Our single hop series has been a delicious and interesting experiment into the diverse world of hops. Following an identical recipe but only changing one variable each time (the hop) we've been able to study the exact aromatics and flavours imparted by specific varieties. Not unlike the series launched by Mikkeller, here at Bellwoods our Monagamy brews are all about settling down with one love. Yes, when ordering this beer in the brewpub the jokes are endless (ie. “I'm not so sure about monogamy” or “I tried monogamy once and never really liked it” or the oft hilarious “I guess I'll have it because my girlfriend/boyfriend is sitting beside me”) but stop being a wise-ass. Even the polygamous can't deny the allure of this beer.
NELSON SAUVIN: This incredible aromatic hop variety from New Zealand has deservingly won a place in our hearts. With soft white winey and lychee flavours, Nelson Sauvin is like a sophisticated lady who likes to drink afternoon tea, but talks your ear off about how she just fixed her lawn mower with a paper clip and some aluminum foil like MacGyver.

Bottle to tulip. Bottled on Jan 18, 2013.
A - Medium yellow, golden around the edges. A thin layer of bright white head formed and receded to a few scattered bubbles.
S - Pine, musky and grassy aromas accompany a light bitterness with a sweet caramel malt backing.
T - Moderate bitterness with piney, grassy and musky flavours. Sweet caramel malt backbone provides decent balance.
M - Light to medium body with a nice chew. Moderate carbonation. Lots of sticky hop oils.

Pours cloudy straw with a bubbly, long lasting head. Chunks of lace cling to the glass. Citrusy, peppery, herbal hops in the nose. The taste is full of white grape, pepper, pineapple hop notes with a restrained crackery pale malt base. Medium carbonation and a full body. High bitterness in the resinous, everlasting finish.
A stellar single hop example of this interesting New Zealand hop. Very unique flavor in concentrated amounts.

Fresh citrus aroma, huge longstanding head with a body that is very hazy, banana-orange in color. Flavor is fresh, zesty citrus with grassy undertones and a clean finish.

Poured from a bottle into a wine glass
A- Gold and hazy. Half a finger of white head dissipates quickly.
S- Tropical fruit, with notes of lychee and lemon, with an onion like savory character.
T- berries and lemon, with that savory bitter finish.
F- Low carbonation, but enough to keep it light.
O- If you like Nelson, it's pretty good

World Class IPA
The best hoppy Bellwoods, reminds me of Grest Lakes' Thrust! IPA. Highly recommended.
