will still pick up every now and then. A solid beer!
I still enjoy this beer. I will up the overall rating (from 3.5 to 4) because this is one of Utah's few IIPA beers, and it is on the less expensive side.

Reviewed from notes.
Has the normal semi-hazy orangish amber IPA appearance with a single finger of white foam that lasts for about two minutes but only leaves behind small amounts of lacing. Medium body and carbonation levels.
Smells mostly of dank and resinous hopping with smaller quantities of florals and herbal hopping on the side with a very muted malt aroma that I couldn't quite put my finger on. Once it was in my mouth, it came across as a cracker malt sort of profile, with the resinous and floral hopping taking center stage while the herbal aspects pop out at the finish along with a surprise garnish of subtle mintiness. The ABV is well hidden, but those malts are just too muddled to provide a strong enough framework for the hops to stand upon.

Beer #3 in the great Utah Brew Hunt.
This was a decent dipa. I felt like it was much more malt forward than I'd like for the style. It's a nice drinker, and the abv definitely doesn't show at all, but with so many others of the style showing strong and distinct hop tones, I feel like this one should be too.

Poured into a pint glass. Pours hazy golden with a large white head that sticks around quite a while. There are a few tiny bubbles rising from the bottom of the glass. There is plenty of sticky lacing left on the side of the glass as the head retreat. There are some sweet and bready malts in the nose. I also detect some nice floral and piney hops. The bready and sweet malts blend well with the hop flavors. This isn't a very hoppy DIPA and I don't think this is much hoppier than their regular IPA. Still, a DIPA doesn't have to be very hoppy to be solid, but be well balanced. This certainly fits that bill. The hops do show up in the aftertaste, but the aftertase is not strong. The body is medium with moderate carbonation. The finish is dry. The drinkability is high for this sipping style. This is an excellent beer.

Squatters Hop Rising Double IPA has a thin, cream-colored head and a hazy, orange appearance, with some streaming bubbles and a lot of lacing left behind. The aroma is of sweet, bready malt and other sweetness. Taste is very hoppy, bready, and sweet. But, it’s not really any different than their regular IPA. Mouthfeel is medium, and the finish is mostly dry and easy drinking. I recommend it.

Poured from a 12 oz. bottle into a tulip.
A: Dark golden, almost ruby-ish hue. Pours about a half finger, bubbly, white head, which slowly settles leaving merely a beer ring. Crusty, substantial lacing.
S: Hops, pine, oregano, parsley, and a bit floral.
T: Slightly sweet, sharply hopped, and a little fresh flora.
M: Light and sharp. A bit of a shallow body. Syrupy feel. The bite lingers on the palette after the sweetness in the front dissipates.
D: Sip and enjoy.
Atmosphere is pretty solid. Nice hue, including a slight head, and sticky lacing. Nose is hoppy, with Italian spice and floral components. Sweet and hoppy with a floral hint. Overall, this is a pretty good quaff.

Poured from a 12 oz. bottle into a tulip glass.
A: Slightly hazy, light amber color with one finger of white foam head. Heavy lacing remains on the glass.
S: Floral handsoap, sweet dark citrus, and buttermilk. No alcohol is detected.
T: Begins dry, with strong carbonic acid that overpowers mixed citrus and pine hop aromatics. Acidity extends into the middle, tapering off somewhat, while raw pale malt is soft and refined. A boozy flavor is also detected before the finish, where moderate bitterness is disjunct aside honest caramel.
M: Thin to medium viscosity, slightly acidic on the palate, with moderate carbonation.
D/O: This beer has problems with some of its sensory qualities, giving the impression at first that it is a DIPA made by folks who either hate the style or don't understand it. The good news is that it has the ability to partially recalibrate the palate, making the troubled areas less obvious over the course of the glassful.

3.5 A: Lightly hazed dark orange color. Two fingers of frothy off-white head. Retention is about average and a decent amount of lacing is left.
3.5 S: Lots of citrusy hops with plenty of orange. Unclean bready maltiness with lots of caramel. Hints of acetone.
2.5 T: Citrusy hop flavor with notes of tomato paste. Lots of bready yeastiness that dominates along with hop bitterness. Caramel in moderate amounts. Need to be cleaner.
3.0 M: Heavier medium body. Good moderate carbonation. Not particularly creamy with too much chewiness.
2.5 D: It's not that bad, but in a world with so many great DIPAs, this doesn't make the cut of average.
