Saison / Farmhouse Ale
In the spirit of traditional Belgian farmhouse ales, Saison Blue is brewed mostly from malted barley but with sizable contributions from regional ingredients (traditionally wheat, spelt, or buckwheat). In our case, we happen to use blue corn and blue agave nectar. It is then lightly dry-hopped with American and European hops for a bright, herbal and floral finish. To us, it represents a link between old-world brewing traditions and new-world processes and ingredients. At the end of the day, this beer is bone dry, light bodied and quite refreshing, but features a spicy, complex flavor and aroma profile.

A steady pour from the growler into my Large Tripel Karmeliet tulip produces a fat-two-finger thick, pale, just barely off-white colored head. The beer is a hazy, pale, almost white sheened, straw color that shows a brighter, lighter version of the same when held up to the light. The aroma smells of dried grassy pale malt and accentuating herbal hops up front. There is lots of general spiciness from the yeast with a vague white pepper note, some definite clove, perhaps a touch of ginger as well as a somewhat bright fruit character that is fairly nondescript, but reminds me sort of like pears and melons. There is an earthiness and a mustiness to the fermentation / yeast character that accentuates the herbal and dried hay like character as well as accentuating a bit more of a pale, cracker like maltiness. If you really dig into the nose, there is a really full on, expressive, pale malt character that plays up the dried hay and pale malt / cracker character here. There is a hint of tartness to the aroma that helps to bring out the fruitiness as well.
This has a pale sweetness to it up front that is accentuated by fruit aromatics in the middle and a touch of sweet higher alcohols in the finish; the higher alcohols remain quite smooth and are at an appropriate level. Having mentioned the sweetness, this is really just perception as the beer tastes and feels quite dry. Up front a crisp sort of cracker like pale malt character adds some chewiness and it picks up a fruitiness in the middle that reminds me of ripe, floral pears, perhaps a touch of some sort of musky melon, and even a touch of star-fruit that is brought out by a faint tartness. The finish has a phenolic character to it that is part clove, but more sort of musty, or perhaps even leaning just a hint to the medicinal side; the phenolic notes are actually fairly light, keeping in line with the use of the Thiriez derived yeast. The body of this beer is quite light and certainly quaffable (dangerously so given its strength), but still manages to have a grain induced chewiness and texture to it that keeps it from being anywhere near watery. It also comes out of the growler with quite an ample level of carbonation for a beer being served on tap.
As with any Saison, I can’t help but feel that this could use some bottle conditioning and more than lively from a tap effervescence (though that was certainly agreeable here), having said that, this is quite good and a great example of the style. It is really quite dry and light bodied (finishing around a gravity of 1.000) and still manages to capture the graininess that is found in classic Belgian examples. This is certainly not an “American” version of a Saison, and I am actually quite pleased with how well Dragoon has managed to control the Thiriez yeast; it can often be a bit too bland when compared to the classic Dupont character, but I think that it has contributed quite well to this brew. I can’t say that the Blue Corn or Agave are noticeable at all, they do give a tie in to the locality though, and there may be a touch of spiciness to the finish that the Agave might add, but that could just be the higher alcohols from the sugar addition rather than any real Agave character. Definitely a fitting beer for the solstice, and one I am quite enjoying.

Let me start by saying that I am not a fan of saisons, generally speaking. This one is really not too bad though. The nose is really sweet, but not cloying. The scents bursting from there definitely from from the agave nectar. Blue agave is what they use to make tequila, but there was no hints of tequila taste here. The blue corn they used to make the saison I think gave it a good twist on the flavor. Overall, this was a pretty impressive saison. I have liked some Stillwater brews better, but other than that the only really good saison I have had was from The Address Brewing in Tucson at 1702 Craft Beer & Pizza and it was a Tart Cherry Rhubarb Saison, I believe.
