3 Sheeps seems to be a newer Wisconsin craft brew on the market. Based in Sheboygan, I see they are slowly starting to make their way across the state in various places. There doesn’t seem to be all that much hype about the beer so far, so I am expecting this to fairly average.
It pours a clear, dark yellow color with a foamy, beige head. The scent is fairly basic with mostly malts with slight hints of citrus. The aroma is fairly weak almost to the point of being non-existent. I sure hope this doesn’t translate over into the taste.
Well at least the taste isn’t bad, but it’s not anything fantastic either. The texture is pretty thin and a flavor is also weak. You do get some nice grain flavors mixed with some tropical fruit. Some bready yeast tones are present as well. Gradually the taste does grow on you but I’m not sure if this is even any better than Blue Moon. While it is drinkable, they really could take this one back to the drawing board as well.
It’s always awesome to find a new beer from a Wisconsin brewery that I have yet to have tried. But, it’s not awesome when that beer is just kind of average. 3 Sheeps is new and perhaps they will develop some delicious brews down the road. I’m definitely willing to re-visit their offerings; I just hope they improve on the taste a little. –Chris Lemke of WisconsinBrewReview.com

3 Sheeps Cirque Du Wit
Poured from a 12 oz bottle into a shaker pint glass. Served chilled...
A) This is a shimmering golden brew. A finger of foamy head. Decent retention and a little bit of the lacing.
S) Pale malt, yeast, a little grass, but mainly wheat on the nose. Not a strong aroma here, but nice enough.
T) Packs a good amount of wheat flavor. You can pick up the Belgian yeast as well. Finishes up with some grass, and unripe banana.
M) Pretty light bodied, with moderate carbonation. This smooths out with a little warmth, and is fairly refreshing. The finish is somewhat dry.
O) Not the first style I typically reach for, but all in all this was fairly enjoyable. Looking forward to trying out some of 3 Sheeps other offerings.

12 oz bottle poured into a Bruery tulip.
4.2% ABV, 12 IBUs.
(Bottles are pending label approval and are expected to hit market early-to-mid fall.)
A - Shimmering with clarity, this bright golden yellow beer pours with a well-formed and long-lasting white head. Lace doesn't cling to the glass as the foam tumbles, but a puffy collar rests neatly on the beer.
S - Cirque Du Wit opens with a very pleasant and inviting strong wheat aroma and gentle Belgian yeast presence. Subtle earth esters consisting of clay and white pepper are overlapped by soft and velvet smooth, faint pale malt graininess and sweet pilsner notes which spin around one another. Light floral hop accents comprise the closing act.
T - Wheat takes the center ring, once again, as 3 Sheeps loads it into the mash. Plenty of wheat flavor and softness arise with just enough of a pale malt backing and kiss of pilsner sweetness. The finish is very subtly complex, shifting from a quick splash of floral and citrus hops and moving to earthy Belgian yeast notes before finally finishing with a balancing graininess.
M - Cirque Du Wit's crowning achievement is the spectacular feel in the mouth; the light body remains clean and refreshing while the wheat really adds a soft, full, voluptuous feel that's balanced by both faint hop bitterness and a tickle of perfect carbonation. Outstanding.
O - 3 Sheeps manages to pull off an excellent classic witbier; they don't succumb to the notion every wit nowadays must include coriander and orange peel. The simplicity of it's ingredients and subtle Belgian yeast combine for a totally satisfying witbier capable of slaking even the burliest of strong-man-sized thirsts.
